Well-I did have the month planned out but of course things have come up (including laziness to cook) and have altered.

Tonight (Sunday) I made Creamy Beef Lasagna.

The recipe can be found on my blog here

Monday: Out to dinner with DH's DG and DA
Tuesday: L/O Lasagna
Wednesday: Buffalo Chicken Pizza
Thursday: Chicken Pot Pie with buttered bread (Not too creative, I know but I'm trying to clean out our freezer/fridge/pantry before our upcoming vacation. :))

That's as far is I've looked ahead for this week.

I'm back to my fall schedule so I dont get home until 8 MWF. So I need to get back to the crock pot and fast easy stuff. Thanks to you folks for giving me some new ideas too!

I also need to take my lunch most days so I need to plan for that too. Lots of times it is leftovers from dinner.

Tonight was grilled steak, corn on the cob, stuffed baked potato and squash casserole

Mon-chuck roast in the crock pot with carrots, mashed potatoes, leftover squash cass.

The rest of the week in some order:

Shrimp & parmesan pasta
chicken fajitas
hamburgers
pork chops in the crock pot

I'll also make a big pot of beef veggie soup for lunches

I like this thread, lots of ideas.:goodvibesI am trying to budget food better and think ahead. My kids are eating more and more and eating out is really expensive.

Tonight was chicken nuggets, tater tots, and mac n cheese(my DS12 who is underweigt got to choose the menu:sad2:)

Mon:taco pie,corn,salad
Tues : picnic at school (taking pasta salad and cookies)
Wed:baked chicken,green beans,scalloped potatoes
Thurs:will have to eat at concession .we have a softball game followed by a football game...I will take a cooler of drinks and pretzels and fruit but we will buy the grilled chicken sandwiches
Fri:spagetti,salad,garlic bread

My menu is always fairly simple and routine. My DS12 is underweight and will have to stop playing sports soon if we don't get him to gain. Most of our meals are geared toward what he will eat.Always looking for new ideas though.

This is such a great thread!
I was considering looking for part time work to help pay for the kids' sports ($$) but when I crunched the budget, I realized that I can really squeeze what I need right out of our current income. Our BIGGEST ridiculous expense is eating out! If I can cut down on that, and on some other frivolous spending we do day in and day out, I think we'll be good!

I made a big master list of ALL the meals I could think of that my family likes, and have been picking from that list to plan menus and make a shopping list. I was always so guilty of just walking into the supermarket with no list, trying to pull meal ideas out of thin air and ending up spending a fortune! I'm doing much better now!

Menu for this work-week:
Monday: Beef/veggie stew in crock pot
Tuesday: Beans & cornbread, jello w/fruit dessert
Wednesday: Baked chicken with rice and veggies
Thursday: BBQ sandwiches and fruit salad
Friday: Taco salad
Saturday: Leftovers for lunch, tuna sandwiches with fruit for supper

Oh you lucky duck you! have a great time!!!!

I would love to know how you make crock pot Chicken Pot Pie. That sounds like something my kids would like, and sounds easy too. Most everything in the crock pot is easy, right?

Yes it is easy, I guess it isn't technically a chicken pot pie though. I always made the bisquick chicken pot pie in the oven, my crockpot chicken pot pie is a version of that. I put cut up raw boneless skinless chicken breast (2 breasts), a can of cream of chicken soup, 2 cans of water, a chicken bullion cube (or sub chicken broth for 1 of the cans of water) 2 cups of frozen mixed veggies, 1 tbsp parsley flakes. I cook it all day and when I get home I thicken it with cornstarch (mix the cornstarch up with a little cool water before you add it to the crockpot) It needs to cook about another 15 minutes to thicken up. Then I bake some biscuits to serve alongside it. So there is no crust it's almost more like chicken and dumplings.:thumbsup2

I guess dinner will depend on how much dh and I spend in the Team Shop, could be someplace good or who knows maybe we are doing the Value menu:goodvibes

Have a great week everyone!

Yes! I loved buttered beef, tried it for the 1st time last week after hearing about it on this thread. You need a little water and if you like mushrooms put some in (fresh sliced would be best), I also didn't need the whole stick of butter, half a stick for my 3lb piece of meat would have been fine and I'm sure you know you need one packet of lipton onion soup mix. I think it only needs 6 or 7 hours in the crockpot on low, mine went longer and dried out some. Good luck!:goodvibes

Awesome thanks...this is on deck for tomorrow!!! (a few days late...but better late than never right???)

Also, I was looking at your crock pot chicken pot pie recipe....how much corn starch to water???? Mine always seems too thin! :confused3

TIA
