Tonight is a busy night for DH and I, we have to be somewhere by 6pm. We got take-out last week, but I am determined to eat at home tonight so...

Dinner Tonight:

Raspberry Chicken Salad- spinach, already grilled chicken strips, dried cranberries, sliced almonds, feta cheese and raspberry viniagrette, YUM!
Biscuits with butter and honey

We are having Raspberry Chicken Salad tonight too. We are doing spring mix salad with shredded chicken, raspberries, mozzarella cheese, and raspberry vinegarette and crusty rolls with butter.

Wow! Great minds thinking alike! Tonight we are having what I call "Trader Joe's Salad" - baby spinach, blue cheese crumbles, dried cranberries, chicken from a $5 rotisserie chicken and raspberry vinaigrette! Forgot to buy the candied pecans so I'll substitute sliced almonds. The leftover chicken will be used in chicken fried rice tomorrow.
 
So, I just went through my freezer and made a list as to what is in there. I'm going to make a word document version to keep updated and organized, but this is a start. I am now going to revisit my monthly menu and change things around. My goal is to eat as much out of the freezer and pantry as is possible instead of buying so much each week. Hopefully I can get to the point where all I have to buy are "fresh" items (dairy, fresh vegetables/fruit, bread, ect.).

The hardest part is to find things to do with some of this stuff. What I don't know what to do with:
-Chicken sausage (one pack jalapeno cheddar and one pack italian style)... no idea why I bought that.
-Half a pack of Brats.
-Little Smokies

I think I can figure out the rest of the stuff.

Hmmmm- not sure about the chicken sausage. Could you do Brats and Kraut? You could possibly use the lil smokies in a Low Country Boil instead of smoked sausage. Crab boil, lil smokies, onions, red potatoes, corn on the cob and shrimp in a pot together. Those are the ideas that came to mind...

That is a GREAT idea for the lil smokies! While I have a lot of shrimp recipes already planned, I could easily change one or just add it (we eat a lot of shrimp anyways lol).

Or, I am making a Cajun Shrimp and Rice (in July). I was going to add some sausage to it to bulk it up more, but maybe the lil smokies will work okay there.

I also like the Brats idea... maybe add some fried potatoes... hmmm...

The Italian Style Chicken Sausage I can most likely find something to use them in... the Jalapeno Cheddar is a bit harder!

I just need to USE some of this stuff rather then keep adding to it!

Hard, long week and dh sick so no help with dinner. I did good though! I brought home a roasted chicken from the store, and cooked some rice and threw together a salad in under 15 minutes. $4.99 dinner for four, with leftovers for lunch tomorrow!

Saturday-Peel and eat shrimp, baked potatoes, corn on the cob
Sunday- Having a pool party, will be ordering pizza's!
Monday-Grilled chicken, grilled squash and zuchini, potatoes
Tuesday-Make your own hoagies, veggie tray
Wednesday- Chicken quesadilla's, salad, fresh fruit
Thursday-Barbecued chicken, baked sweet potatoes, green beans
Friday- Taco salads, fresh fruit
 
We ended up having breakfast for dinner last night: blueberry pancakes, sausage and home-fries. The spaghetti will have to wait for next week.

We're headed over to New Orleans for the Creole Tomato/Zydeco festivals this weekend. We'll be sleeping over at my daughter's apartment and will probably go out for dinner. Oh Well!
 
Last week we did really well. We did end up ordering pizza on Wednesday because our house is for sale and somebody wanted to look at it right during the dinner hour.

Here is our plan for the coming week.

last night - grilled salmon, brown rice, grilled asparagus, salad
tonight - hamburgers, french fries, broccoli
Sunday - polenta with sausage ragout
Monday - grilled smoked sausage, homemade mac and cheese, broccoli
Tuesday - spaghetti with garlic bread
Wednesday - I have book club and eat there, so the dh and the boys will probably order a pizza or have chicken nuggets.
Thursday - not sure about this one.... maybe tuna salad sandwiches. :confused3
Friday - going out of town for the night. :yay:
 
We're back from our mini-vacay, now back to our regular menu planning.

Saturday - hot dogs on the grill, french fries, baked beans

Sunday - Special breakfast - sausage gravy and homemade biscuits
Dinner - BBQ chicken wraps, pasta salad

Monday - Homemade pizza, salad

Tuesday- Meatloaf muffins, baked potatoes, green beans

Wednesday - Chicken and bacon shish kabobs, rice, salad

Thursday - Sloppy joes, tator tots (unless DSS's come on Friday and then this will move to Friday)

Friday - Dinner out
 
I just got home after a fun day out, and I really don't feel like cooking. Thanks to this thread, we're staying home and having sausage on a bun and sweet potato fries instead of eating out. Our budget thanks you!

Tomorrow, we'll have chicken and grilled veggies on the BBQ.

Not sure about the rest of the week. I tend to figure things out a couple of days ahead.
 
Ended up going out to lunch this afternoon and won't really be making anything for dinner. Just got home from my boyfriend's house. His grandmother passed today so the whole family is dealing with that. It wasn't a surprise or anything, but still hit his mom and others in the family hard. I wanted to make sure he got something to eat... one less thing for people to think about.

I need a nap.

I am hosting a jewelry party for a friend this afternoon with some snacks so dinner tonight will probably be sandwiches.
 
Spent the weekend in Nola with a girlfriend. We had a foodie good time. Ate at Commander's , drinks at the Roosevelt, HerbSaint and Sucre ( http://www.shopsucre.com/) for those that want to drool a bit ; ) and Muriel's . Hopefully I walked the majority of the calories off . It was HOT !

Lunch/dinner today at friends house. BBQ shrimp, ribeyes , asparagus , french bread, refreshing Pimm's cup for adult beverages , bought a few bottles of Pimm's # 1 home from Nola.

Rest of the week, all the grocery stores around me have chicken on big time sale, so It is time to LOAD up as there isn't even one little chicken leg in freezer. Will do a cpl of chicken dishes this week and grilled burgers are all I have in my head for the week. Think I will thrown chicken on grill too and do a chicken spaghetti . I must go dig and see what else we have in freezer.

Tomatoes, cucumbers, eggplant all starting to ripen in garden, so fresh veggies coming up this week . My squash was eaten by worms UGHHH , so Ill hit farmers market up Tuesday as it will be CHEAP . Going to treat for worms and replant squash in another area.

Not a clue for the rest of week, but need to figure something out. With all the eating out in NOLA, I need to whip up some yummy homemade goodies to make it up to boys for leaving them LOL.

The OP started it because she wanted to stop eating out so much . Meal planning happens , a few folks have blogs , a few folks post pics of their yummy meals and we swap recipes . Apparently a monster was born , I had no idea this thread would hang on so long LOL!!

I think at some point I think we will have to start a need thread. Dis limits threads to so many pages , but think we are ok for now.
