What do you put into your apple meatloaf?

It is my mom's recipe so I will ask her tomorrow and get back to you. All I know for sure it that there is ground beef, stuffing mix and apples. I am not sure what other seasonings go in it.
 
I'll share my meatloaf recipe - not apple - but yum nonetheless.
1 lb ground beef, 1 egg, 1 torn piece of bread, 1 cup cooked rice, 2 peices torn cheese, couple shakes pepper, garlic salt and onion onion (or onion powder) and 1 big squeeze of katsup.. mix well .. turn into ungreased loaf pan (or muffin cups) top with slices of cheese and drizzle with katsup .. bake for 1 hour at 350 (less for muffins about 40 mins) and enjoy
 
dd's surgery went well yesterday. did well and avoided the high priced cafeteria food. i pack a turkey sandwich using the last of my turkey breast some fruit, baby carrots, and baked chips. i also brought my refillable disney mug from a past trip. the waiting area had free spring water, coffee and tea available for the families of those going into surgery. so glad i did this. my mom was with us. she didnt pack anything. she spent close to $20 bucks on food.

we didnt get home till later and i seriously was not in the mood to cook anything. after surgery i wanted dd to eat something but , nothing heavy. so i was able to use up the last of my skinny italian wedding soup that i made. so glad the leftovers are almost gone. tonight if dd is hungry i will do breakfast for dinner for both of us. if not i will do it for just myself.
 
last Thursday – shake & bake buffalo chicken, corn, biscuits
last Friday – left over lasagna, ravioli, frozen tuscan veggies, also made loaf pumpkin bread
Saturday – grilled cheese and tomato soup, homemade applesauce
Sunday – husband and daughter brought Indian food take out to cultural night at youth group, other daughter and I had box of macaroni and cheese
Monday – was so crazy buzy I got a pie of pizza and tossed salad
today – I think I'm going to make a breakfast sausage casserole and potatoes or something

someone gave my husband a HUGE bag of veggies yesterday, so I'm trying to come up with a week's worth of meals using those veggies and stuff we have already, because WE ARE GOING TO DISNEY IN 8 DAYS!!
 

Ok, here's my meal plan for the next week:

tacos with lettuce, tomatoes, cheddar, avocado, spanish rice
bruschetta chicken bake, salad
Roasted chicken, roasted beets, sweet potatoes, onions
hot dogs, coleslaw
stuffed cabbage, buttery cooked carrots
pasta with roasted red pepper cream sauce and grilled chicken
Digiorno pizza (going to buy 2-on sale 4.47 each-2.00 coupon each)

also going to make a beet bundt cake
 
Tonight is:

Bacon and Onion Quiche (made with french fried onions, yum)
Banana Muffins
Vanilla Yogurt

Bacon and Onion Quiche

4 eggs
1/4 cup of milk
5-6 slices of cooked and crumbled bacon
1 cup shredded cheddar cheese
3 oz french fried onions
1 ready to make pie crust

Mix eggs and milk together until well blended. Sprinkle bacon, cheddar and onions evenly into crust. Pour egg mixture into crust. Bake @ 350* approximately 30 minutes or until eggs are set.

Yesterday was big drama in the house so everyone fended for themselves
Tonight was meatball subs
Wednesday chicken noodle casserole
Thursday pork loin
Friday pizza and wings
 
Tonight we are having turkey stroganoff. I just substituted turkey for beef, added some beef broth and pesto. It tastes pretty good. I'm trying to use turkey as much as possible because it's healthier. Less fat. The broth had no fat. A side benefit is it's cheaper too. I can't taste the difference and the sauce hides it well. :laughing: I don't think the family would mind anyway as long as it tastes good.

Anyway, we're having it over wheat blend, wide noodles. We'll have some veggies with it maybe spinach on the side. And ginger bread cookies for dessert.
 
The quiche was delicious last night- a hit with the whole family! :thumbsup2

(BBQ chicken leftovers)

we had breakfast for dinner last night. today i hve split pea soup with ham in the crockpot for 2nite. when dd was in daycare (14 years ago:scared1:) they made a casserole with scalloped potatoes and ham. i will be making that for tomorrow night with steamed broccoli. the good news-no eating out this week. also i spent $15 in groceries this past week. i am trying to use up what i stockpiled in the freezer and cupboards

We love bfast for dinner!
AWESOME we try to do that once a month to cut down on the stuff we buy just out of habit!
 
Ohio Apple Meatloaf

2 cups frankilin or ginger gold apples, finely chopped ( we use whatever apples are on sale)
2 1/2 pounds Ground Beef, can use Turkey
1 1/2 cups stuffing mix
1 large onion, minced
5 Tablespoons Prepared mustard with horseradish (we just use regular mustard)
3 Eggs
3/4 Cups Ketchup
2 teaspoons salt
2 cups shredded cheddar cheese

Combine all ingredients and mix thoroughly. Place in a 8" loaf pan. Bake 350 degrees for 1 hour and 15 mins.

Tonight we are having pepper steak stir fry with rice.
 
Made a wonderful dessert from odds and ends, with enough left for breakfast:
leftover brown nice, a few spoonfuls of slivered almonds, a few spoonfuls of dried fruit, a sprinkling of pumpkin pie spice, and some sugar-free hazelnut coffee creamer. Gave it a quick zap in the microwave. Mmm, tasted like rice pudding with none of the work.
 
I have made a big old crockpot full of Veggie Beef Soup to have for dinner tonight on this cold and rainy Tennessee morning...
 
My hubs decided he wants chicken pot pie tonight - EEW so i think i'll make me some tomato soup (from a can) and crackers
