Fast pass selection help....

hi,

We are a party of seven
4 adults (mum and dad and grandparent that might do most rides and if not we will take there fast pass spot) and 3 children (age 8 boy, 11girl, 13 girl)

We are arriving on the 9th of July and staying 10 nights at port Orleans
We have a 10 day park hopper with water park..
We plan to spend the 10 days at Disney parks as we then split staying and heading to a universal hotel...

Am confused as last time we where at Disneyland California we would get manual fast pass..

Question I have is
Which fast pass should I start with and which park should I start my adventure...
We all love fast and scary rides and the kids are above 125cm...

Also can you only select 4 fast pass for the day and then after you use them up you can select more...
or
is it 4 pass per day then get more as you go on the day.

Would love a guide on what works for you and any advice would be grateful...
