Eat at home

Today it snowed and is still snowing. I made a bunch of stuff:

Hamburger Casserole
Baked Salmon Patties
Mashed Potatoes (double batch)
Corn
Butter beans

Monday: We will eat leftovers with a ham steak;
Tuesday: Fettucine Alfredo with chicken and broccoli;
Wednesday: Chicken thighs with tomatoes and rice and peas;
Thursday: Popcorn shrimp and fries;
Friday: Pizza
Saturday: 1900 Park Fair to begin our 5 nights at WDW!!!
 
Yesterday, I hosted a Christmas party. I set up a "make your own wraps" layout on the island, with whole-grain tortillas, shredded seitan in barbecue sauce, black beans in a spicy Mexican sauce, caramelized onions, strips of yellow and orange peppers, salad greens, and salsa. People took a tortilla and added whatever fillings they wanted and rolled them up. I also had raw vegetables (celery, carrots, broccoli) with two different dips (a vidalia onion salad dressing, and a nut dip), a big bowl of clementines and a bowl of seedless grapes. Everyone enjoyed the meal, I think!

Today, for lunch we had veggie burgers topped with mushroom-onion gravy (no buns) and steamed broccoli. I made extra gravy for later in the week.

For dinner, I made a "clean-out-the fridge" meatless chili. It came out very tasty, and I have extra in the fridge for later in the week.

My plans for the week:

Monday:
Sweet potato oven fries topped with chili, plus a salad.

Tuesday:
Tofu "quiche" with broccoli and onions.

Wednesday:
Seitan "fillets" with onion-mushroom gravy, green beans and salad.

Thursday:
Chile with cornbread and steamed broccoli. This should finish off the chili.

Friday:
Chickpea-spinach curry and salad.

Fri - Paprika Pork Chops with Mashed Potatoes & Broccoli
Sat - Chicken Noodle Casserole & Broccoli (this was really good!)
Tonight - Sausage & Cheese bake, Baked Fries, and Peas

Not sure about the rest of the week yet, planning now.
 
Last night I was up so late studying that I slept into late to put anything in the crock pot. So I am having a pantry night dinner of pasta bake.
 

Last night we had an old favorite Chicken brushchetta bake very easy to make and we used some leftover frozen turkey instead of chicken. The kid and I will it as leftovers and add some pasta tomorrow night while hubby is going out for a holiday dinner.
 
Oh..... can I play?! :) We have been making an effort to eat in more. The restuarant prices are just going up and up and up, and we need to cut back on our spending AND eat healthier.

We are a homeschool family, and lunch is our biggest challenge. My dh and I got into the habit of eating lunch out every day when the girls were in school, and we have continued to do so. Now we are paying for 4 instead of 2. On the plus side, at least lunch out is cheaper than dinner out. Still... we really need to stop.

I'm also considering making lunch our main meal, and just doing something smaller and easier for dinner. Does that sound crazy?

Anyway.....

Sunday... homemade burgers and fries. We did this because The Amazing Race was coming home to the US, so we had typical US fare. LOL!
Monday... chili, cornbread, and a salad
Tuesday (tonight) will be leftover chili, etc
Wednesday... this is our breakfast for dinner night
Thursday... I have a meeting, so I may try doing our big meal for lunch and just sandwhiches or something for dinner. (It'll also be a little test run to see how the whole mid-day main meal thing goes.)
Friday and beyond.... have no idea yet.

:welcome: aboard! I am a home school family too. I have had the same lunch problem. My husband is a seasonal worker so in the winter he is home and we feel like going out or getting take out a lot. Planning is key. Stay strong! Welcome!
 
I'll give this a shot...

Sunday - meatloaf, mashed potatoes, carrot sticks
Monday - home made pizza
Tuesday - raid the fridge (someone can have left over meatloaf, someone else can have left over tacos, someone else can have a ham sandwich)
Wednesday - Chili
Thursday - Turkey Tettrazini
Friday - leftover Chili
Saturday - Not sure yet. Chili dogs?
 
Tonight we are having roasted turkey with baked sweet potaotes.

Tree, that chicken brushchetta bake sounds fabulous. I am going to try that out sometime soon.
 
So tonight I really did not want to cook but husband convinced me and we had mac and cheese for the rest of the week

Wednesday chicken and rice
Thursday pizza meatball subs
Friday pizza and the movie polar express

Saturday- Monday vacation riding the polar express

Tuesday: Chimichurri pork chops, rice pilaf, broccoli casserole
Wednesday: Sub sandwiches w/ leftover chicken, spinach salad
Thursday: (Another snowstorm coming) Breakfast for dinner - pancakes or waffles, eggs, fruit
Friday: Grilled cheese and tomato basil soup (from a batch I made last month and froze the extra)
Saturday: Crockpot potroast with potatoes and carrots, crusty rolls
Sunday: I usually cook the "big" meal on Sunday but this week is DDs choral concert so we will probably do potluck leftovers.

My biggest challenge is DH. God love him, he's been home for a while on medical leave and it seems like he's always "grazing." I have to keep a whole shelf of his favorite snacks just so I'll have leftovers to re-heat :)

We have been doing good around here. Had to adjust the menu a little due to finals schedules but we have eaten at home every single night. I worked on our menu tonight since we are going shopping tomorrow and basically everything is coming from the pantry/freezer except Christmas Eve dinner.

Today (Friday): Dinner at Grandma's as we are making candies and cookies there all day
Saturday: Pot roast
Sunday: Pork chops with crock pot parmesean potatoes
Monday: Chicken fajitas
Tuesday: Baked Macaroni and cheese
Wednesday: Baked Potatos topped with chili
Thursday: leftovers
Friday: Christmas Eve Dinner at my house
Saturday: Dinner at Grandma's
 
Here's what my menu has been and will be for the next week
I bought much of my X-mas menu this week . My grocery bill was around $130.00. I bought the ham during Thanksgiving and got a free turkey breast and some veggies. I saved $45.00 in store and manufacturer coupons and will be getting a earning rewards gift card next time I shop. I still have to work Monday and Tuesday then it's the Christmas break! Yippee!

Wednesday Crockpot turkey breast (got for free with my ham) and stuffing w gravy
Thursday Turkey burgers on the indoor grill
Friday Groupon night for my DH and I plus a movie (my birthday is Sunday)

Great Job everyone!

We are leaving a day early for our vacation due to coming back and avoiding a snow storm. Wish me luck both my girls are sick right now :sad2: and here comes my sore throat :rotfl2: here we come vacation !
 
I brought a cold with me from Wisconsin to WDW. Not the most enjoyable week ever but I made due. Merry X Mas Everyone! Have a great vacation!

I hope everyone is having a great holiday so far and those of you on vacation are enjoying yourselves. It is a little cooler than we are used to for this time of year, but still pleasant enough.

Sunday -- we had ham steak with roasted pot. and asparagus
Monday -- grilled talapia with grilled pineapple, green beans, and some kind of pot.
Tuesday -- grilled chx breasts with green beans and pot.
(Can you tell we got a good deal on the pot and beans. LOL!)
Wednesday -- our usual -- breakfast for dinner
Thursday -- chicken fried steak with onion straws and haven't decided on the rest. It will depend on what produce is on sale.
Friday -- turkey gumbo, cornbread, and muffins
Sat -- crown roast and all the Christmas fixins
Sun -- leftovers

Hey Guys, you all sound like you're doing great with your eating at home. I'm trying but my planning has flown out the window. I know I'll get right back into it after the Holidays but I'm really struggling right now. With so many Christmas parties at restaurants, it's killing me! When I have been home we mostly are eating pasta and leftovers from the resturants the nights before! Christmas is at my house, I got my ham already and I think I'll do a turkey breast too. Need to start thinking about all of the sides!

It's so sad but I'm really looking forward to the holidays being over. I want my nice quiet, well planned life back!:rolleyes1
