Excursion question for recent cruisers

We just booked the 9 night Southern for late July last night (really nice VGT rate), but most of the excursions we would want are sold out. Has Disney been releasing all of the excursions at one time, or adding new ones randomly up until time to sail?

When we last sailed in October, Disney was randomly adding excursions right until the cruise left. Just haven’t heard how excursion availability has been lately. Hoping recent cruisers can share their experience booking excursions in the last few weeks.
