Eat at Home 3!

Here's my roundup of how last week went (updates in bold):


Monday 4/11: taco salad with a blood orange & blackberry banana ice cream dessert. I got too excited about the banana ice cream & ate that for breakfast instead (because being an adult is fun!), otherwise I ate this exactly as planned, my husband ate a whole (!) vegan frozen pizza by himself instead of the salad.

Tuesday 4/12: Zapiekanka again, I'm trying to perfect my adaptation of this recipe: http://www.sensualappealblog.com/traditional-zapiekanka/ & my 4 bean salad. I still had a lot of the dill & chive bean spread, so I ate that on homemade bread & postponed making the bean salad, otherwise we ate this meal as planned.

Wednesday 4/13: Savory Chickpea Pancakes (chickpea flour, tomatoes or red bell peppers, frozen peas, onions & some spices and all) & Saag Baag (Indian tofu & spinach dish, super delicious). Ate large portions of the Saag Baag with bread and dill & chive bean spread & made the Chickpea Pancakes on Saturday for lunch instead.

Thursday 4/14: Crispy Smashed Potatoes with Avocado Garlic Aioli ( http://ohsheglows.com/2014/10/15/crispy-smashed-potatoes-with-avocado-garlic-aioli/ ) & the rest of 4 bean salad. Made the 4 Bean Salad on this day, so this was our first night eating it, otherwise exactly as planned.

Friday 4/15: Apple Potato Rösti with blackberry banana ice cream for dessert. Postponed the Rösti indefinitely (might make it for lunch this week?), ate 4 Bean Salad leftovers & toast with jam instead.

Saturday 4/16: quinoa & black beans with cashew queso ( http://www.allysonkramer.com/2013/0...w-queso-sauce-from-robin-robertsons-new-book/ ). Postponed this until Saturday as we were feeling lazy & I didn't want to cook. My husband ate cereal & toast (I think?) & I ate a vegan TV dinner from Saffron Road instead. Usually I cannot afford them, but it was on sale, I had a store coupon and Ibotta had a rebate, so I bought myself a treat just for nights like this. I ate some of the 4 Bean Salad later in the evening, too.

Sunday 4/17 & Monday 4/18: pasta & marinara sauce & the only coleslaw recipe I like (key ingredients that make it yummy: celery seed, apple cider vinegar & agave nectar or honey). Made the Quinoa dish originally scheduled For Saturday on Sunday, will eat leftovers tonight for dinner & will skip pasta & sauce this time around. Ate homemade pear sauce for dessert on Sunday.


Now that we are 11(!) days away from our Disneyland trip & have some fresh ingredients we need to use up before we go, I slightly revamped my meal schedule for the rest of our pre-trip dinners so I can make sure we use up all the uneaten produce. Last week I made a cardamom mango coffee cake to help use up some of the extra mangoes I bought, this week (probably tomorrow?) I will use up the last of my mangoes and blackberries to make a mango blackberry coffee cake. Breakfasts will be cereal, coffee cake, red bell pepper tofu scramble, cumin & cabbage tofu scramble and banana smoothies. Here are the dinners:

Monday 4/18: leftover quinoa & black beans with cashew queso & homemade rolls.

Tuesday 4/19 & Wednesday 4/20: Peanutty Pumpkin Stew & homemade rolls

Thursday 4/21: homemade creamy stovetop Mac & cheese and fresh tomatoes.

Friday 4/22: homemade bierock turnovers & homemade Mac & cheese turnovers (or hot pockets, whatever you want to call them. Making a huge batch & freezing half of the bierock ones & a couple of the Mac & cheese ones to test out for future make ahead meals. Friday looks to be somewhat busy, so I think I will make up the bierock filling in advance--probably tomorrow--and freeze it until Friday)

Saturday 4/23: homemade pizzas; bierock pizza & Carmelized onion & apple pizza with cashew ricotta sauce

Sunday 4/24: vegan Poutine & tofu "chicken" and tomatoes.

Monday 4/25: breakfast for dinner; pancakes & fruit & tofu scramble, possibly muffin or coffee cake as well.

Tuesday 4/26 & Wednesday 4/27: homemade kidney bean burgers with homemade smoky thousand island dressing on homemade buns & a pasta and bean salad

Thursday 4/28: I'm going to the freezer for this one, thawing out the last of my vegan Welsh rarebit sauce & making that to use up whatever bread or rolls we have left over.

Friday 4/29 onwards: we'll be road tripping in Anaheim (DISNEYLAND!!!!), Venice/LA, Big Sur, Sacramento, Portland, Seattle, Spokeane, Fargo, Minneapolis & Chicago.

Got my new electric pressure cooker in last week. I used the other one to death. Literally. I made baked ziti in it which I had never made in a pressure cooker before. Also cooked up chicken to use in various things since it was on sale. Made Chicken and dumplings with some. Didn't cook Friday night since we went to see Jungle Book. Saturday I made pot roast, potatoes, and carrots in the pc. Yesterday I did 2 racks of baby back ribs (that were on sale yay!) in the pc. finishing them off for just a couple minutes on the grill with a cheesy potato casserole, corn, and garlic bread. Tonight's fajitas. Tomorrow night I'm using some of the chicken I froze for chicken enchiladas. Will update when I decide for the rest of the week.
 
I'm ashamed to admit that we veered from the meal plan this weekend and ate out every night. DH got a new job offer (Woo-hoo) so we celebrated with dinner out Friday, Saturday my DD's softball team and parents went out to eat after their 1st game then on Sunday we went to Six Flags so we ate there with our dining pass.

Needless to say, happy to get back to our meal plan, some stuff from last week got pushed to this week.

Tuesday - chicken Caesar and buffalo chicken wraps, pasta salad
Wednesday - Salisbury steak meatballs, egg noodles, broccoli
Thursday - chicken cordon bleu casserole, leftover rice

We did ok staying on plan last week- flip flopped a couple of days and ordered pizza one night. Better than the previous weeks where we were eating out too much!

Sunday: Grilled cheese and tomato soup
Monday: Slow cooker french dip sandwiches with oven fries
Tuesday: Aunt-in-law's Birthday, family is coming over and I'm making a big lasagna, salad, and garlic bread. MIL is making an Angel Lush cake.
Wednesday: Out, hubby has an appointment out on the other end of town so we'll just grab something. I'm feeling Chinese :thumbsup2
Thursday: Leftover lasagna
Friday: ?
Saturday: Tamales, homemade refried beans, and rice
Sunday: Smoked pork tenderloin, pasta salad, and corn on the cob

I need to change my ticker... we're actually going on a Disney cruise instead of out to DL, lol! :banana: I want to eat at home as much as possible between now and then!
 
YAY Friday. Dinner today is WINE. I'm so bummed we were going to go to Disney tomorrow and had to cancel due to work :sad:

Monday: Slow cooker café rio chicken (http://www.sixsistersstuff.com/2012/03/healthy-meals-monday-cafe-rio-slow.html ) but I am halfing this recipe and making brown rice and broccoli instead

Wednesday: I have my workout class leftovers!
Thursday: Shredded chicken baked nachos
Friday: Going to a 9 pm workout class and then they are having an after party!
Saturday: It's our wedding anniversary:lovestruc:-):yay: Going out for dinner. Not sure where (should think about that!)
Sunday: Bowtie pasta with alfredo sauce, tomatoes and peas
 
I stuck to the plan this past week all but one night. We went out to eat Wed. night because several local restaurants were participating in a "Dine to be Kind" event donating proceeds to our town's SPCA. I will just transfer that meal to next week, I went grocery shopping this afternoon for next week and didn't have to get too much because several meals will use leftover meats and stuff I already had on hand.

Tonight- crispy chicken with pan-fired potatoes and cheesy garlic bread
Sat.- out to eat after church- DH gets to pick since his birthday is Mon.
Sun.- smoked chicken with baked beans and cornbread
Mon.- steak* nachos with guacamole (DS's idea and he'll help make for his dad)
Tues.- turkey breast* with broccoli cheddar roll-ups
Wed.- bbq chicken* pizza with salad
Thur.- ham* and hashbrown bake
Fri.- beef enchiladas

*using leftover meat purchased for other meals
 
Hmmm, this is gonna be a weird week, with travel 4 days for some adults (so meals will skew young and fruit-filled:)...we've been doing meatless Italian Sunday dinners and they seem popular, so gonna continue that, too.
Sun - 4-Cheese Stuffed Shells in Fresh Veg Marinara, Green Salad (Lettuce/Tomato/Cucumber/Croutons), Come Y Bebe Ecadurion Smoothies (fresh papaya, fresh pineapple, banana, orange juice, honey to taste, ice - had this as fruit salad for the Friday international lunch and seems perfect to use up my leftovers in a smoothie:)) - gonna make this again soon b/c it was surprisingly awesome and papaya and pineapple are in season and cheap right now!
Mon - NY Strip Steak, Caramelized Onions, Roasted Broccoli, Mashed Potatoes
Tues - Cheese Ravioli, Strawberries and Kiwi (leftover steak and veggies for me if there is any)
Wed - Breakfast for dinner - Bacon, Chocolate Chip Waffles, Fresh Banana Sauce, Strawberries and Raspberries
Thurs - Baked Chicken Tenders, Baked French Fries, Carrots with Dip, Apple Slices
Fri - Frozen Pizza, leftover fruits (in smoothie or cut up)
Sat - Out or $5 Dinner (we'll do one meal out with a Groupon and one meal as my grocery run $5 cheap meal - not sure which is which yet:) - I'm gonna need the break!
 
Tonight-pasta, salad
Sun-meatball sliders, salad
Mon-butter chicken, rice, naan, peas
Tues-chicken skewers, noodles, broccoli
Wed-breakfast
Thurs-chicken fingers and fries, not sure of veg, maybe fruit
Fri-hamburger helper, not sure of veg
Sat-turkey, stuffing, mashed potatoes, gravy, corn, broccoli
Sun-leftovers

**We bought a cheese making kit a month or so ago and finally got around to buying homogenized milk for it last week. Today we have set aside some time to try it out. If successful, we'll use it on our meatball sliders tomorrow night!

Last Week's Plan:
Monday- We are both working days- think I have chili in the freezer (We had fish and chips from the freezer)
Tuesday- stuffed pasta tubes, salad, garlic toast (homemade burgers)
Wednesday- salmon and rice and veg (we had a Costco chicken with pasta and tomato sauce)
Thursday- ground pork burgers (Mediterranean seasoning- yum!) and fries and salad (New York steaks with salad and garlic bread)
Friday- thinking hotdog/sausage roast at the outlaws farm (we made homemade pizza)
Saturday- ?? Not sure yet (I used the leftover steak and made stirfry with lots of veggies and some chow mein noodles)
Sunday- rotisserie whole chicken on the bbq, some sort of side and veg (we were at the inlaw's farm till late afternoon moving cows so ate leftover roast beef, baked potatoes and salad there)

This Week's Plan:
Monday- rotisserie whole chicken on the bbq, some sort of side and veg (had the chicken with baked potatoes and salad)
Tuesday- thinking stuffed pasta tubes, salad, garlic toast- we still have these in the freezer (MIL had made a huge pot of stew and gave us some of that after DD's football game)
Wednesday- Dinner at the farm with outlaws

Rest of the Week:
Driving to Alberta to Comic/Entertainment Expo we volunteer and work as security with the guests (Some past guests I have worked with include NPH, Carrie Fisher, Peter Dinklage, Jillian Anderson)- this will be mostly eating out dinners (lunches are provided) Planned and budgeted for.

Hi Everyone, I love catching up after being away.. lots of great meals here.. this week is just the Hubs and I
Sunday - teriyaki steak tips, fresh corn on the cob, grilled asparagus, grilled zucchini and potato salad for the Hubs
Monday - Cashew Chicken, white rice and leftover wontons from Sat night
Tuesday - sausage sandwiches and chips
Wednesday - HBH stroganoff made with LO sausage vs. burger garlic toast
Thursday - cranberry chicken, stuffing, mashed potato and green beans
Friday - we are having our new place inspected - likely out
Saturday - we have our homebuyers class all day - likely out
Sunday - we have the rest of our homebuyers class all day - again likely out

for the out night - I see pizza in our future and we also have an Olive Garden GC and Buffalo Wild Wings GC so we'd use these up..

We have been eating out way too much lately so back into the swing of things, especially since we are planning a Disney Cruise for next March along with week long trip at WDW and Universal next June.

Sunday - In laws invited us over for dinner - free meal!
Monday - Hamburgers, cole slaw, fruit salad
Tuesday - Sausage, broccoli, potato casserole, left over fruit salad
Wednesday - Tialpia, corn bread, mac and cheese, green beans
Thursday - Belgium Waffles, Fruit
Friday - Pasta dinner at in laws (carb load before my first 1/2 marathon)
Saturday - BBQ chicken, salad, garlic bread

Our housemate had been sick for a couple of days & this evening my husband & I both got sick too. He refused to eat, just wanted to sleep, so I ate leftover bell pepper tofu scramble & tomatoes & went to bed, skipping the turnovers.

Saturday 4/23: homemade pizzas; bierock pizza & Carmelized onion & apple pizza with cashew ricotta sauce. My housemate was really sick, went to the ER & my husband & I were both sick too, so we decided not to do this full household meal. Almost had to take my husband to the ER too. Not a fun day. I thawed soup from the freezer instead (minestrone for my husband, Irish Vichyssoise for me). Also made homemade vegan cinnamon pancakes (my husband wasn't wanting to eat anything, but I can always get him to eat pancakes, so I had to cook some up).

Sunday 4/24: vegan Poutine & tofu "chicken" and tomatoes. Still sick, we ate the last of the leftover freezer soup & thawed the Welsh rarebit sauce in the freezer & had that over the last of the rolls.

We are now feeling a bit better (yay!), so hopefully I can get back on track with home cooked meals. Here are our plans for the rest of this week:



Monday 4/25: breakfast for dinner; pancakes & fruit & tofu scramble, also coffee cake as well & maybe some homemade hash browns to use up the last of my leftover potatoes.

Tuesday 4/26 & Wednesday 4/27: homemade kidney bean burgers with homemade smoky thousand island dressing on homemade buns & a pasta and bean salad.

Thursday 4/28: Not sure what I'll eat yet, either sandwiches or whatever is left over in the fridge.

Friday 4/29 onwards: we'll be road tripping in Anaheim (DISNEYLAND!!!!), Venice/LA, Big Sur, Sacramento, Portland, Seattle, Spokeane, Fargo, Minneapolis & Chicago. We'll be home May 17th.

I am working in a city about 75 miles from home, so I rented a room in a house (only occupant right now, though). I live there M-F to limit my commute, so I'm cooking for 1:

Tuesday: steak and oven sweet potato fries
Wednesday: snacks for dinner (including guacamole on bacon--hey it's low carb and looked good at nom nom paleo. :-) )
Thursday: salmon salad on cucumber slices

My kids (young adults) are at home and fending for themselves. My guess is Little Caesars.

That's a great idea. I'll mention that to DH and DD. It's the DGSs that are playing so it wouldn't work as well if only DH and I did the picnic. LOL. I like the idea though. It would be cheaper. Last night we had Japanese for the two of us and it was $19.33.
