Tonight we are having homemade pizza. A friend of ours gaves us some produce this summer and I quick froze it all, so I am going to load up the pizza with veggies.
 
I'm so glad that autumn is here with cooler temps because that means a change of menus. I can actually turn the oven on for some baking and start pulling out my soup recipes. I love fall!

Mon - hamburger beef stroganoff, corn, french bread sticks
Tues - chicken enchiladas verde, guacamole salad, tortilla chips
Weds - hamburger vegetable soup, french bread sticks
Thurs - grilled cheese and cream of tomato soup
Fri - dinner out/date night with the hubster! probably steak dinner.
Sat - chili cheeseburgers, ranch style beans, chips
 

Tonight we had chicken and dumplings. They were so good tonight for some reason, very comforting on a fall day.
 
Tonight was our night to just eat out even if we shouldn't have. Grabbed cheap and convenient drive-thru food and got out a roast to cook tomorrow, two actually. I'm going to slow cook a pork shoulder roast in advance for pulled pork for a future meal and a chuck roast for tomorrow night's dinner.
 
Having a hard time getting back into the groove of things after our trip. I really don't want to get back into cooking, especially since we have decided we need to change the way we eat. Long story short, my weight did not help during this trip and I would like to lose a few pounds before I go back in June with friends. Our main changes would be portion control, no fast food, no soda, eating breakfast, and making small easy changes to what we buy (wheat bread instead of white for example). I will be using the Eat This, Not That series to help make smarter decisions on products to buy and the type of things to eat.

This weeks meals look like:

Breakfast
-Oatmeal with Variable toppings
-Breakfast Sandwich
-Eggs (hardboiled, scrambled with vegetables)

Lunch
-Leftovers
-Sandwiches
-Salads

Dinner
-Breakfast Sandwiches, Hashbrowns
-Honey Grilled Shrimp, Angle Hair Pasta with butter and parm, Roasted Sweet Potatoes
-Spaghetti with Chicken Sausage, Garlic Bread

Snacks
-Apples (with and without peanut butter)
-Greek Yogurt
-Apple Sauce (unsweetened all natural)
-Edemame
-Skinny Cow Ice Cream
 
I didn't feel like chopping veggies and cooking rice this morning to prep for the Veggie Fried Rice tonight...so I am switching up the menu a bit.

Tonight:
Spaghetti with Meat Sauce
Steamed Broccoli
Garlic Toast

I will do the Veggie Fried Rice and Egg Rolls Friday night.
 
Tonight will probably be leftover night. I have lots of 3 cheese tortellini from last night, garlic bread, still have some corned beef, cabbage, and potatoes too. I made a nice fruit crisp last night using pears, apples, and blueberries. It made quite a bit so we'll have the rest for dessert tonight.
 
OMG the Mac and Cheese I made last night was YUMMY!!! super easy recipe...
2 cups cooked elbow, 1 can cheddar cheese soup, 1/2 soup can milk, 1/2 cup shredded cheedar cheese, few shakes of pepper and dry mustard - Mix in 8x8 pan (easier to wisk soup and milk first then add rest) top with 1/2 c bread crumbs mixed with 2 tbls melted butter sprinkled all over bake 400 for 20 - 30 mins till all bubbly!! (makes 4 servings)
I served this with plain shake and bake chicken nuggets for the kids and coconut shake and bake nuggets for me and the hubs..
 
I am going gluten free, it's been hard on our family dinners! And, I am grouchy that I can't have what I want!

Monday-Taco's
Tuesday-Broccoli cheddar soup, GF cornbread
Wednesday-Homemade pizza (going to try a GF crust, pray it's edible!)
Thursday-Buckwheat pancakes, eggs, bacon and fruit (no pancakes for me :sad2:)
Friday-grilled chicken, rice, baked beans, corn on the cob

That does sound great! I'm going to have to try it this week. Thanks for the recipe!
 
I am going gluten free, it's been hard on our family dinners! And, I am grouchy that I can't have what I want!

I've gone through this and am still going through it... seems it can take a long time to FULLY adjust. lol

We made our entire house gluten free to help me avoid cross-contamination. DH has found that he prefers to just go with lots of pototoes and brown rice rather than "substitutes for gluteny foods". I am finally learning that I can make a few things for substitutes that I like and that after doing without for so long on the full gluten versions, now the frozen substitutes seem a little better than they used to. I have a friend who has been gluten free a lot longer than me but was never much of a cook and has just learned to cope with and like all the things that she can get that are convenient and pre-made for her.

It's all in learning what works for you, but there is a lot to be said for just giving it some time and accepting that your taste will adjust or be retrained to some extent. You can do it! :cheer2:
 
I need to raid the pantry and freezer. I'm thinking about sauteeing a diced onion and sweet potato, adding a can of drained/rinsed black beans, a box of frozen mustard greens (thawed and squeezed dry), and a small can of crushed pineapple in juice. Maybe serving it over boil-in-bag brown rice. Come to think of it, I might have some leftover chicken I can toss in.

I can't figure out whether or not that sounds good. What do you think?
 
I thought it sounded good until you added the pineapple. Do you have some sauce you could add to that?

I think it is definitely worth a try. And I hope you will let us know how it turns out!
 
Already changed my meals around. We are having breakfast sandwiches and hashbrowns (with peppers and onions) tonight. I'm fighting a cold I think and I just do NOT have the energy to do anything tonight.
 
Tonight we are having pasta with vodka sauce, meatballs, and salad.

Last night I got a ton of energy and made two batches of cookies, sugar and chocolate chip. I forgot how easy they are to make from scratch. I bake up one tray of both and then froze the dough into tray sized portions to pull out and make when needed.
