First timers - reco's for Eastern excursions?

We are getting ready to take our first Disney cruise in October with our DD's age 4 and 7. I was hoping to find some fun excursions to do but many of the ones that are most interesting to us have a min age of 5. Both girls are pretty good swimmers and really want to do some snorkeling. Should we just snorkel on our own at some of the beaches or look for local companies to do some group touring? Any reco's?
 
I think I'd try to find some non-snorkeling type excursions in St. Thomas and St. Maarten and let the snorkel on Castaway Cay. You can snorkel on the family beach and the Stingray excurison allows snorkeling with them (the stingers are removed). While we havent' been yet to the Caribbean (that's next on our list) it seems that the excurisons offered might be a bit much for your kiddos ages. I also think snorkeling on the beaches there might work but it seems they'd be crowded and then you'd probably have to bring along your own snorkel gear. Maybe someone with more experience will chime in.
