No idea what I am having for lunch but dinner is white chicken chili with a cornbread crust. YUMMY! Really looking forward to is.

I have to say though, this snow makes it really easy to not go eat out! :lmao:
 
I decided to have leftovers for dinner. We have a ton of pot roast left and I am afraid that if we do not eat it tonight we will forget about it. At least the stuff for chicken enchiladas is all pantry/freezer so none of that goes to waste and will be there for another night.

We have this metal thawing board - got it at a garage sale so I'm not sure if it is for sale but it is a lifesaver for thawing food. Chicken cutlets are thawed in 2 1/2 hours.

My boyfriend has one of these and I LOVE them. They can be a lifesaver when you realize you forgot to thaw something! I really want to find one.
 
oh now that I finished reading I see you need a dutch over. You think that could also be done in the crockpot?
 
Mon - pasta with peas and italian bread
Tues - chicken cutlets and broccoli, maybe rice
Wed - Baking a ham *might be a snowstorm so I'll also be making a pot of chicken soup for the kiddos:)
Thurs - leftover ham
Fri - homemade pizza
Sat - might be going to MIL's birthday not sure if it's this week or next. If not this week, we'll have leftover ham
Sun - I think the Steeler's will be on so we're going to make buffalo wings not sure what else yet
 
oh now that I finished reading I see you need a dutch over. You think that could also be done in the crockpot?

I don't know about the crockpot because I'm not sure how you would do the cornbread crust that way. Now, you could make the chili in the crockpot and then make cornbread on the side. Not quite the same, but you would have all the flavors.

The cornbread crust does crust up and brown nicely. I was worried about it the first time I made it because I thought it wouldn't cook right and "dry" out as it baked, but it was great!
 
i think you can make your own dutch oven with two pans right?

On a side note we are buying a keriug tomorrow any favorite flavors out there? I like a lot of tea and for coffee i like the flavor ones. Can u make any coffee into iced coffee?
 
ok so tonight is crockpot roast, going to try the crockpot chicken and dumplings for tomorro.
 
for meals:
chicken brushetta bake, salad (didn't get to make last week)
roast, carrots, potatos, salad
l/o roast, gravy over egg noodles
chicken lasagna
chicken tacos, mexican rice
chicken and dumplings
shrimp pasta

this was my plan for the week, so far we've had:

l/o
roast, carrots, potatos

and for tonight I have chicken and dumplings in the crockpot! Yeah!! One dd has gymnastics and the other one and I are going to run the track at the y for our training for gasparilla....she is going to do a 5 k with me....then we'll be home to dinner all ready!!!!!!!:thumbsup2 I think tomorrow I am going to do the roast leftovers over egg noodles, Thursday crockpot chicken lasagna......


I think I am getting over my fear of leftovers....finally
 
We REALLY need to cut back on our eating out. I'm home all day so don't have any excuses! These days it's usually just hubby and me. Our son is married and has his own home and our daughter is away at school. She's home during the breaks and I do try to prepare extras for her freezer when I can :)

We're just back from a trip to Key West so my menu for this week begins today. We ate out every night in Key West!

Tuesday: Spaghetti and meatballs, garlic bread, salad
Wednesday: Jambalaya, mustard greens, white beans, French bread
Thursday: Chicken/broccoli/rice/cheesy casserole, carrots w/honey, biscuits
Friday: Hubby's night out-leftovers for me
Saturday: No idea yet, I'll shop on Wednesday. We'll probably grill.


I'm mostly a scratch cook but I do use things like canned (boxed?) chicken stock. I buy our French bread but make things like biscuits and cornbread at home.

I've got the beginnings of my sauce on. It's a couple of bell peppers and carrots that survived in the fridge, garlic and spinach from the freezer and onions and tomatoes from the pantry. When that's nice and cooked down I'll puree it (hubby doesn't do chunky!) and add a can of crushed tomatoes and the meatballs. The meatballs are from the freezer leftover from a HUGE batch I made to have on hand during the holidays.

It will be interesting to see if we can stick with it! It will be nice to have a little support group :)

This thread is a GREAT support group. On more then one occasion I have been tempted to go out, but instead have jumped on here to renew my drive. Tonight was one of those nights as I wasn't supposed to be home, but the weather means I am stuck. I thought about ordering pizza, but instead pulled out some of the hot dogs we got shipped from Tastes of Chicago. So, we are having Chicago Style Hot dogs tonight with baked beans!
 
had to get creative last night.

I stuck to my menu - pizza pockets, which are meant to be like mini calzones. You are supposed to put the filling (turkey sausage & spiniach) in triangles made of pillsbury pizza crust. Well, I forgot to buy the crust or something cause I couldn't find it in the fridge. BUT I did find pillsbury croissant rolls, so I made a ring of those, overlapping the short ends of the triangle and put down the filling and rolled the croissants around the filling and served maranaria sauce on the side for dipping.

phew - it came out just fine without having to make an emergency trip to the store.

This cooking at home is dramatic business.
