Twice Baked Potatoes
Garden Peas

Roasted Corn

We took my grandma out to do her grocery shopping, so we ate at her house. I made us orange balasmic glazed chicken with loaded scalloped potatoes, and steamed broccoli.

Tomorrow night we will be back at my grandma's for my Uncle's birthday dinner. We helped my grandma make a beef stew which we will have with caprese salad and rolls. Plus peanut butter brownies for dessert.

I must eat what we have in the freezer! So this week will be in some order...

Roast pork loin, mashed potatoes..or maybe roasted potatoes

Breaded pork chops that I will cut off before I roast the above

Chipotle crusted salmon or salmon pinwheels

chicken scampi

Tacos or taco salad

Still haven't done the black beans, sweet potatoes and pineapple rice. Instead, I cooked a half-box of shell pasta, and stirred in a small can of drained salmon, a few handfuls of frozen peas, some dried onion, and a can of evaporated skim milk. Brought everything to a boil, shut off the heat and let it sit around for awhile so the milk would thicken and not be so wet. Very, very good. I love macaroni and evaporated milk as a side dish, but this was the first time I added anything else.

This morning I spent a bunch of time on food and kitchen cleaning. I made some more gluten free mac n cheese, our banana bread (which turned out fabulously), and I also got together some apples and pears, and some humus and gluten free crackers. Then my girls and I headed out to a 90th birthday party for a lady from church which was a blast and ran way over time with such a lot of chatter. We didn't get home until after 4. So I never really made much dinner. We all just picked at leftovers.

Tomorrow I'm starting my second reboot. I know most people probably haven't heard about "jointhereboot" but it is a website I've been on before. What I'll be doing is a "juice fast". All I'll be eating/drinking is freshly made fruit and vegetable juice, plus my supplements. Doing it this time while also having to cook for my family will be a challenge, but we will see how it goes!

Fall has finally hit our area and temps are no longer in the nineties. Yay! Brrrrrrr for those who are experiencing freezing temps and snowfall. Here's the week's menu here:

Sun - open faced chili cheeseburgers on toast and chili cheesefries (if I have enough chili left otherwise just plain oven baked fries)
Mon - chicken and dumplings
Tues - chicken fajitas, guacamole salad, mexican corn
Weds - spicy grilled cheese and tomato soup
Thurs - chicken tortilla soup, sliced avocado, tortilla chips
Fri - meatball sandwiches, mixed fruit cup
Sat - leftovers

Have a great week everyone!

good morning all:surfweb: i hope everyone who was in the storm is doing well. we were lucky we were supposed to get 10 inches of snow but ended up with a inch and its already melting we never lost power but the towns around us all have no power.

We were not so good last week. :headache:

Trying to be better this week! :thumbsup2

Today: Chili and cornbread
Monday: Lasagna and salad @ Grandma and Papa's before Trick-or-treating!
Tuesday: Pork Chops, garlic red skins, brocoli
Wednesday: Chicken (don't know exactly what yet).
Thursday: Spaghetti (never made it last week- went out instead) and breadsticks
Friday: Leftovers
Saturday: Pot Roast???

Here is the plan for this week! We did go out last night because we were at a band competition, but dh and I split a meal so it was fairly inexpensive. The Starbucks we consumed to unfreeze ourselves after sitting for hours on the bleachers was not wallet friendly! :rotfl:

Sunday- Homemade veggie pizza
Monday- Mexican soup in crockpot
Tuesday- Leftover Mexican soup, cornbread muffins
Wednesday- Grilled chicken, mushrooms, peppers, rice, salad
Thursday-Taco salads
Friday- Tomato soup, tuna sandwiches

I tried to go back and read everything before I started but there's just too much here!

For this week:
Monday- Lasagna
Tuesday- DH is on his own, I have a work meeting
Wednesday- DH @ work so I will probably have leftovers or cereal
Thursday- Omelets
Friday- tacos

Based off of my schedule, I will only need to be cooking at home for 3 days this week (and most weeks following). We won't be eating out, but I'll be elsewhere during the dinner hour so I won't be doing the cooking (and mom is more then fine with sandwiches and cereal most nights).

This weeks meals are:

- Beef Stew with Homemade Bread
- Grilled Steak Greek Salad, Naan, and Hummus
- Honey Grilled Shrimp, Roasted Sweet Potatoes, Salad (I WILL get this made this week!)

Trying to get my shopping list done, but I am SO tired. I stayed out way too late last night at a Halloween Party. I should know better as I have NEVER been one who stays up very late. Ugh! I feel dumb!

my last month has been insane and havent made it to the Disboards much or um well at all....:rolleyes1

BUT I have been still planning menus and keeping on track (for the most part)

Sunday- We had Steak Salads for the Steeler Game today!

Monday-Chicken Parm & Pasta

Tuesday- Beef Stew & Biscuits

Wednesday-Soft Tacos & Mexican Rice

Thursday-Baked Chicken, potatoes & candied carrots

and thats as far as i've got ;)

have a great week :woohoo:

Can i just say that this thread is saving me a ton of money? If I just write down once a week what we *should* eat... result >> we end up spending a *lot* less on take out!

Monday-Quiche- Ham & Cheese

Tuesday- Shepards Pie

Wednesday-Soft Tacos & Mexican Rice

Thursday-Black Bean Taquitos

Friday - Chicken Puttanesca

Saturday - Leftovers

Okay things have been switched around a lot as my family keeps eating bits and pieces of this dinner or that. Tonight was hamburgers/tuna salad and crackers for me and the girls, with mashed potato's and meat free gravy. Tomorrow I am doing a cheesy tuna bake use using boxed mac and cheese, tuna, frozen peas and crushed crackers for topping. I also have some garlic bread to go with it. I wanted something easy before trick or treating.
I need to do my shopping on tues. but I thought I'd go ahead and make my plan for meals here so I'd know what to put on my shopping list. In no particular order:
Loaded chili cheese fries and apple sauce
Homemade pizza and salad
Omelets, toast and fruit
Tacos
Veggie Lasagna
Hubby wants me to try making spaghetti Carbonera. It doesn't look too hard but I've never made it. Anybody have any tips?

Today was my Father-in-law's birthday so we had:
baked roast chicken,stuffed
mashed potatoes
fresh brocolli w/ chees
fresh baked bread
Birthday cake for dessert-Cheated and bought it from the bakery!

Vacation followed by company and I'm just not disciplined enough! I did cook a lot in advance for our guests but we ended up going out a lot more than I had planned. A lot of my menu will be the stuff that didn't get eaten then.
