Eat at Home 3!

Was sick all of last week with kidney stones and a stomach virus so everything went off the rails. The plan this week is to utilize what's already in the house - purchasing only fresh produce, dairy and bread with a $100 budget for the week. Cleaned out the fridge and indoor freezer yesterday, so have a good idea of what there is to work with. Thankfully, we easily have enough to cover breakfast for the week and can piece together random lunches if we utilize leftovers heavily. Dinner plan is as follows:

Today - Apricot chicken, rice, broccoli
Sunday - Pork tenderloin, roasted root veggies
Monday - potato soup
Tuesday - lemon butter chicken, zucchini, couscous
Wednesday - teriyaki meatball rice bowls
Thursday - pork chops, mashed potatoes, roasted carrots
Friday - pasta primavera
Saturday - Broccoli risotto
 
Super busy week and I didn’t have a weekend last week to prepare for it. I just got back from work travel to the other coast to find DH tried to be helpful and clean the kitchen. As part of that, he tossed the meal plan that I had scribbled on a piece of paper. Back to the drawing board.

I’m still figuring out what to make today. I had roast beef on the plan, but that’s what MIL fed them yesterday afternoon even though DH had promised he’d take care of dinner when I get home in the early evening. I came home to an empty house after a grueling flight instead. Can you tell I’m not having a great week, lol?

Monday: Tuscan soup
Tuesday: Mac and cheese, cucumber salad
Wednesday: burrito bowls
Thursday: potato soup
Friday: sandwiches
 
I can't believe I just found this thread...this is so inspiring. I work from home so I should give more thought to what I'm cooking because our freezer and cupboards are getting full (of what I don't know :rolleyes1) and it's time for me to do a no-buy month to get rid of things

I'm making chili and cornbread today...that's as far as I got. I'll do better next week after I look through the freezer and cupboards. I know there is a can of peppercorn sauce :scratchin
 
I need to get back on track my freezer is bursting at the seams.

Sunday - chicken pot pie (using up half a frozen roasted chicken, a half bag of frozen peas, and a half bag of frozen corn. )

Monday - ginger garlic butter shrimp (frozen) over pasta with a green salad

Tuesday - Swedish meatballs ( frozen) over egg noodles with the rest of the green salad

Wednesday- tacos, using frozen hamburg, with black beans, and rice

Thursday - fried rice, using up some additional precooked frozen chicken and misc veggies in the veggie drawer

Friday - nachos with leftover taco fixings
 

New week, new menu plan...
Sunday: Fried chicken sandwiches with scalloped potatoes
Monday: Honey Garlic Chicken Rice Bowls
Tuesday: Tacos/Taco Salad
Wednesday: Beef Stroganoff with salad
Thursday: Buffalo Chicken wraps, carrot and celery sticks
Friday: Homemade pizza

Oh no! I'm fine with doing the majority of the cooking in my house, but when DH says he's doing dinner and then gets sidetracked it bugs me an unreasonable amount :headache:. Hope the week improves!

I know the feeling! I spend September working my way through stuff in our chest freezer - I won the war and its just about empty (except for the costco shop I just put in there!) I was able to defrost it this weekend (it wasn't too bad- just a ring of ice around the top section), and I just bought some freezer bins to help keep it more organized. I'm short, so I currently need to use tongs to grab anything that is at the bottom- baskets should help me not lose stuff at the bottom!

My week - still working through the last of what was in the freezer. I actually need to buy some chicken - I'm finally running out of frozen proteins. October is a crazy month for me at work, so I did a meal plan for the month, including lots of things that DH and kiddo can get on the table.

Sunday - Pork tenderloin with cabbage and apples, rice
Monday - Tortellini Soup
Tuesday- Beer Battered Fish, Tater Tots, cabbage salad
Wednesday- Chicken Caesar Salads
Thurs-Saturday - no idea, DH and kiddo are going to visit my other kiddo out of state while I stay home and work like a crazy person. I did pick up stuff to make Thom Kha Gai for myself.
 
The last 6 weeks have been chaotic with a medical emergency that caused us to have to cancel our Alaska cruise 3 days before sailing, then Hurricane Helene affecting our area and now another possible hurricane coming our way (Tampa FL area). We ate out a lot more than I'd like to admit during this time but with all the unexpected expenses I need to save on the food budget more than ever.

Last Weeks Menu:
Sunday - Enchiladas
Monday - Teriyaki Chicken & fried rice
Tuesday - French Toast & Fried ham steaks
Wednesday - Roast Pork, Black Beans & rice
Thursday - Spaghetti & garlic bread
Friday - Taco Lasagna
Saturday- Chicken Sausage with rice

This week's menu:
Sunday - Slider burgers & mac and cheese
Monday - Pork Chops, broccoli, rolls
Tuesday - Fried fish, peas and roasted potatoes
Wednesday - Tuscan gnocchi with spinach & sun dried tomatoes
Thursday - Baked chicken drumsticks, corn & potatoes in sour cream
Friday - Air fried pork steaks, squash & rice
Saturday- Carnita tacos & refried beans
 
I was just talking to my coworker over lunch today that I need to get back on track as far as eating at home. We've gotten bad since Monday night bible study, Wednesday night bible study/choir practice and Friday night football all started back. That's going to be our focus for the next 2 weeks. I have made out my budget from now until mid-November, and I put larger amounts towards groceries with the only meal out being Sunday lunch after church since we always go with church friends.

Now I just have to figure out what to buy for what days/meals and what I can do for lunches that don't require a fridge. We typically just go to the store and buy food for that week and not have to worry about freezing/thawing out meats, etc. Also, I'd like to get away from eating breakfast out, even though I'm down to just 2-3 days per week. I'd like to cut down to just 1 day per week. I have to do little steps becuase if we try and go cold turkey, we won't succeed.

Wow, this last week was BAD. We barely ate at home, so it's definitely time to reset.

Tonight: BBQ chicken stromboli, salad
Tomorrow: Nachos
Tues- sauteed pierogies, salad
Wed- general tsos chicken (frozen from Costco), rice, broccoli
Thur- baked ziti, salad

It does take quite a bit of time to do though.
Breakfast is one of the easiest prepped meals of the day for me.

Three of us are going to WDW for 2 weeks in December and our breakfast will mostly consist of yogurt, fresh fruit (I buy a lg fresh fruit salad from the supermarket) and a batch of homemade granola. Once @ week, we'll have a hot holiday breakfast of pre made waffles or pancakes (haven’t made up my mind yet).

You can also make muffin tin omelettes, sausage biscuits and quiches, make ahead and store in freezer. HTH.
 
Tonight: Gyudon
Tomorrow: Roasted pork loin served on brioche buns & green beans
Tuesday: Asian style meatballs, rice & green squash
Wednesday: Oyakudon
Thursday: Chicken w/broccoli served on rice

We always have lot of rice because I have a Zojirushi rice cooker and that make rice the easiest starch to make.
 
Got a plan together, and we spent $300 at the grocery store for 2 of us. Of course, there was basically nothing in our fridge/pantry to eat. So here we go...

Saturday: hot ham & cheese sandwiches, snacks, dips, meat balls for the Texas-Oklahoma game;
Sunday: leftover of the above;
Monday: crockpot chicken and rice casserole and bread;
Tuesday: leftover from Monday;
Wednesday: probably sandwiches as we have choir practice/bible study;
Thursday: tacos;
Friday: FNL.

But we bought some stuff to freeze to make quick meals on nights we're out late or have stuff to do. Also got stuff we can keep in the freezer for a couple of weeks.

I also got muffins that I can throw in the toaster at work/home for breakfast and also an extra loaf of bread I can put in the freezer at work. I can eat toast/sandwiches from that for a week and a half or maybe 2 weeks before I throw it out.

Wednesday: Tostadas, Spanish rice
Thursday: Pork chops, Mac & cheese, green beans

The hope, as always, is to only go to the store for milk, bread, fresh produce and avoid going out to eat/ordering takeout

Tuesday: @parents' house- Marinated london broil, brown rice (which isn't actually brown rice but this minute rice we make with beef consomme)
Wednesday: @parents' - Chicken parm with pasta
Thursday: back @ home: Homemade pizza or ?
Friday & Saturday- down the shore
Need to figure out Sunday before we leave so it's planned out. Then start the merry-go-round all over again.
 
I'm still going on the meal planning I did two weeks ago, knowing how crazy things were going to be in October. This week is:

Su- Chef salad (DH grilled a bunch of chicken for me, so I've been bringing chicken salads for lunch all week too)
M- Pulled pork, cornbread, asparagus
Tu - Tortellini Soup
W- Breakfast for dinner (probably pancakes and Canadian bacon)
Th- Pulled pork sandwiches
F- Takeout (my daughter is having a friend over for a movie night, so they will pick the place, probably Chinese)
Sa- Homemade Pizza

There was a good sale on chicken breast, and I got a bunch of pork from Costco, so I pulled out my vaacum sealer and portioned out proteins to put in the freezer. I also bought baskets to organize my freezer, so although I have restocked somewhat, its still really easy to see what is in there! Its the little things in life :rotfl: .

F - Salmon, potatoes and cabbage
S - Risotto with mushrooms
S - Pumpkin soup
 
Absolutely. My question for those that have something different for Sunday-Saturday, when do y'all eat the leftovers? Or do you just throw out the extras? I can't imagine having to cook something different every night.


This sounds like a good plan - always good to have leftovers available for busy nights so that eating what you have is the easiest option!
