Tonight was Spaghetti alla Carbonara, it was quick and easy, so it fit right in.

I have a whole chicken cooked for Chicken and Dumplings, I have a pork butt rendering down for Carnitas, and vension burgers ready in the freezer to be taken out later in the week.

Just wondering if you'd mind sharing your recipe for spaghetti alla carbonara. I have one that I've made, but it's not quick or easy...so I don't make it often, but everyone loves it. So, if I could find an easier one, that would be great!!
 
Wow, another week has flown by and a new one begins. With Thanksgiving just around the corner, I am almost smelling turkey and dressing and pumpkin pie cooking. Mmmmm, I love fall foods and holiday baking. And holiday eating ;)
So for now this is what I have planned for our house this week:

Sun (today) we had charcoal grilled hamburger steaks, mixed vegetables, and fruit salad
Mon- roast pork loin, armenian rice pilaf, sweet peas
Tues - albondigas soup with mexican rice
Weds - chicken tortilla soup, sliced avocado
Thur - barbecued pork sandwich, cole slaw, fried apples
Fri - leftovers
Sat - charcoal grilled New York strip steaks, grilled potatoes, salad

I wish I had time to cook at home!! :)

My family knows that leftovers will be served Monday and Tuesday, so I cook two different full meals on the weekend. We eat those Saturday and Sunday then Monday and Tuesday they serve as leftovers. On Wednesday, I try to do something in the crockpot that could do Wednesday/Thursday. It saves money and just takes a little planning. I make really good use of my crockpots!
 
This week's menu:

Monday Baked chicken, mashed potatoes, veggies

Tuesday Dinner out for DS, DH and I--since we have Cub scouts, no time to eat once DH gets home if we want to beat the traffic on the highway, so we eat out over by the meeting place. DD2/her boyfriend are on their own.

Wednesday Taco night!

Thursday Breakfast for dinner: bacon, eggs (to order), hash browned potatoes, pancakes, fruit

Friday Either burgers or meatloaf, so either fries or mashed potatoes, veggies or salad

Saturday Chicken and rice soup (I have the stock/chicken made and frozen, just need to add the veggies and rice), homemade rolls

Sunday Not sure yet, I need to go shopping this week.

so let me start off with this recipe is not a true Carbonara... I used bacon and bacon fat from that morning breakfast.

So I put my water on to boil, fried of the bacon with bacon fat, is small pieces and until it was very crisp.

I added several cloves of fresh garlic minced. in a small bowl I combined a cup of Parmigiano-Reggiano and two eggs beaten.

When the spaghetti was done I drained it and put it into the bacon garlic mixture. made sure it was coated with all the bacon fat, then I removed it from the heat, poured in the egg and cheese mixture and kept stirring so the eggs would not scramble. Then I added about a cup of pasta water to create the sauce.

after that I topped with garlic chives, since I did not have parsley on hand and fresh ground black pepper.

So it is just an easy recipe that my family will eat after I cook up extra bacon...

planning and prep is the key.

we both work in DC and leave the house early and return late in evening, we prep a lot of our meal over the weekend so all we have to do is throw together once we get home.
 
Just got great news over the weekend...my mom is having a deer processed this week of which we get half! (we are paying for the processing on our half) :cool1: AND...she still has 25lbs of ground venison left from last year's deer that she will give us for FREE!!! :banana::cool1: My poor family has been eating meals with shredded chicken, ground beef, various sausages, and canned tuna or salmon for months while I stash away the grocery savings for our next Disney trip. I told DH when we got news of the deer that we will actually get to eat meat that has to be cut with a knife! :lmao:

Grilled Ham and Cheese Sammies
Chips
Applesauce
 
I hope it is okay if I join in. I have been grateful to this thread because it has encouraged me to make a menu and stick to it for the last six weeks.

This weeks menu
Sunday Grilled Pork Chops, mashed potatoes and peas
Monday Chicken Gordita's, spanish rice, beans and chips and cheese
Tuesday Potato Stew with sausage, buttered carrots and rolls
Wednesday Marinated broilled steak,mashed potatoes, peas and crescent rolls
Thursday Chili and cornbread
Friday Round Steak and gravy, mac and cheese, green beans, and bread
Saturday Hamburgers and french fries

I just read through the first few pages of this thread and I love it! I am awful at sticking to my grocery budget plus we seem to eat at Wendy's and eat pizza way too much. I just joined Weight Watchers so I am hoping the menu planning will help reduce my waistline and grocery bill.

My weigh in is Tues so I planned until next Mon

Tues- Roasted chicken, oven fries, roasted aparagus(applesauce or broccoli for DD) leftover chicken will be mixed with frozen green bean casserole for next two lunches

Wed- stuffed shells, garlic bread, salad

Thurs- crunchy ranch chicken breast, pasta roni, broccoli

Fri- pasta w/ meat sauce

Sat- burgers and fries (boca burger and real oven fries for me, beef and frozen fries for DH and DD)

Sun- trying a new recipe from Hungry Girl that WW leader recommended
Sweet and Sassy Boneless Buffalo strips(name is something along those lines) with carrots/celery to dip in ranch dressing

Mon- salmon, brown rice, asparagus for me/ hot dogs for DH and DD
 
Tonight we are having crock pot potato and double corn chowder. It seemed easier as we spent the day cleaning out or garage and dinner will be ready for us.
 
Inspired by this thread, I made Lentils with Fettucine for dinner last night. It was delicious, if I do say so myself. My kids don't like lentils, but they ate a "thank you" serving along with the pasta and the veggies.

I had everything on hand: lentils, fettucine and onions from the pantry, carrots and celery from the fridge, and spices from the spice drawer. I prefer linguine with lentils, but the fettucine was on hand, so that was fine. I used ham stock from the freezer - it was made from a spiral ham I cooked two months ago.

The leftovers are my lunch for today. :banana:

I LOVE asparagus, and always order it as a vege when we go out. I just can't seem to make this at home and have it come out well; too chewy, to dried out. I know it's possible, but I just can't seem to get it so it's enjoyable, and it's so expensive, I don't buy it anymore because it's just not good. Any tips?
