Tonight we are having scrambled cheesy eggs, bacon, orange glazed sweet rolls, and red seedless grapes. I'm going to steam and puree a some cauliflower to add to the eggs and cheese. Shhhh. Adding a little boost of veggies.
I made some chocolate chip cookie bread (dazzling name to get the kids attention). My secret ingredient is dried apricots that I cut in small pieces and used a blender in the batter. Can't tell it's in there. I used cinnamon applesauce instead of oil too. Boost of fruit.
My kids eat some veggies, but shy away from a lot. I buy them and they turn their nose up at them. Then I'm stuck with all these fruits and veggies. The dried apricots they liked for all of 1 minute. I think it was the texture. But they make the bread really moist and are undetectable.
I'll keep trying the whole foods but I don't want them to go to waste either!
