I'm on an unplanned trip to Disney so I'll need to watch the food budget. I raided the pantry and freezer for stuff to bring and made a $40-$50 trip to Whole Foods and the grocery to round everything out.

So far:

Friday

Breakfast at the Lake City Jameson Inn (just okay but free!)

Lunch
-Gouda/tomato sandwich
-Tostitos and guacamole
-Apple

Dinner
We went to Epcot to see Night Ranger so:

-Diet Coke (The coffee maker at the condo has those cone filters, mine are basket-I guess I need to hit a store here.)
 
Well yesterday was a really bad day with emotions in this house but instead of going out for lunch we ate what we had here and instead of take out for diner I made my dh go out to the grocery store to get the rest of things I needed for ma a nd cheese. :thumbsup2 I was proud of myself.

Yesterday my dd asked if we could have broccoli and cheese soup with bacon so I will be making that today alsong with the leftover cornbread I made yesterday.
Tomorrow night will be a chicken with potatoes and a veggie.

I should start trying to sometimes cook and plate food so that it is picture worth at home, rather than thinking of only vacation food that way!

I decided to plan a trip to Disney for next Thanksgiving, so I am going to start really keeping track of groceries and start saving! I went grocery shopping today, but when putting it away I realized my freezer and pantry are PACKED full!! Why then am I spending $100 a week in groceries? I usually do a pantry challenge this time of the year, so now is the time!!

Saturday- Mushroom white wine chicken, rice, sauteed baby spinach
Sunday- Roasted chicken, sweet potatoes, mashed potatoes, green beans
Monday- Potato soup, pumpernickle bread
Tuesday-Mushroom pizza, spinach salad
Wednesday-Sweet and sour meatballs, rice, roasted zuchini
Thursday-Shrimp alfredo, salad
Friday- Spaghetti and meatballs

Today I am roasting a chicken and I got some greens from a neighbor I have stemmed and are on their third soak. I am going to make some mashed potatoes and maybe gravy too.

This week I also made:
Mexican pizzas
super quick low-fat potato soup
we had a Groupon eat out night. Just had to pay $1.06 for tax
lentil mushroom soup in the crock pot
cream of chicken soup and chicken pieces mixed together with rice
chicken and biscut pot pie
 
Got back from WDW in the very early morning Thursday. Even though I had some meals already made in the freezer, it was grueling trying to come up with a plan, it's so hard to get back to reality....

Thursday - kids had ravioli, husband and I had hot dogs and twice baked potatoes

Friday - we had a sleepover bday party for my daughter, ordered 3 pies pizza and had a small ice cream cake

today - we are having a lasagna that I assembled and froze the last time we had lasagna with ceasar salad

plan for rest of week in no particular order:

-sloppy joes(already made and frozen), spanish rice
-tortellini with roasted red pepper sauce (sauce already made in freezer), salad
-pork roast, roasted red potatoes, frozen broccoli
-chicken scallopine with pasta
-stuffed cabbage (already made in freezer), mashed potatoes
-sweet and sour chicken with jasmine rice
 
We went to the Navy football game today, and dinner tonight was creamy tomato soup and grilled cheese.

I am working on my plan for the week....

I know that I want make Venison Burgers, Chicken and Dumplings, and ?????

I will go shopping tomorrow so I must finish my plan.....
 
This thread is great! We are just tired of going out to eat and have gotten where we prefer to eat at home so I am borrowing some of your menu ideas to add variety to our meal plan. Thanks!:thumbsup2

My family does a lot of "sort of tacos" as I call them. We buy the uncooked corn tortillas from the refrigerated section of the grocery. Sometimes we buy cans of refried beans, the non-fat store brand; at our grocery that is the only ones that don't have yucky preservatives in them. Sometimes we make homemade refried beans and have tons of better tasting ones around on the cheap. We always keep cheeses in the house. So those have become the 'go to' ingredients for 4 out of 5 people in the house if we are all fending for ourselves or if we need something super fast. The reason I call them "sort of" is because anymore it seems like pretty often whoever is making one will keep the tortilla flat and eat it like a tiny pizza.

Whenever I've used those tortillas I only like them fried, but the other four here just stick em in the toaster oven, microwave or a hot dry skillet and like them just the same. I'm just the loner in the house, because I'm picky about the tortillas and I don't eat the beans, food allergy. :laughing:

Along those lines, we were both (DH and I) thinking about Pork Carnitas... but that means I need to buy a pork butt.. we make Tacos out of them too... Thanks for the advice..:woohoo:
 
So my bank account has a spending tracker attached to it. We just upgraded to this account so I'm still learning some of the tools that it has available. One of the tracking tools tracks restaurant purchases. Now we've cut back A LOT on eating out and I thought we were doing pretty good. Imagine my surprise when I saw we average $300 per month on eating out :scared1: I about had a heart attack. I showed DH and he couldn't believe it either but it was right there, staring us in the face. Talk about an eye opener! So we're buckling down and have set limits in place to use that money elsewhere....Disney perhaps ::yes::

I planned my menu this time to take us right up to Thanksgiving. I'm hoping to only have to make a couple of quick trips to the grocery store in the next few weeks to refresh bread, milk and fresh veggies/fruit, as well as whatever we need to take to Thanksgiving dinner. I'm using up what meat I have in the freezer (chicken) as well as using up what stock I have in the pantry. I'm hopeful that shopping for an extra week won't put too much of a strain on my grocery budget because of this.

Monday: Chili Dogs & tator tots

Tuesday: My mom's birthday. My grandma is making dinner. I'm taking cake.

Wednesday: Spaghetti and garlic toast

Thursday: Honey Chicken stir-fry, jasmine rice

Friday: Chicken patty sandwiches, chips

Saturday: Breakfast for dinner - Breakfast pizza, sausage links

Sunday: Chicken & Dressing (I may change this if I can find some beef or pork on sale at the store tomorrow. Or I may move something from week 2...Lots of chicken in the menu.)

Monday: Salisbury steaks and mashed potatoes

Tuesday: Super Nachos

Wednesday: Chicken fajitas

Thursday: Easy Chicken Enchiladas

Friday or Saturday: Dinner out and Chicken lettuce wraps with steamed rice the opposite day

Sunday: Oven roasted chicken, rice a roni

Monday: Breakfast for dinner: Scrambled Eggs, sausage patties, toast

Tuesday: Chicken & gravy over biscuits

Wednesday: Bacon corn chowder with rolls
 
Hi Everyone! Can I play?

Tonight: Chicken Pastry from the freezer (made it last week)

Monday: Hubby is out of town, so I'm thinking breakfast for dinner, scrambled eggs, bacon and pancakes.

Tuesday: I have class, so I am throwing meatballs in the crockpot with sauce, everyone can have on pasta or a sub roll with cheese

Wednesday: broiled porkchops, rice, green beans and biscuits

Thursday: Class again, taco night at my house, I am cooking the meat in the crockpot all day with the seasoning mix. DS and DH can make their tacos and I will do a taco salad when I get home.

Friday: Steaks, fries and salad

Saturday: every man for himself from all of the leftovers.
 
Dinner tonight: Homemade Krautburgers with tator tots

Monday: :sad2: eating out at Chick-fil-a...fundraiser for ds school
Tuesday: Chili in the crockpot
Wednesday: Pork Chops, Peas & Carrots, and mashed potatoes
Thursday: Spaghetti & Garlic Bread
Friday: ??? Movie Night...thinking Ratatouille Soup, French Bread and Eclairs
Saturday: Kids get pizza (dh and I have a fundraiser dinner/dance/raffle)

DH is taking me to Frankenmuth, MI for the first time this coming Friday so we were online to decide where to stay Friday night and make a reservation. The restaurant at this place, and much more so the recipes and blog of this lovely old lady really interested me. So I am going to make some of her food this week. ;)

DH made a big pot of chili today... crazy level of spicy heat.
so that will be around for him and DD13 who loves the heat.
I will make enough on Monday and Tuesday to do lunches with leftovers and possible a dinner on Wednesday or Thursday.

on Mon- her Pork Medallions, plus my own recipe for polenta
on Tue- her Chicken Parmesan, adjusted to be gluten free plus some gluten free pasta
 
It's been a while, but I'm jumping back in.

Sunday/Tuesday: Gumbo, cheddar biscuits, stewed apples
Monday/Wednesday: French dip sandwiches, cheesy mashed potatoes, broccoli slaw
Thursday: pigs in a blanket, mac-n-cheese, veggies and dip
Friday: homemade pizza, veggies and dip
