I just wanted to say that I made the parmesean zuchinni recipie last night and it was FANTASTIC. I can't remember who posted it originally - but thanks! It's a great new addition to my vegetable rotation!!
 
I'll have to guess on today.. I've worked for four days straight, and for a SAHM, going back to work, this causes my brain to go to mush.

I feel like I"m splurging with the tacos. The fake meat just costs so much, it's hard to justify. But, I started a new job, and was in the mood to fix the kids one of their favorites.
 
Plantlady, are you using Boca crumbles or similar as your fake meat? We used to love, love, love using those products----I would even buy bags of dry tvp at the natural foods co-op! Can't anymore since dd12 now has a soy allergy :( The Morningstar burgers used to be our big weekend splurge. Oh well!

Yep, we're using Boca crumbles.. we just call it "fake meat" around here. I wasn't thinking.. that perhaps everyone doesn't call it that. :)

I've read that there are not good things in it, chemicals, preservatives, ect... so we try not to eat it too often. But, we like the crumbles, and we use the boca sausages for jambalya.

Have you tried just tofu and a vegetable mix?
My son makes a Vegan taco out of tofu carrots and mushrooms.

I don't think my kids would eat it. I appreciate the suggestion though. I have considered trying the TVP from the local health food coop, but again, they might not eat that either. they are quite picky, and I have to be sneaky sometimes.

I thought it was added wrong too. I must have been hitting something on the caculator wrong or something. Oh well. Anyway, here's today's total so far. I'll edit it and add in dinner later. I have no idea what I'm going to have yet.

I just discovered what I long suspected about food labels.

There is NO requirement for food manufacturers to provide any kind of real serving size. The only requirement is that the amount of nutrients in that serving be listed in grams and as a percent of RDA.

I looked into this further after I saw that a small can of tuna was listed as 2 1/2 servings - which is totally ridiculous.

Food manufacturers can and do alter those serving sizes based upon the things people look for on that label - calories and fat. The lower the better, so suddenly, those servings get smaller and smaller. Go look at your labels, particularly for junk food. Those serving sizes are tiny. They're tiny for proteins :)

I thought it would be helpful for you to know that the servings listed on the packaging have absolutely nothing at all to do with how much you should eat per person, per meal.

In europe, the labels don't even mention serving size. The percents of RDAs on the labels are for a fixed weight of the food in the package so that it can easily be compared to other similar food.

Ok Camping trip over back to normal life

For the hashbrown slow cooker meal i have a great recipe. makes huge batch

12 eggs beaten
1 bag hash browns ( I use Obriens' )
1 onion diced
1 green and red pepper diced
1cup bacon cooked and chopped or Ham or sausage or all three up to you. Even leftover diced up steak works.
2 cups of cheese any kind you like
1 cup milk or sausage gravey

spray the slow cooker with pam before cooking.

Layer with browns then meat then cheese then when all layered take the milk poor over then the eggs and cook for 8 to 10 hrs on low or 6 to 8 on high.
