We didn't have the salad last night. Hubby covered up the garden (We got down to 26-that's COLD for Baton Rouge!) before I got out there to pick anything. When it warms up I'm going to see if anything survived.

My sauce has TONS of veggies in it-carrots, spinach, tomatoes and lots of peppers and onions. Most of the time we use whole wheat pasta but neither of us likes spaghetti noodles made with whole wheat-it won't twirl right ;)

I'm planning on taking down the ugly wallpaper in our bathroom today so tonight will mostly be out of the freezer-turkey/andouille jambalaya, white beans and the mustard greens that are probably frozen out in the garden!

It finally snowed a good amount last night. I'm going veer off my original menu and do chili instead since it is so cold out. Ummm....I love chili on a cold day.
 
we use lots of veggies as sides, I should start posting them.

I am doing so good = we had the crocpot chicken and dumplings last night. tonight is leftovers, roast over egg noodles and if that isn;t enough the chicken and dumplings.

I figure with the next week I will finally have it down on how much to cook - I have been using way too much....
 

Omg! My grocery bill was a shocker today! But I was out of meat and had a lot of buy one get one free coupons on slim fast shakes, shampoo, pads, etc.. It's the produce that's a kicker! I hear produce is going to skyrocket in the next few weeks so it's time to stock up! Of course I choose to start Weight Watchers when produce is through the roof :rotfl: I did save $60 in manufacturer and store coupons though. I think I may have to live off my pantry and freezer again next week.

Here's some of what we are eating for the week

buffalo chicken sloppy joe sandwiches in the crockpot
chili cheese fries and then mac and cheese with the left over cheese
taco salads with the edible taco bowls
indian style chicken over couscous
a chick pea stew from B*tchin Kitchen (I am adding chicken)(that's the name of the show filter I am not trying to swear!)
mini cheeseburger sliders

Mon - had McDonalds
Tues - Chicken & Rice Casserole
Wed. - Salmon & Rice & veggies
Thur - Sloppy Joes & French Fries
Fri - Tuna casserole
 
We have vegetables and/or a salad with anything that doesn't already have vegetables in it. Also we have other veggies and fruits throughout the day. I just had an asian peanut salad for lunch, very yummy!
 
Ventured out to the grocery store during a break in our snow and got some good deals. One of the stores had ground beef on manager's special at $.99lb for the family pack. I got six pounds of good ground beef for $6.00. I already froze it into half pound portions because that is more than enough for just my mom and I for a meal.

Tonight we decided to have sloppy joes with sweet potato fries and orange/grapefruit slices.
 
Lillygator: Here is the hotdog casserole recipe. It's from the French's site where they call it Stuffed Taters.


Ingredients:
4 cups frozen hash brown potatoes, thawed

1 (10 3/4 ounce) can CAMPBELL'S® Cream of Celery Soup

1 cup shredded Cheddar cheese

1 cup sour cream

1 1/3 cups FRENCH'S® French Fried Onions

6 frankfurters

Directions:
Heat oven to 400°F. In large bowl, combine potatoes, soup, 1/2 cup cheese, sour cream, 2/3 cup French Fried Onions. Spread mixture into 8 x 12-inch baking dish.

Split frankfurter lengthwise almost into halves. Arrange frankfurters, slit-side up, along center of casserole.

Bake, covered, for 30 minutes or until heated through. Fill frankfurters with remaining cheese and onions; bake, uncovered, 1 to 3 minutes or until onions are golden brown.

Someone else posted that they noticed a lack of vegetables in most menus, we always have vegetables with dinner, I just don't list them.
 
Didn't feel good (still don't) so the pork chops were put up for dinner another day. Made myself some scrambled eggs and toast since my tummy is upset. Mom had a bowl of cereal (that's all she wanted).

No idea what I am doing tomorrow as I have class tomorrow night (if I can get there).
 
You Could put the pork chops in a crock pot all day with apples onions brown sugar a little sat and pepper and if u have it poultry seasoning also for moisture add apple juice and cook on low could also throw in carrots and potatoes

I would, but they are already seasoned and marinated. It's honey, dijon mustard, and cider vinegar. Very tasty, but I was just so worn out tonight. UGH.
 
Holy crap! I didn't realize how much money I was spending eating out! I've decided to get serious about eating at home and bringing lunch to work, etc. My main problem is that my husband it out of town a lot for his job so I don't want to make huge batches of things. It can be very frustrating.

Tomorrow I'm bringing lunch to work. Penne pasta with Vodka sauce (bought from a jar at Publix), some crackers, and oranges. I'm bringing popcorn for a snack. It's not glamorous, but it's cheap!

I am loving reading all of the great dinner ideas. Here is our menu for the week:

1/10 ~ sirloin slices, oven roasted potatoes, spinach
1/11 ~ cheesy potato soup
1/12 ~ creamy mushroom pork chops, penne w/cream cheese, chives, tomato and bacon, green beans
1/13 ~ spaghetti and garlic toast
1/14 ~ hamburger mushroom gravy over mashed potatoes, corn
1/15 ~ roasted chicken, baked potatoes, broccoli
1/16 ~ sloppy joes, oven fries, green beans

I'm trying really hard to stay on a tight budget so that I won't have any guilt about the upcoming WDW trip, lol. So, (with the exception of my aunt treating me to lunch this weekend) no eating out for us at all this month!
 
Mon - pasta with peas and italian bread
Tues - chicken cutlets and broccoli, maybe rice
Wed - Baking a ham *might be a snowstorm so I'll also be making a pot of chicken soup for the kiddos
Thurs - leftover ham
Fri - homemade pizza
Sat -not going to inlaws so I'll make a lasagna and watch the Steelers :)
Sun - use leftover ham and make fried rice and use other leftovers too

Tonight will be a chicken broccoli rice casserole and carrots.

Have stuck to the plan all week - but either my plan ran out or someone raided the fridge cause it's looking a little hollow in there.

Need a plan for tonight. HHmmmm....
