Finally a menu planning thread I can relate to!


Crockpot vegetable soup - one 46 oz. can of V-8 or store brand vegetable juice, large bag of frozen mixed vegetables, one bag of frozen hash brown potato cubes (not the shredded kind). Cook on low for about four hours - if you cook all day the vegetables get too soft. You can also add a packet of Lipton Onion Soup mix if you can spare the sodium.

I'm going to have to try that salmon chowder recipe--salmon is the only fish my kids will eat, they won't even touch fish sticks. We're trying tilapia soon, though--if they don't like it, they can go hungry. I'm not a big fish eater, but I like it once in a while.

Breakfast-smoothie made with vanilla yogurt, strawberry yogurt, vanilla soymilk, bananas, strawberries, raspberries, peanut butter and flaxseed
green tea w/Splenda

Snack-100 calorie pack Oreos

Lunch-leftover lasagna
grape tomatoes
grapes

Snack-watermelon and 1 piece of matzah w/cranberry pepper jelly

Dinner-not healthy at all! We went out for Belgian food and ate foie gras, pots of mussels w/fries, beer and peach crepes. Very delicious though!
 

Friday

Bagels, bananna strawberry smoothies

Grilled Cheese, celery sticks with blue cheese and juice

Japanese Noodles w/ squash, mushrooms, ginger, and flank steak
Edamame

Red Bean Ice Cream

We live overseas, but are in the USA visiting family. We've been here 7 weeks and have one to go. Grandma doesn't seem to believe in any fresh fruits and veggies. I cannot wait until we get home and I can use this thread for inspiration!!!

We make our smoothies with silken tofu, orange juice and frozen fruit. The tofu adds protein and makes it nice and thick. Maybe that would work for you instead of the powder?

Also - I just interviewed Missy Chase Lepine (who wrote The Sneaky Chef) for an article I'm writing! I think she has some great ideas. I've only tried one recipe so far: start with a basic spaghetti sauce, then add pureed cooked cauliflower, pureed zucchini, pureed sweet potato and pureed carrots. You don't add too much - small amounts are not even noticeable but they do add a nutritional boost. I'm going to try her brownie recipe which includes pureed spinach and blueberries!

Great tips, Teresa. I'm going to try the tofu in the smoothies. About how much do you use? If it's blended, they'll never even know it's in there!
 
I have gotten alot of good ideas from this thread thanks! We also do the breakfast smoothie we use frozen strawberries, blueberries a couple of bananas, pomegranate juice and organic sprouted golden flax sometimes i put in some protein powder. Makes me feel so much better like they are getting a better start to the day! I am not a big breakfast eater also so this is usually all I will have. Here is the rest of our day:

Lunch:
Tuna salad sandwiches
baked lays

snacks:
apple slices
bananas
organic white popcorn

Dinner:
Mexican lasagna
layer tortillas
with a beef refried bean filling (seasoned with taco seasoning)
corn, black olives, salsa and cheese, repeat not exactly health food but it is yummy I serve it with sour cream on the side :thumbsup2

Bkfst: Oatmeal with cinnamon and raisins.

then we went to the Farmer's Market and snacked on samples - peaches, apples, bread, cauliflower. (also bought LOTS of great food)

lunch: vegetable soup, peanut butter sandwich (while we were out)

snack: we were still hungry when we got home, so we had steamed cauliflower and broccoli, apples and peaches, and some chocolate wafer cookies

supper: after that big snack, we weren't too hungry for supper so just had a large salad and fruit-tofu smoothies for dessert

teresa ("we" included me, my daughter in law, two grandchildren. my sons and other grandchild were at home and they had barbecued homemade burgers for lunch)
 
Here's what it says on my can of steel cut oats:

Whole oat groats cut with a steel blade for an old-fashioned nutty flavour and chewy texture.

It takes about 25 minutes to cook (I often do it overnight in the slow cooker) but is very tasty.

Breakfast - Coffee - nothing exciting there!
I was busy cleaning and doing laundry and didn't eat until the afternoon and had carrots and hummus :tongue:
Dinner - Catfish Po Boys - great recipe from Cooking Light a few years back with beautiful catfish fillets from Whole Foods and some cheese curls from Whole Foods made with real cheese and nothing weird! :)
This wasn't a stellar example of a typical healthy food day but not too shabby. I just spent 135 at Whole Foods but it's the basics for 2 weeks and I'll fill in with a farmer's market stop next week.
I bought my first soy milk. Am I going to love it or not? I keep reading things about milk that are scary but I have to admit I'm anxious to see if I'll like it :eek: I got some chicken sausage brats that they were taste testing and were sooo good along with some pork chops and boca chicken that was on sale. Whole Foods isn't cheap but man they have good stuff - and I leave feeling like we have a good shot of having a nice healthy week with this type of food in my pantry! Great thread!!

What a great snack and how lucky you are that you can get them in your area! We just got back from Orlando yesterday and this post reminded of the delicious Dole Whip I had two days ago!!!!:thumbsup2

I am so loving this thread and send my thanks to the OP and all of the contributors. I'm trying the blueberry muffin recipe for breakfast tomorrow morning!!!!

I just went to Whole Foods today too. I am trying to go more natural with my cooking and eating. I bought raw milk (it can be purchased it grocery stores in Maine if they have the right license, and whole foods does). I tried some, and while I like it, I couldn't tell a huge difference between it and pastuerized milk. I also got steel cut oats, that are soaking overnight. I also emailed a few local farms to see about joining their CSA's next year. But here is my question..whole foods is so expensive compared to Hannaford. For those of you who buy organic, what are your must be organic foods, and what do you skip on and just buy the regular?
