Eat at Home 3!

Last night I went out with my coworkers. Mom had leftovers

Tonight was breakfast for dinner. French toast sticks, bacon, and watermelon.

Tomorrow will be pork chops with roasted Parmesan potatoes, and grilled vegetables

The rest of the week will be decided tomorrow after I grocery shop
 
I almost always cook at home and since taking a comprehensive freezer inventory (meat is only purchased at really good sale prices), I realized planning is critical. There are only two of us but hubby takes a homemade lunch to work daily. We only spent 56.00 last week and 86.00 this week. Reading ads and having a good idea of regular prices is critical.

Ok so here is my plan the rest of the week

Wednesday: hamburgers with chips and fresh fruit
Thursday: pepper steak stir fry with rice
Friday: spaghetti with meatballs and salad
Saturday: Crock pot chicken and stuffing

Yesterday: pizza breads
Today: chicken alfredo
Tomorrow: ???

We've got quite a few things, the problem is I'm not sure what to make with them. There is only two of us, so usually I make enough that my wife can take leftovers to work. However we're in kind of a loop as to what we've been eating. Any suggestions of good recipes people want to share? Right now we've got:

Chicken legs
Chicken breasts
Steak
Ground beef

Various pastas, rice, and potatoes.

We're trying to use up our current lot of food before buying more but I'm getting a bit bored with what we've got. If nothing else I'll probably make the chicken legs with a simple salt and pepper coating tomorrow and pair it with rice.

Great summer recipe to add some cooked chicken to http://www.foodnetwork.com/recipes/rachael-ray/hot-and-cold-sesame-noodles-recipe.html - look at some of the comments to adjust how you like it (some add extra veg, proteins, or slightly reduce the sauce or peanut butter amounts and add lime or pasta water). It would work with any of the chicken you've got and become a complete meal...
 
I decided to jump in and give this a try, although I have to admit, I hate eating at home! Would MUCH rather eat out every night of the week (if only my budget would allow it!!!!)

Wednesday: take out (summer concert at the park so we normally grab something at the local hotdog/ice cream stand & enjoy a picnic
Thursday: rotisserie chicken from food store & salad (it's grocery shopping night so too tired to cook after work/shopping)
Friday: new recipe night - haven't decided which one yet...
Saturday: butter chicken & rice & mushrooms
Sunday: hamburgers & corn on cob

Try your sauce before you add the pasta and veg and make sure you like it:)...extra salt/soy/tamari if it's not salty enough, a little honey/sugar if it's not sweet enough (or it's too sour), extra lime or vinegar if it's not sour enough, or extra hot sauce if it's not spicy enough. Once you have the "perfect" blend, add your veg, pasta, and protein and it will be awesome:)...I've made it a bunch of times, but I admit I use the recipe as a guide and measure the way Rachel measures (which is not much:)...

Something for the steak (especially if it's a cheaper cut) would be steak fajitas over rice with a guac topping (I make a guacamole salsa with 2 avocados, 1 lime, 1 red onion put in chilled water, 1 jalapeno with no seeds, 2 tomatoes seeded and diced, and some salt/pepper - it's good, but a store bought guac works too or you can leave it out or use salsa:). You can add zucchini/summer squash/other peppers or chilis to the normal steak, onion, bell pepper fajita mix and I just use a fajita spice packet (and extra lime if it needs it) on the fajita mix. Putting it over rice would use what you have and makes it a very easy thing to serve and eat. I call it my Fajita Bowl (just like so many restaurants have bowls now:)...
 
I am new to this thread, but I was really bored with the food we had here at home today. I made leftovers for the others and I had a protein bar. I really wanted to go to Chipotle but didn't go. I guess I need to buy the stuff to make a burrito bowl when I go to the store tomorrow. My question is this, if I grill a bunch of chicken breast, what is the best wat to freeze it without it getting tough and dry?

I've seen lots of places recommend slightly undercooking it by 1-2 minutes (so it has a very slight pink center), so that when you rewarm it, you cook it through without it getting way overdone (and turning to rubber). If you cut it in strips before freezing, I'd probably also wait 15 minutes after you take it off the grill to cut it, to make sure all juices are back in the chicken.

And something for the ground beef I like to do in the summer as fresh tomatoes and zucchini come in - stuffed tomatoes or stuffed zucchini (or stuffed peppers, too). I could grab recipes, but really it's beef, grain, veg, cheese, and herbs/spices done in the flavor you like (I've done Mexican versions, Italian versions, and what I call down home Southern versions:)...it's a one dish meal for when it's raining or not TOO hot to turn the oven on.
 
I need a potato salad recipes, but there is a catch. I can't have pickles/relish OR straight vinegar (aka I can have mayo/mustard but can not add any additional vinegar). Any ideas? Would potatoes, mayo, mustard, egg, and onion work okay?

My favorite - 1 lb of cooked, crumbled bacon, a few large stalks (4-5) of chopped celery, a chopped large red onion dunked in cold water, a whole large bell pepper, 3-5lb red potatoes, salt/pepper, and mayo to taste. Have it stand 1-2 hours before eating - it's awesome:)...
 
Okay, I've finally gotten the menu set until Tuesday after figuring out cooking arrangements with my wife. Thanks to TwoMisfits I've added two great ideas to keep things from getting too boring. :)

Tonight: Grilled cheese and soup
Tomorrow: Hot and Cold Sesame Noodles
Saturday: Corn dogs
Sunday: Fajita Bowl
Monday: Hamburger Helper
Tuesday: Chicken and rice

Saturday and Sunday-we will be at my inlaws FL house and they always cook at home (they love to grill), so TBD
 
Hit Aldi's today for my monthly stock up on pretzel rods, dried cranberries, and beer bread mix...and bought the produce picks. I now have 3 lbs of strawberries, 2 lbs of blueberries, 1 lb of cherries, 2 lbs of bananas, and 10 lbs of seedless watermelon (stupid low price on this - $2.99, so I bought it for multi-use). My weekly meal menu will likely be a very fruity menu, although I already know I'm serving the watermelon 3 ways - fresh cut for a game dessert party with friends (6 of us) tomorrow night, in a watermelon-feta salad (got the feta at Aldi's, too), and then in a strawberry/watermelon smoothie (love these 2 fruit flavors together). I have to do my other shop to actually gets proteins, paper products, and vegs for the week before I make a menu...
 
Okay, finished shopping and here's the plan...
Sat - Homemade Chicken Salad (Poached Chicken Breast with Rosemary, Red Grapes, Celery, Mayo, and S&P), Feta Watermelon Salad, Double Blueberry Muffins (extra watermelon and candy available for gaming party at night)
Sun - Chicken Salad Part 2, Caprese Salad (Tomato, Mozzarella, Fresh Basil, Balsamic and Olive Oil), Watermelon Strawberry Smoothies
Mon - Blue Cheese (and maybe Bacon) Cheeseburgers, Corn on the Cob, Strawberries and Blueberries with Whipped Cream (red, white, and blue)
Tues - Honey Mustard Chicken, Roasted Carrots, Fresh Cherries
Wed - Cheddar Bacon Quiche (whole milk only), Banana Bread, Watermelon Feta Salad or Caprese Salad (whichever I still have the stuff to make - I have a lot of grape tomatoes and watermelon)
Thurs - Baked Potato Soup (using bacon cooked yesterday and any leftover corn), Leftover Banana Bread, Rest of the Berries
Fri - $5 Protein, Fruit Smoothies (with any extra fruit from the week) for family - Date Night for Spouse and I
