Eat at home

I love all of these things also. Unfortunately, I am one of those people for whom pasta and carbs are a nightmare. It doesn't fill me up and when I do quit, I am hungry 30 minutes later. I wish I wasn't like that. I adore pasta and potato and macaroni salad. But my figure doesn't.

My husband is a diabetic and very carb/sugar sensitive. I grew up in a "financially sensitive" environment and pastas and potatoes were main courses. Having to constantly cook around meats and vegs has put a dent in our budget but, it's still a lot cheaper to cook them at home than to go out. Case in point: yesterday we went car shopping (another story, another nightmare) and by dinner we were starving. Dinner out at non fancy steak house ended up costing $60 with tax and tip. Now this morning I'm suffering from a serious money hangover and very little cash to get me through the end of the week.

This budget board is a great place to start!

My DH is a type one diabetic. He can eat carbs but had to learn how to count them and have them in moderation. He still eats potatoes, rice, bread, and pastas. He was recently able to lower his insulin but will be a life long diabetic due to a disease called GAD.

Our food budget is $80-$100 a week and sometimes I don't go shopping at all during the week and live off my pantry and freezer. This shopping budget is for a family of four. We are not brand loyal, clip coupons, and don't eat out unless it's on a Groupon or Restaurant.com certificate. We also don't eat a lot of processed foods. We still eat pretty well as you can see by my blog. http://tinkmomfoodie-foodobsession.blogspot.com/ It just takes a bit of planning. You can do it:thumbsup2 I am about to sit down and make my menu for the week with my store ad and coupons.

Thanks tinkmom, I will check it out. I don't do too bad at the store. I buy the "loss leader" meats and I frequent an upscale grocery store just for their near expiration meats that they mark down a great deal. I think I need to start becoming more disciplined when it comes to eating out. I love it, except for the "buyers remorse" the day after. I'm dying for another Disney trip and this is the only way we can do it!:)

I feel ya. We did the same thing yesterday. Kids at parties and by the time we had to leave and pick them up, it just wasn't going to happen for dinner at home. We ate out and it was about $60.00 for Moe's and Mama Fu's.

I keep trying to eat pasta and potatoes, because I do know it is cheaper, but I just can't do it and loose the weight. Oh well, like you said, it is still cheaper than eating out. But I just love pasta.

Change of plans tonight. My best friend invited me out for chinese so I will make the spaghetti tomorrow.

Went shopping today- so this week looks like (in no particular order)

Beef and broccoli with rice and dumplings
BBQ chicken breasts with baked potatoes? maybe or something else
Spaghetti and turkey balls(planned leftover from last week)
Terriyaki chicken legs with rice
sausage and pepper hero with fries
pizza or calzones- depending on wants
chicken thighs with mustard sauce

This isn't "eat at home" but I am having a mom's night out with some moms, it's a once a month thing usually. I made chicken pasta salad for my family to eat while I am gone.

Tomorrow is Disney World!! :) So we'll be having Kona Cafe for dinner and Crystal Palace for late breakfast. :)

Got back from our Disney vacation and sort of stayed in "vacation mode" eating out way too much! Time to get back on track!! We are going more and more meat free here. Not for price reasons, but we are just trending to not want meat as often for some reason. It's definitely helping with the budget though! Lookin at my menu, we have 5 out of 7 meatless!

Saturday- mushroom pizza, cucumbers, appleasauce
Sunday- Taco's, fresh fruit salad
Monday- No choice but to eat out. Dd is having surgery and will be inpatient. Hospital food. Blech!
Tuesday- Mexican soup dh will throw in crockpot if we get discharged!
Wednesday- Chicken black bean quesadillas, fresh fruit salad
Thursday- Tuna sandwiches, cucumbers, carrots, pears
Friday- Ravioli and a salad

This is a great thread! I would love to cook more at home. It has not been easy due to our work schedules (I am a RN and hubby is an ultra busy engineer who can't cook well :rotfl2:). We are not on a tight budget but hey the more money we save the merrier. I make one dish only when hubby is not home for dinner. Here is my planned meals for the week. We are Chinese so you will see mostly Asian dishes. Hope it will inspire some people to make Asian food.

Tonight--Chicken stir fry w/onions & pepper topped with sweet & sour sauce.
Chinese style scrambled eggs w/shrimps. Stir fry bok choy. Rice of course.
Monday--Japanese curry chicken (cooked w/carrots, onions & peas) over udon.
Tuesday--Chicken wings marinated w/special soy sauce, steamed broccoli& rice.
Wednesday--no cooking. DS has violin lesson at 6pm. Hubby takes him to dinner afterward. I work late shift that day.
Thursday--Mac & cheese w/spam plus fruit salads.
Friday--Barbecued pork w/stir fry bok choy over rice.
Saturday--tempting to eat out. Otherwise will likely make some kind of pasta and toss a salad.

Heading out to the grocery store......:cool1:

Welcome aboard! I would love to make more Asian food! This past week i made my own sushi rolls for the first time and they came out great!

Ive got to say that my DH has been super happy since I have been making weekly menus....much better than chicken and baked potatoes almost every night!

Sunday: Baked potatoes topped with pulled pork from the freezer, corn on the cobb, salad and ice cream cones

Monday: Salmon patties, salad, pears

Tuesday: Chicken, rice, green beans, oranges

Wednesday: Turkey spaghetti, salad, oranges

Thursday: Biscuits and sausage gravy

Friday: Black bean soup from the freezer and grilled cheese

Saturday: Red beans and rice with smoked sausage, fried apples

Sunday: Grilled pork chops, rice, salad, brownies

I usually do pretty well with making just enough for four. If its a bigger recipe like the red beans and rice I will be making, I always freeze the leftovers to use another time. That way the leftovers don't really seem like leftovers. ;)

One 9 lb. Oven Stuffer (on sale last Fri) . Two fabulous meals!! Fed 6 people including the inlaws last night, and have enough left over for chicken alfredo tonight!

I am making spaghetti with homemade turkey meatballs, salad, and garlic bread tonight. The meal we were suppossed to have last night but I went out with friends instead.

I admit, this is where I have issue. It's only myself and my mother and I usually make WAY too much food depending on what it is. I mean, steak and baked potatoes are easy to portion out (though I always make one extra potato so I can make steak hash the next morning for breakfast!)... but when I make white chicken chili I make enough to feed everyone in this thread! We do eat it over the next few days, but I do end up throwing some out.

I don't have room to freeze stuff either. My freezer is full and we have to clean out the garage to get a new stand alone.

I LOVE reading everyone's menus. It helps me plan my own and get ideas for new dishes.

Ours is:

Dinners
M - buffalo chicken tenders with blue cheese (if I get my butt out to walk 3 miles to get the chicken in the rain today)
Tu - hearty bruschetta
W - homemade pizza
Th - potato ratatouille
F - ?

Lunches (I'm a SAHM and my husband works from home so we have double meal duty)
M - leftover pasta bake from last night
Tu - chickpeas with lemon and feta w/bread salad
W - quinoa onion apple salad with crostini
Th - lettuce hummus veggie wraps (lettuce is the wrap)
F - leftover ratatouille

Mon.- Oven baked ranch pork chops with baked potatoes and green beans.
Tue.- Spaghetti with lots of veggies in the sauce and garlic bread
Wed.- Broccoli and ham quiche and fruit
Thurs.-Spaghetti bake with garlic bread
Fri.- Pizza

I'll be looking for ways to make the dishes lower in cholesterol. Trying to make some tweaks.

Dinner tonight:

Smoked Sausage pan-seared with Sweet Onions
Oven Roasted Corn
Chunky Applesauce
Biscuits with Butter and Honey
*Chocolate Pudding & Cool Whip
