I have MISSED this thread sooo much. Life just got busy;). I am back though~ I have still been really good with eating at home but I am running out of meal ideas... Summer is here and my meals have to change with the warmer weather. I will post my menu for the week later. Again so happy to be back :hug:
 
Ugh since my husband took down the celing over the stove for the plummer I can not cook in or on my stove. I only have a crock pot and a microwave plus a grill. Any tips? Ugh :scared1:It will not be fun with out my stove:sad2:

Monday- Ribs on the Grill w/ potato salad
Tuesday- Steak -n- Veggie skewers on the grill
Wednesday- Shrimp Fried Rice
Thursday- Chicken Wings (son's pick, his last day of elementary school :sad2:)
Friday- Homemade Pizza
Saturday-Burgers & Hot Dogs on the Grill w/ Fruit, Chips & Macaroni Salad
Sunday- Leftovers :goodvibes

Monday - cheese ravioli with roasted squash and salad
Tuesday - beef with snowpeas over jasmine rice
Wednesday - grilled smoked sausage, homemade mac and cheese, broccoli
Thursday - pancakes, eggs, bacon
Friday - grilled salmon, brown rice, grilled asparagus, salad
 

So today I am taking my oldest to register for JR HIGH!!! It makes me sad. I have three children, and this year my oldest starts jr high and my youngest goes to kindergarten... :sad1: Time does fly when you have children.

May I please ask what these potato/carrot/onion packets are? Do you mean foil packets? Do you add anything to them? Sounds like a wonderful side dish!
 
I wanted to share a recipe of a dish we had tonight. I found this in a magazine about 10 years ago and it is one of our family favorites. DH especially enjoys this and he doesn't like to try anything new or different. DD was mad she had other plans, but she'll gladly take leftovers for lunch. It's relatively easy and inexpensive (remember that anytime you eat in it's almost always inexpensive;)and covers all food groups.

POTATO TOMATO SAUSAGE SAUTE
1 lb. beef sausage or Kielbasa
1 large onion, diced
1 lb. frozen green beens
5-6 russet potatoes cut in chunks
2 large tomatoes, diced
1 tbsp. oil.
salt & pepper

In a large frying pan, fry sausage and onion in oil. In a pot, boil potatoes and green beans until barely done. Drain well. add potatoes and beans to pan with sausage. Finish cooking until potatoes are browned. Reduce heat. Gently fold in tomatoes until heated through. S & P to taste. Serves 4.
 
Trying to cleann out freezer and found 3 boxes of steakums and french fries, but we had ot hoagie bun so we used hamburger buns. I also found a big package of chicken legs that I've got find somethig to do with.
 
I hope everyone is doing good. I was without a computer for a few days due to a virus. But I managed to stick to the menu. Here is what we had

6/1 Chicken Sandwiches with chips
6/2 Chicken Enchiladas
6/3 I went over to a friends and mom made hamburgers
6/4 Leftovers
6/5 Spaghetti with turkey meatballs
6/6 Over to my Aunts for dinner

Yep, just basic foil packets. I usually do a packet per person so they have their own personal one. Cut up some red potatoes into chunks, slice some carrots (and pre cook them until tender otherwise they take too long to cook), and cut up some onion. Pile them onto some foil and add some butter. Close up the packets and throw them on the grill for about 30 minutes. Real easy and real tasty.
 
Thanks for all the great ideas. Anyone else suffer from "there's nothing to eat here" aka "there's nothing I WANT to eat here"? I have raised 2 kids who think eating out is the norm and eating at home is a novelty. Things are bout to change around these parts :)

I think I am actually the worst in our family for that particular problem.. mostly because I want a change of scenery (I work from home) and don't want to cook all the time.:rolleyes1

My advice would be to smile nicely, present what you have made for the evening and ignore the complaining. Once they are hungry enough they will eat. It takes some getting used to, but I'm sure they will come around.:)

Friday.. Ham, Mashed Potatoes, Carrots, Salad

Saturday.. Breakfast for dinner. Pancakes, Omlettes, Fruit

Sunday... Wraps (Refried Beans, Ground Beef, Cheese, Fat free Sour Cream and all kind of veggies for fillings. Whole Wheat Wraps)
 
I let DD 11 make dinner last night and she did great!:cool1: I just gave her the recipe and walked away. We had chicken and rice bake and she did a great job. I told DH I was training them (both dd's) up so I could pass the torch and sit on my duff! :lmao:

:rotfl2: My mom did that with me when I was younger and I now do most of the cooking.

Tonight's menu is breakfast for dinner; french toast with sausage and fruit salad.
 
On Fridays after work, I try to come up with a menu for the week.... I try to pick things that I can reuse at the next meal. Saturday if we need something, I go to the store (we have several Aldi grocery stores.... They are great!! Super cheap prices and good quality stuff) and then Sundays I make what I can in advance. Meatballs will get made and then put into containers then into the freezer. I portion out enough for a meal, that way when I head to work, just pull them out and let them thaw. We love grilled chicken, by itself on a salad, sandwich whatever! So Sundays I will load up the grill (Aldi sells bags of boneless skinless chicken breast, a 4 lb bag is $5.29) and put in a big container, into the fridge and that takes care of lunches when we are home and dinners. I also do quiches (husband likes chicken, tomato and spinach and I like ham and spicy peppers) label them and freeze! That way they just need to be thawed and reheated. To help keep the quiche a little healthier I do them without crust, or will use low fat crescent rolls if we feel we really want the bready part.

Monday: grilled chicken, salad and baked sweet potatoes
Tuesday: meatballs with whole wheat pasta, salad (gotta have those veggies, lol!)
Wednesday: grilled chicken salad sandwiches (great when its so hot out)
Thursday: quiche and veggie
Friday: burritos (ground turkey, black beans, spices, little shredded cheese, salsa and sour cream on wheat tortilla shells, yum!!)
Saturday: home made pizza or something on the grill

My mom did that with my siblings and I all the time! We were homeschooled later in our school years, and she believed that to learn you have to do - and had what she called "life skills days" where we had to cook and clean. I must say my house is always very clean.... And I learned it hands on! Hahah

I don't know how y'all DO this monthly! I can't even keep up day to day! I fell off again while we moved DD and worked on renovating my FIL's house to get it ready to rent. My brother and a friend are down from Maryland to help paint for the next week or so and I'll have to cook. It's too expensive to feed three large men eating out.

Hi all :flower3: Haven't been doing the greatest with eating at home because of lack of planning. Planning is essential in eating home....

Friday- was a super busy day running around and I had to go to work-got chinese take out

Saturday- we had homemade chicken parm, but went to Dairy Queen for dessert

Sunday- we had chicken fajitas

Monday- was a super busy day and then I had to work, we just had soup and grilled cheese

Tuesday (last night) - ate out at Chili's Was hoping for the kids eat free coupon, which I've never been able to take advantage of, but there was none for last night. $70 including tip :sad2: what a waste of money for 1 meal. Husband really wanted to go...I would have eaten locally-had a $10 off $40 purchase at a local diner. I did enjoy the food though.

Oh well, moving forward, these are the meals I just planned/shopped for in no particular order:

-homemade pizza, homemade mozzarella sticks
-pork roast, homemade applesauce, green bean casserole
-beef with snow peas stirfry
-chicken tikka masala with rice- new recipe I'm trying-never attempted -Indian before :scared1:
-home made sloppy joes
-beef tacos
-spaghetti

I placed an order on shoprite.com to go pick up. I'll need to go to the farmers market or something for some veggies to go along with these meals.
 
We always eat as home as we live in a small town with no fast food other than a subway and a new pizza place that just opened, but my kids love make your own pizza night at home so we havent even tried it yet.

Sat - Steak, baked potato, corn
Sun - paprika chicken in crock pot, whipped potatoes, green salad
Mon - leftover chicken as kids activity night
Tues - ribs, baby potatoes, veggies
Wed - corn dogs, ceasar salad as kids activity night
Thurs - fish filets, rice and veggies
Fri - taco salads as kids activity night

Nothing too exciting here
