Gift card question

I was thinking of buying some Disney gift cards for our upcoming trip. Can you use them on pretty much anything at Disney world? Like gift shops, restaurants, etc.?

If you are staying onsite, you can also just charge the room and pay the balance with your gift card (a pain if you are spending a lot, since you want to get up there daily to ensure they don't charge your card). We even used a disney gift card or charged to the room at places like Sephora in Disney Springs. I think most places there do this.

They are not accepted at the restaurants or stores in the Swan or Dolphin except at the Disney operated store in the lobby. Also, not at Shades of Green.
