That hash brown recipie does sound good. I don't have a slow cooker. Do you think it can be adapted for an oven bake?

Sounds like a great brunch dish!

I'm sure it could it makes a lot it feed 18 kids and 4 adults at church so i would use 13x9 baking dish or two. and just keep an eye on it after 45. min at 350 i think that's what i cook my egg cassorles at.

I really would add more liguid to i think i decided last time i made it i would increase the milk or gravy to 2 cups. if baking probably no.

Ok Camping trip over back to normal life

For the hashbrown slow cooker meal i have a great recipe. makes huge batch

12 eggs beaten
1 bag hash browns ( I use Obriens' )
1 onion diced
1 green and red pepper diced
1cup bacon cooked and chopped or Ham or sausage or all three up to you. Even leftover diced up steak works.
2 cups of cheese any kind you like
1 cup milk or sausage gravey

spray the slow cooker with pam before cooking.

Layer with browns then meat then cheese then when all layered take the milk poor over then the eggs and cook for 8 to 10 hrs on low or 6 to 8 on high.

wow, that sounds soooooo good. comfort food at its finest. I don't own a slow cooker either.. so I will figure out a way to make it, vegetarian, in the oven. thanks for sharing!

I did add one time make a half of batch of mushrooms and broccholi and onions and peppers instead of meat and instead of milk and sausage gravy we used 16 oz jar of Salsa. Came out ok the pastor's daughters used flour tortillias and refried beans made breakfast burritios out of it. I liked it but my family wants meat when i make it. I'm not sure on the cheese though i don't like cooking with soy cheese and if your using silken tofu instead of egg i wouldn't cook it as long. Let me know when you do i would like to try it out also.

well, we eat eggs and milk. so, I will find some vegetarian milk gravy.. or even make some myself, and just omit the meat. I might splurge and get some boca breakfast sausage for it, that might add a fun burst of flavor.

We found out some great lunch ideas from friends of ours they are healthy and cheap
#1 idea
Cut up veggies and cheeses with yogurt dill dip
and water or juice

#2
Chinese chicken salad and Sourdough slices.
and juice

#3
sandwich wraps of Blt's made with turkey bacon and wholewheat or spinach wraps. Juice and a piece of fruit.

My kids are going to bring there lunches and we are planning our monthly shopping trip and we have to include lunches in there now for school.

My DD8 will not eat sandwiches. I have no idea what to give her for lunch that won't fall apart before lunch time. Last year we did some veggie chili in a thermos, tomato soup in a thermos. She likes veggie baloney sandwich (occasionally) w/mustard. I cut up veggies. She eats fruit. What else is there? (BTW, no meat allowed at all)
:confused3 :confused3

does she eat yogurt?

When my son was still doing milk products he'd take yogurt cups with something to mix in there -- dried blueberries or various seeds. He takes celery with peanut butter and raisins often. We buy tons of trail mix from Trader Joes, I'm sure it could be made much cheaper by buying the separate ingredients in bulk and combining them myself -- which I keep meaning to do but I never get around to it.

He dries alot of fruit on a dehydrator and then packs the banana and apple chips in baggies for snacks.

That's where i'm having problems to my son doesn't want sandwiches and he doesn't want anything like a thermos since he know's he will loose it. So i'm coming up with just finger food and yogurts and things of that sort he likes spinach dip so maybe a wrap with spinach dip and broccoli not sure he will eat chicken but will not eat beef or pork.
if you get any ideas let me know.

Yes, but that's a snack. She's in school until 4 pm. I need something substantive. Also, it's a peanut free school. I'm at my wits' end.

What about cheese will she eat cheese and pita slices or bagels. Mine will eat a pita with dip or bagel slices. Hummus is great dip very healthy and very easy to make to once you buy the tahaini you can make huge batches of it. I make a roasted red pepper hummas that they love and don't realize that it's healthy.

dawn how do you make the spinach dip?
1 pkg. Knorr Swiss vegetable soup mix
1 box drained & squeezed uncooked, chopped spinach
1 sm. onion, chopped
1 c. mayo
2 (8 oz.) cartons sour cream
Mix together all but bread and refrigerate overnight

That one we use alot. and the other one is.

1 pkg. frozen spinach thawed
1 jar marinated artichokes, chopped
8 oz. Philly cream cheese
8 oz. sour cream
3/4 c. shredded Parmesan cheese
8 oz. shredded Monterey Jack cheese
1/2 onion finely chopped
1 stick butter
red pepper flakes to taste

Sauté onions in butter, adding ingredients while mixing and blending well after each addition. Add ingredients in this order: Spinach, Cream Cheese, Sour Cream, Parmesan Cheese, Artichoke Hearts, Crushed Red Pepper Flakes.

Remove from heat and put in crocks or microwave dish. Top with Monterey Jack Cheese and melt.

I like this one cold also so i don't include the Monterey jack cheese and the butter if i do it cold. so don't saute the onions or other ingredients if you do it cold.

I've read over this thread or at least picked out every 10 pages or so and read it and now have questions. Part of my job is teaching life skills to new army spouses who may not be familiar with living on their own and this includes grocery shopping.

For the really die hard posters that have families how and how often do you grocery shop?

Do you make a list of the meals for an upcoming week or two for every single meal in the day?

Do you plan real meals that include proteins, veggies/fruits, and starches?

When you do grocery shop do you have a budget? If you go by the $10/day thread here, you have a budget of $300 a month for groceries. Do you think you spend that much a month?

Do you have an ultimate goal with the money you think you are saving or is it to help your household in other areas such as debt?

I'm honestly not trying to be insulting at all because I really do want to know. I have several spouses who have very little money and need to figure out how to grocery shop and make meals.

I tell them to pay your bills, put what you can spare in your savings, figure out what meals you'd like for 2 weeks at a time and how much you can pay and then shop.

I honestly don't know how much per day I spend and really don't care. It is just myself and my husband. Well mostly myself but when I shop for the both of us for 2 weeks it's about $100. I buy a week of fresh veggies/fruits and a week of frozen veggies but still have fresh fruit because I find it hearty. I also tend to make normal family size meals not small meals for two people because I never know when several soldiers will show up on my doorstep.

Please, I'd like some insight into this if I thought it would help some of the new families I know that need to save money in anyway possible. BUT I do teach that they need healthy balanced meals which I'm not always seeing on here.

Again, I'm no way trying to be insulting I really do want to know. Thank you.
