I add in just a little garlic powder, with the other spices, process the whole thing & taste it. You can always add more later. Let it sit for about 15 minutes before adding any more spices as the flavors get stronger after sitting.

I think olive oil is usually used because of the extra flavor olive oil adds. Canola oil might not have enough taste to it.

I find a small clove of fresh garlic that's been chopped fine tastes lots better than garlic powder. I'll do the powder in a pinch tho.

Mexican seasoning is another one we like here.

I've not seen it mentioned yet- but what about nutritional yeast? Makes a great add on to buttered popcorn. We also like it as an alternative to mac-n-cheese. Butter, nutri yeast and seasonings to taste on noodles or rice. I don't measure so can't give amounts. I buy it through the coop in a 1# bag, but have seen it at the HFS in smaller containers- 8oz maybe?

Tonight we had

Tilapia
grilled zucchini and squash
baked potato

DD had a Mondo to drink and I had Organic milk.

Dessert will be seedless watermelon.

Okay, had a pretty good meal here tonight:

Pesto Pizzas (this is actually a Rachel Ray recipe for kids :thumbsup2 )

Pesto, Broccoli, Spinach, Ricotta, and garlic. Mix up, spread on top of whole wheat toasted pitas. Top w/mozzarella and cook at 400 until melted. The entire family just lapped these up. Served wtih a garden salad.

YUM!
 
It looks like the only sodium you'll really have to watch in the Mexican stew is the taco mix. But you could probably add more chili powder and maybe a *little pinch* of garlic salt to sub for that to lower the sodium some more.

You could also add some of the other spices in this recipe for taco seasoning, cutting back on the salt, of course. I've used this when I didn't have a package of taco seasoning, and it was very good.

Would you mind posting your recipes for salsa and sauce? I have a bunch of tomatoes and am trying to cook them up ...

Can I dice them and freeze them?

I am a cooking newbie, so I am trying. Give me something to bake, and I'm gold ... give me some tomatoes and onions and tell me not to mess it up, and I may look at you a little funny.

Last night my mom made spaghetti so Julie had that ... I ate some sauce and garlic bread. Tonight my darling wonderful two year old decided she wanted pudding for dinner, so she threw my yogurt on the floor and spilled her soup. I put her in timeout, and she hasn't had anything to eat yet. Ooops. I did get a new bowl of yogurt and granola, and I'll be "under budget" if the child doesn't eat. Kidding of course. She's getting her two year old molars and isn't in a growth spurt, so getting her to eat anything lately has been a real PITA.

Frontier makes THE BEST salt free seasoning ever- and at this price per pound, you can't beat it. I mean you could get like five packets of the salt-laden old el paso junk for the same price. And it lasts forever. :thumbsup2

Add your favorite veggies thinly sliced (onions, peppers, tomatoes, squash etc) and some seasoning (pepper, a little salt and a little garlic) and an ice cube(to add moisture and create steam). Close the packets up and bake for about 20 minutes in a 350 degree oven.

We had steak subs tonight. I sauteed onions and bacon, set it aside then fried "minute" (thin cut) steaks. I had a nice large loaf of garlic french bread. Split the french bread, added the steak, onions, bacon, and shredded cheddar cheese. Heated it all in the microwave until cheese was melted. Then added lots of lettuce, diced tomato, and italian dressing. Really good! Fresh fruit for dessert.

Mmmm. I've got to try these. DD17 loves white pizza and this sounds like something she'd enjoy.

Tonight's meal wasn't anything special.
  • Boneless, skinless chicken breasts marinated in Italian seasonings and grilled on the indoor grill.
  • garlic mashed potatoes made w/ skim milk and margarine
  • steamed veggie medley (broccoli, carrots & cauliflower)
  • fresh Italian bread for DH
I'm trying to think of a vegetarian meal for tomorrow since both of the men won't be home.
 
Tonight's Dinner:

--oven baked chicken tenders (chicken breast with Shake & Bake extra crispy coating)
--Trader Joe's Organic Supersweet Corn w/black pepper and a touch of salt & butter (this corn is soooooo good!)
--broccoli salad (broccoli florets with minced bermuda onions, cashews, raisins, bacon bits, and slaw dressing)
--oranges

Total cost of meal: $5.92

Chicken Breasts - $1.67 (bought 6lbs for $15 on sale)
Shake & Bake - $0.25 (bought on BOGO sale w/coupon)
Corn - $0.50
Broccoli Salad - $2.50 (estimated for all ingredients/4 meals worth of salad)
Oranges - $1.00 (3lb bag for $3)

I'm cooking for DH and I. DH is diabetic, so I have to watch the carb counts of his meals. He's not supposed to go over 4 carb servings (60g carbs) at one sitting. I'm OK with a moderate amount of fat, but I do try to limit saturated fat and avoid trans fats as much as possible. I try to get a lot of lean protein and fiber into our meals, which can drive the cost up, but I think it's worth it.

I'm working really, really hard to kick our dining out habit. We, like lots of young, childfree couples, can find lots of excuses to eat out. I enjoy it, but the costs add up and it's really hard to find a meal that meets DH's dietary guidelines that he actually wants to eat. So I'm working on cutting waaaay back on restaurants. It's harder than I thought it would be!
 
DD (12) made dinner tonight using a recipe from a Rachael Ray cookbook.

Vegetable Chili Stoup with baked quesadillas. She put soy cheese in ours and rice cheese in her brothers. She did a good job and it was tasty.

My DH loves chicken pot pie and other creamed chicken dishes, so I make risotto to quench his cravings. Tonight we had risotto with chicken and fresh peas. More carbs than I like to eat for dinner, but it's nice and creamy without all the fat. It's fairly inexpensive too.
 
I finally bit the bullet & ordered a George Foreman grill after seeing recent DIS threads that you can cook more than burgers on this. The Amazon reviews on this are really great for also grilling chicken, fish & veggies.

Staying budget minded, I got mine tonight online at Kohls while on sale, combined with an extra 30% off coupon code! :cool1:

In researching whether I wanted to get a larger size, (reviews say the small one is really tiny,) to be able to also grill fresh veggies & fruit at the same time, I found a few grilled recipes that look interesting. :magnify:

(Remember I'm the poster who is allergic to raw fruits, like watermelon.)
