I am so looking forward to Thanksgiving Day! I love the food and the family and the special programming and events on tv and the parades! I have to work this year so I am prepping everything and all DH has to do is put it in the oven and take it out according to schedule and we will still have our delicious Thanksgiving meal. There are only the two of us so I am not going all out with food we don't need and will only be gorging on because of "tradition" so no mashed potatoes, green bean casserole, candied yams, yeast rolls, pumpkin pie or pecan pie this year. It's just unnecessary expenses and cutting those is what this is all about, right?

Here's what I have planned for our dinner table this week:
Sun - beef pizza, canadian bacon pizza
Mon - cheese enchiladas with beef chili gravy, mexican rice, guacamole
Tues - leftovers
Weds - club sandwiches, tomato soup
Thurs - Turkey and cornbread dressing with gravy, green beans with almonds, cranberry sauce, tossed salad, and chocolate pie (DH's favorite).
Fri - Hot Brown sandwiches, mixed fruit cup
Sat - turkey tetrazzini, salad

Have a great Thanksgiving Day everyone!
~Happy Cooking~

DH keeps ruining by dinner plans by picking up Wendy's while he is working. I took chicken breast out of the freezer this morning and they are all defrosted now. How long can I use them for? I should be able to keep them for dinner tomorrow right?

This is the third time this week DH has gotten fast food and throw off my plans:headache:

Tonight ended up differently then planned. What I thought was just going to be a brunch out for my friends bachelorette party turned out into an entire days worth of activities. So I had dinner out while mom had leftovers.

Sure, you can still use the chicken. I have had chicken thawed in the fridge for as long as 3 days before cooking due to things that come up, and the dish turned out fine. You can always cook it up (boiled) and have the cooked meat in the fridge for a later use too if something comes up and you need to get it cooked before it goes bad.

Man yall cook way too much. I make a big meal in the crockpot on Sunday and it usually last me most of the week.

oopsiDaisy~We also make biscuits & chocolate. My DH grew up on it for a special breakfast type of thing from the neighbors. Forever, they would not give him the recipe, said it was a "family recipe" and wouldn't share. So we had been asking them since we have been married, now over 14 years.

Well, a few years ago we were visiting Portland, they live about and hour and a half from there, so we called the dad (now this is the dad of my DH's friend) and my DH told him we are bringing our kids for breakfast, they need to try this stuff. So we drove almost 2 hours, he made us all breakfast and he finally gave us the recipe. So we came home & made it, and of course it tasted nothing like his. So we goggled and low and behold there it was on allrecipes. :lmao:
They do call it chocolate gravy, which is what I see you have called it...but anyhow that is the recipe we now go by. :lmao: (just thought I would share, because not many people we know of know about it).

I grew up on this also... It was always a "Special" breakfast... But my MeMe used to make for me. Biscuits and chocolate gravy! :woohoo::woohoo: Brings back all kinds of memories.

OMGoodness!!! I am so excited that you both know what it is! I figured I would get a lot of "what's that?" :confused3 It is sooo good, and we only have it occasionally, too. I grew up on it, a recipe passed from my grandma, to my mom, to my brother and I. The kids LOVE IT and so does DH.

Dinner tonight:
Red Beans and Rice with Ground Beef
