Favorite Soup Recipe????

Its cold and I'm thinking about soup. We are having a 4th birthday party for my DS and we thought why not a soup party? Do you have any favorites? Thanks for your help.
 
We probably eat soup 2-3 times a week this time of year. Taking soup rather generically of course.

There is always chili of course too.

I make turkey, chicken, and vegetable soup (with and without meat) from scratch almost every Sat. The recipe is pretty simple and essentially the same, although I'm sure you can find variations that are a bit more "structured" at some of the sites like foodnetwork.com

If I have a bone/bones from the meat I plan to use I start by simmering it in a large pot of water. When the stock is "ready" I remove the bones, returning any meat I pull from them back to the pot. Sometimes I will add extra meat if I have it as a leftover. You can also use canned chicken or turkey if you don't have leftovers on hand. Or with chicken cook up (parboil or Foreman grill) boneless breasts.

Add veggies as preferred.

Chicken and turkey get celery, all versions get onion and garlic. Often I will simply use a bag of frozen mixed veggies although DH doesn't particularly like peas in soup. Pretty much any leftover veggies in the fridge go in the pot!

Occasionally I'll add noodles to the chicken or turkey. I almost always use some barley in the vegetable. Also I will add V-8 or tomato juice to the vegetable.

Flavor with coordinating spices to taste. One thing I've learned is that it is best to add salt nearer the end of the process - of course if it happens to simmer too long then add more water!

I know there aren't a lot of measurements in these recipes but then soup is that way.

And don't forget the bread! Although I watch my carb intake pretty closely I still start the breadmaker at the same time I start the soup pot!

Another way to go is to make it from a mix (Bear Creek has some really GOOD ones) or frozen. Can hardly tell the difference.

My personal favorite is...

Chicken Tortellini Soup

1 cup chicken breat meat, diced
1 tablespoon butter or margarine
2/3 cup carrots, diced
1 cup celery, diced
1 cup onion, diced
5 chicken bouillon cubes
5 1/2 cups water
1 tablespoon parsley, chopped
1/8 teaspoon thyme, ground
1/4 teaspon garlic powder
salt
white pepper
1/2 pound tortellini, cooked according to package directions


In a 3-quart saucepan, melt butter or margarine. Add carrots and saute 2 to 3 minutes. Add diced chicken meat and cook another 5 minutes until chicken is done. Add celery and onions and continue to cook another 4 to 5 minutes. dissolve chicken bouillon cubes in water and add to soup will all remaining ingredients except tortellini. Simmer soup until all vegetables are tender. Add salt and pepper to taste. Add cooked tortellini adn serve.

**I use real chopped garlic and black pepper but each to his own. This makes 8 cups but for my family of five (and one doesn't like this soup) we have to double it!
 
Sounds yummy & I just ate lunch. May have to give that a try this weekend.

Steak soup--
either london broil cut up in bite
size pieces..or stew beef cut into smaller pieces..I
prefer london broil..cheaper than
stew beef...sooooo
1 lb london broil...cut into little
pieces
one 28 ounce can of whole
tomatoes....chopped up liquid too...
bay leafs..4-5..
4 beef bouillion cubes...
small pasta of your choice..four
handfulls...
chopped finely onions..half cup..
chopped finely celery..quarter cup..
carrots...chopped finely.....one
cup..gets past the kids this way...also gravy master.
in large pot....dabble a little
oil...canola or what ever....saute onions, celery..with
ground pepper and a wee bit of garlic

powder.....
add meat and keep it moving in the
pan until browned.....put more pepper and garlic on
it...add enough water to cover the
beef...
add your beef bouillion cubes and
bayleaves.....
when the water starts to boil..add
alot of water..the more the merrier...when that
starts to boil....add smooshed up
tomatoes and juice...and the carrots....cook until the
carrots are almost tender....add
pasta....enjoy....keep test tasting to add more gravy
master.....delicious
