Tonight we try something new ("interesting") that was on our meal plan that I am subscribed to...Sausage Fajitas, as in smoked sausage with peppers and onions on tortillas with cheese and sour cream. We shall see how it turns out. :confused3 I will let you know the verdict tomorrow.

Spanish Rice
Black Beans

Tonight we are having homemade pizzas. I bought a chef boyardee kit and will jazz it up with more cheese, pepperoni, and veggies.

DH and I always tease that those kits actually say they are a cheese pizza or a pepperoni pizza like you don't have to add anything else...yeah right! :rotfl2:
 

Made dinner tonight for a total of $4.00 for two people plus there are leftovers

I cooked 4 cups of noodles Cost for the box .98 cents. Drained the noodles.

Added two pouches of the zesty starkirt tuna creatations to the noodles. Cost of tuna $2.18

Drizzled in some virgin olive oil and 1/2 cup of bread crumbs.

There is plenty for leftovers for another night! So dinner cost $2.00 each night. :banana::cool1:
 
Well we changed our minds and decided to have Jersey Mike's for dinner as we were too hot after running errands to cook.
 
Mexican Pizza here tonite- with rice. mmm Just take the cooked ground beef put it into a tortilla top with cheese another tortilla. bake for like 10 minutes- then top with all the regular stuff, Tomatoes, salsa, onions
kids loved it.
 
We're having a change of plans for tonight. My brother (he's here helping us with a painting job) wants to have some of his old college buddies over for a barbeque. I think they're bringing the meats, I'll just have to come up with sides.

I think I'm going to go over to a friends or hibernate upstairs. I love my brother but I can only take so much of him and "the boys" when they get together.

Tonight is my sons 6th grade graduation and it was to be chicken wings his choice, but now the grandparents want to pop over so we got a cake and I am making Sour Cream Chicken Enchiladas (another of his faves) saving the wings for later :goodvibes
 
The verdict on last night's Sausage Fajitas: the children LOVED them. They seriously wolfed them down and raved about them. DH and I felt that they were OKAY, nothing spectacular.

*Homemade Chocolate Milkshakes

We have sour cream chicken enchiladas often here, too. I got my recipe from kraft, and we LOVE them! Even my ever so picky daughter likes them!

I just found this thread and I've borrowed (ahem, stolen) some of the great ideas for simple, quick meals that won't break the bank.

Here's how my week is shaping up so far:

Grilled Ribeye steaks (I love Montreal Steak Seasoning!), grilled onions, baked fries, watermelon. I only bought ribeye steaks because they were on a fantastic :cheer2: sale.

Roasted Pork Loin (another great sale), Wild Rice, Squash from the garden boiled with Onions til tender, Pineapple

Peel & Eat Shrimp with Cocktail Sauce, Oven Roasted Red Potatoes, Sauteed Zucchini from the garden

...this is the last week of school and a family birthday party, so there are several evening events where dinner will be served.

I'll join in.... I need to, we eat out way too often!

Today: Curry chicken with potatoes and chick peas
Tomorrow: Hamburgers and coleslaw
Tuesday: Steak, potatoes and veggies
Wednesday: Tacos
Thursday: undecided.... but I have an extra long weekend this week so I'll have more than enough time to figure it out then :)

Well, I got carried away and decided I would make a menu for two weeks instead of one! I went to the store this evening and got everything we'll need for two weeks meals. I'll only have to go back for milk! Yay! Here's what we're having...

Bacon Wrapped Chicken Breasts, Mac-n-Cheese, Green Beans
Tuna Sandwiches
Burritos/Nachos
Spaghetti
Hot Ham and Cheese Sandwiches
Eggs, Bacon, and Biscuits
Chicken Noodle Soup and Grilled Cheese
BBQ Chicken Drumsticks, Potato Salad, Baked Beans
Red Beans and Rice with smoked sausage
Hamburgers, French Fries
Tator Tot Casserole, Green Beans
Chicken Strips, Mashed Potatoes, Corn
 
Last night the guys (hubby, my brother in town to help us paint and two of brother's old college buddies) grilled out. The buds brought chicken and sausage. Hubby supplied chips and beer. I prepped a bunch of veggies for them to throw on the grill and then hid upstairs in the bedroom with my leftover jambalaya. I was planning to spend the evening at a friend's but her uncle passed away very suddenly yesterday and she had to leave for Kentucky. :sad1:

I was kind of dreading seeing my kitchen this morning-it's always a disaster when hubby has friends over-but it wasn't bad at all. My brother is the stay-at-home parent at his house so I'm guessing he did the clearing up. It was a nice surprise.

Unless something comes up we'll either have spaghetti or breakfast for dinner tonight. I'm thinking spaghetti.
 
Tonight is a busy night for DH and I, we have to be somewhere by 6pm. We got take-out last week, but I am determined to eat at home tonight so...

Dinner Tonight:

Raspberry Chicken Salad- spinach, already grilled chicken strips, dried cranberries, sliced almonds, feta cheese and raspberry viniagrette, YUM!
Biscuits with butter and honey
