EPCOT Christmas Week

We will be at EPCOT between Christmas and New Years. Typically we don't make ADRs in EPCOT (for our summer trips) because we enjoy choosing from the QS options in WS. I am starting to panic that it will be too crowded to make this plan enjoyable to Christmas week! LOL! Anybody with experience during the busiest week of the year? Given that we will try to eat at off hours, will it be really difficult to get a QS meal?
