My personal favorite is...
Chicken Tortellini Soup
1 cup chicken breat meat, diced
1 tablespoon butter or margarine
2/3 cup carrots, diced
1 cup celery, diced
1 cup onion, diced
5 chicken bouillon cubes
5 1/2 cups water
1 tablespoon parsley, chopped
1/8 teaspoon thyme, ground
1/4 teaspon garlic powder
salt
white pepper
1/2 pound tortellini, cooked according to package directions
In a 3-quart saucepan, melt butter or margarine. Add carrots and saute 2 to 3 minutes. Add diced chicken meat and cook another 5 minutes until chicken is done. Add celery and onions and continue to cook another 4 to 5 minutes. dissolve chicken bouillon cubes in water and add to soup will all remaining ingredients except tortellini. Simmer soup until all vegetables are tender. Add salt and pepper to taste. Add cooked tortellini adn serve.
**I use real chopped garlic and black pepper but each to his own. This makes 8 cups but for my family of five (and one doesn't like this soup) we have to double it!
