Sat-Cheeseburger Soup, Beer Bread
Sun-Pizza from Domino's
Halloween-Homeade Sloppy Joes, Veggies & Dip, Chips, Chocolate Cake, and Orange Punch then its Trick or Treat! All of my cooking for this was completed yesterday :)
Tues-Pork Chops and Gravy over rice
Wed-its my bday all I know is that I am not cooking :)
Thurs-chicken, rice, veggie
Fri-not sure
Sat-not sure
Sun-not sure

(I'm not very prepared this week)
 
So, the dentist visit didn't go all that well and I have an appointment with an oral surgeon tomorrow. I'm going to go out on a limb and guess that I won't feel like making my planned Tuesday dinner so the Paul Prudhomme meat pie is going to be scrapped in favor of turkey/gravy from the freezer on top of baked potatoes. One day back on the wagon and I can't make it, plus, no Halloween party for me tonight-whoopee.
 
This thread is so long, so sorry but I only read this last page. Has it been mentioned before to cook ahead rather than every nite? To me it appears that most folks on this board have busy lives, want to withdraw from eating out so much, but the menus listed appear to be for daily cooking.

Anyway, don't know if this will help anyone or not, but I cook many meals in one day & then freeze individual portions. This is so helpful when the family is not all eating at the same time or even on the same day or even when they don't like or want to eat the same items. Also great for a family dinner when cooking is not desired. I'm sure foodnetwork.com has lots of easy recipes for freezing.

Here are our 2 favorites that I always have in the freezer -

Chicken Sausage Stew - cook sliced Polish sausage & set sausage aside; in the skillet drippings, heat pre-cooked & picked chicken (can buy rotisserie chicken, if want; or boil a fresh chicken); set chicken aside; cook diced onions till transluscent; add sliced mushrooms, diced celery, broccoli, cauliflower, minced garlic; season with Italian seasoning, garlic salt, Creole or Cajun seasoning; add 2 cans of spiced tomatoes; cook till veggies are cooked, but still crunchy (I can't stand mushy veggies!); add sausage & chicken back in; add some frozen corn; stir gently so chicken doesn't shred; remove from heat. If skillet not large enough, place all in pot & add chicken broth (amount = as soupy as desired). If a more tomato-type broth is desired, add tomato paste, tomato sauce, V8 juice, or more cans of spiced tomatoes. Fill large cottage cheese containers about 3/4 full & freeze=individual portion. When ready to eat, place in microwave until thawed enough to place in a bowl & then finish microwaviing; or heat in a pan. For a family, combine several containers together, serve with a salad, & some cheesy garlic bread. So yummy & makes a lot of portions to freeze, & it's ready to eat in minutes!

Chili - make your favorite & freeze in large cottage cheese containers & when ready, serve as many as want & ready in minutes.

I just wanted to say hi before reading the whole thing, but I have half way been doing this for awhile and am glad to see others out here that can help plan and encourage....

Hi :wave2: Brandi! -- I like this thread a lot - new ideas and helping to keep on track for not eating out so much..


Had to make a change for us - Last night we had the beans, hot dogs and beer bread and tonight we'll have the chicken parm, fried zuchinni and left over beer bread..

on a side note I made the beer bread with Polar Birch Beer and added some Tastefully Simple Onion Onion and cheedar cheese and it was FAB!!!!

Tonight we are having leftover beef stew with noodles and salad.

Last night we had: Fried pork chops and caprese pasta salad

Tonight: hot dogs, frozen fries, salad (Cub scout night, and no time to mess around)

Wed: Taco night!

Thursday: chicken Tikka Marsala (pataki's) w/basmati rice and veggies
Fri: Camping! Doing a potluck with 3 or 4 other families, we're bringing chili, someone else has gumbo, another salad, last one rolls. Doing dutch oven cobblers for dessert. DD is having either chicken tenders or chicken soup and turkey sandwiches (she's not going Cub camping with us)

Sat: camping! Not sure what's on the menu for dinner. DD is having whatever she didn't have on Friday.

Sun: home from camping! something easy, probably either take out pizza or hot dogs again.

Then I have to go shopping again.
 
Well, since we lost power Saturday night (and still don't have it back- most likely will be out until at least the end of the week) my menu for the week has changed a bit.

Sunday - Hot dogs on the grill and tomato soup (our grill has a side burner)
Monday - Left over ribs (reheated on the grill), left over potatoes (pan fried on the side burner) and tossed salad
Tonight - pork chops on the grill, rice done on the side burner and tossed salad
Wednesday - Steak tips on the grill, alfredo pasta done on the side, tossed salad
Thursday - Hamburgers on the grill, pickled beets, pasta salad
Friday - Chicken on the grill, rice, tossed salad
Saturday - Pot roast with potatoes, carrots and mushrooms in the crock pot (hopefully the power will be on by then!)

So I caved and had Chinese take out. But I did set chicken in the fridge to thaw. For tomorrow. Small steps.

Big big BIG change in plans! I'm leaving on an impulse trip to Orlando tomorrow! I was able to book a super cheap off-site condo (Cypress Palms) for $220/week (ticket is covered with my AP) so I'm heading down for a little Disney fix and to spend time with friends this weekend at F & W :cool1:

I know I'll do a lot of sampling of the goodies at F & W but will have to "eat at home" at the condo for most meals to keep the budget intact. Today I'm scrounging in the freezer and pantry for things to bring. My husband and DD think I'm nuts!
 
Tonight is going to be Beef Stew and homemade bread. I have been craving beef stew for awhile now so I am super excited. I am using Pioneer Woman's recipes Beef Stew with Beer and Paprika so I really hope it turns out well.

Well i've been super excited to have chicken parm made by my DH - not only was i expecting Yummy goodness cause he is a chef but I wasn't going to have to cook.. well he looks in the fridge last night and yells to me "where's the chicken" I say "in the fridge" he said "I don't see it" Im like "it's right there on the bottom shelf in the container" he then pulls it out and chuckels then comes in with it.. written very neatly in my handwritting it says " Small Pork" Haaaaa I didn't have chicken in my freezer all along just a couple of pork cutlets.. so we had pan fried breaded pork cutlets, parmesean and garlic rice a roni and frozen veggies.. I'll get my chicken parm sometime I'm sure -- like when I buy some chicken.. LOL :)

tonight - glazed Ham, loaded scollaped potatoes, frozen corn

Yes it was still Yum and I still didn't have to cook so all worked out ..:love:

my Hubs now has a Dr appt at 3:15 so I think we'll end up with FF/ Sweet potato tots vs. the scalloped potatoes - I'll cook them tomorrow night with the barber foods chicken and brie.
