I'm not sure when I last posted my menu~maybe a week ago? Not sure if this was on it, but I made this tonight: http://www.thedisneychick.com/2009/06/honey-coriander-chicken-wings-ohana.html

It was really really good. I keep "interrupting" my menu and throwing unplanned things on it, but at least it's still stuff I'm making at home for the most part.

We did get pizza/cheese steaks on Monday night which I didn't plan on, but I worked Friday Saturday and Sunday night.

Yay! I am SO glad to find this thread. I am trying very hard to cut down on our eating out.

I usually plan my menus from Monday to Sunday... since this is Wednesday, I'll just go from here:

Wednesday- Pizza Night
Thursday- Chicken Pot Pie
Friday- Meatloaf, Alfredo Pasta, Broccoli
Saturday- Packing a Picnic for the Beach
Sunday- Venison Nachos

I don't blame ya! Springfield got hot pretty bad and I hear there were fatalities. Hope you are safe!

Today was grocery day so I have new meal plans. Tonight was Meatball subs/Fresh mozzarella and marinara subs and chips. The boys enjoyed thier meatballs but I realized I need something besides just the marinara and mozzarella. We were thinking maybe fresh basil leaves. Saturday DH and I are going to a concert and out to dinner but the rest of my plans in no particular order are: Tuna sandwiches and salad, Tomato soup and grilled swiss sandwiches, Quiche: one tomato, onion and one cheddar, spinach and asparagus with applesauce, Turkey burgers/Tuna cake burgers and veggies, Veggie Lasagna and rolls, Polish sausage/hummus and tomato sandwiches with velveeta shells and cheese and corn.

Monday: Ate out!! We worked in the yard ALL day.

Tuesday: Tuna salad in hotdog buns (think cheap lobser rolls), cucumbers, and applesauce

Wednesday: My mom's bday dinner Creamy Italian Chicken pasta, cheesy garlic bread, salad, and Pig Pickin' cake

Thursday:Chicken stoganoff with biscuits, green beans

Friday: Red beans and rice

Saturday: Hot dogs, crock pot baked beans, carrots and celery, brownies

Sunday: Chicken, quinoa pilaf , veggies

After being in such an emotional slump yesterday, I decided to do something for ME last night. My children are with Grandparents this week and DH had a meeting last night, so I spent the evening alone. I picked up an Iced Caramel Mocha, went shopping at my favorite book and gift store (think slow, relaxed browsing), and took my cicada encrusted car through the car wash. I did all of this with no husband and no children...it was so therapeutic and wonderful.:cloud9:

Dinner tonight:

Breaded Chicken Tenders
Stewed Potatoes
Steamed Broccoli

We ate out twice today. Once was via free breakfast from IHop and the second was via a gift certificate for BW3's. Tonight we are going to have build your own taco night. I also bought two Old Navy Groupons today. Check out my food blog.

We did well this passed week! Dh and dd did have to grab Chick Fila for one dinner though due to back to back doctor appointments not ending until 7pm! Typically if I knew I was the only one eating at home, I would have done drive through too...but I cam home and made something!

Friday- pulled pork sandwiches, baked beans, french fries, watermelon
saturday- grilled chicken/zuchini and squash, baked potatoes
Sunday-grilled burgers, broccoli slaw, watermelon
Monday- Rock Sole, roasted red potatoes, zuchini
Tuesday-chicken tettrazini, green beans, fruit
Wedesday- Shrimp, baked sweet potatoes, corn on the cob
Thursday-Tuna sandwiches, fresh fruits and veggies
Friday- chicken tenders, brocolli cheese baked potatoes, cantelope

Miss Nurse, 2 nights ago, we had venison/beef pulled sandwiches (mixture of leftover pot roast and venison that was harvested last fall by DD's boyfriend). It was so good and I made the sauce with ingredients I had on hand!!

Time for me to find some recipes for cooked chicken.
I just got back from the grocery store with 3 Perdue Oven Stuffer Roaster Chickens marked down to between $2.50 and $3 each. One has been cleaned and is currently in my slow cooker. :thumbsup2

On the menu for the week:

Low Country Boil, Garlic Parmesan Chicken & Noodles, Cube steak w/ southern style green beans and mashed potatoes, pan fried pork chops with roasted broccoli and gnocci macaroni and cheese, grilled chicken and lemon pasta with asparagus, spaghetti and garlic bread, and finally singapore noodles

What are stewed potatoes?

Stewed potatoes are something my mom used to make. Basically it is just boiled potatoes with butter, garlic, salt and pepper stirred into them. This week was pantry/freezer week, so it was me making something out of what was on hand. :)

Tonight DH and I start a brand new ministry opportunity at our church. We will be doing this every Friday night from this point on. We have to be there at 6 for set-up so it's gonna be take-out for dinner....only tonight since the kids are with Grandparents. After tonight Friday nights will be eat at home, but something quick and easy.

Tomorrow is going to be busy for me. I have to: mow the lawn (1.5 acres), grocery shopping, drive to Birmingham and back to pick up my kids (takes 3 hrs each way), then come home and make dinner. Whew! I am exhausted just thinking about it...better put my supermom cape on when I get up! :lmao:

1. I'm jealous of your slow cooker chicken. My pot isn't big enough for a chicken... "lucky" for me the lid to my old pot recently broke so I'm on the hunt for a newer, bigger one. :-)

2. This recipe is new to us this week, but it got great reviews: http://www.bhg.com/recipe/chicken/garlic-parmesan-chicken-and-noodles/

Yes, my DH is an avid deer hunter, so we usually have a decent supply of venison! Last year wasn't as great a year, but normally I have so much venison burger that I hardly have to buy ground hamburger! As far as the sandwiches, I just stick the whole tenderloin in the crockpot with some seasonings. It falls apart! Just add bbq sauce and enjoy!
