Thought I would post my meals from today and for the rest of the month. I will be out of town the whole last week for Thanksgiving so who knows what I will eat.

Today: Steak and Hashbrowns
Saturday: Beef Stew and Biscuits
Sunday: Leftovers

Monday: Chicken Tenders and Mac and Cheese
Tuesday: Butternut Squash Soup and Biscuits
Wednesday: Leftovers
Thursday: Pizza (Mushrooms (different kinds), roasted red peppers, roasted garlic, kale, mozzarella cheese, and goat cheese)
Friday: Lamb Chops, roasted vegetables (Brussels sprouts, carrots, and potatoes)
Saturday: Eggs, pork chops, and hash browns
Sunday: Alfredo with Shrimp, Roasted Red Peppers, and Peas with Garlic Bread

Monday: Leftovers
Tuesday: Steak and Cheese Sandwiches with Mushroom and Onions
Wednesday: Frozen Lasagna
Thursday: Baked Omelet (steak, mushrooms, onions, and provolone)
Friday: Leftovers
Saturday: Roasted Salmon and roasted sweet potato
Sunday: Leaving for Indiana
 
That is a great idea of posting your menu for the rest of the month LilyWDW. I am going to post mine out until our trip. Hopefully, clean out the fridge and freezer before we go...

Saturday - Frozen Pizza with salad. I have sooo much to do today. There will be no time to cook.
Sunday - Pot Roast with potatoes and carrots
Monday - Chicken and dumplings
Tuesday Minestone soup with rolls
Wednesday - Pintos beans with ham and biscuits
Thursday - Leftovers
Friday - Grill cheese sandwiches with tomato soup
Saturday - BBQ chicken, mac and cheese, green beans
Sunday - Roast, mashed potatoes, acorn squash
Monday - Meatloaf, rice and mixed veggies
Tuesday - Stroganoff over egg noodles and peas
Wednesday - Ham, alfredo noodles and asparagus
Thursday - Bratwurst, coleslaw, baked beans
Friday - Chicken tenders, mashed potatoes, sauteed cabbage
Saturday - Out to eat
Sunday - Fish, rice and veggie
Monday - Leave to Disney!! :yay:
 
Back at again this week,

Today- Turkey dinner with all the fixings...I need a pre-Thanksgiving meal to prepare myself. Ha!

Rest of the week-
M-Sour Cream pancakes and fruit with a giant cinnamon roll for dessert as a celebration for my sweet veteran husband. Happy Veteran's Day!
T-Chicken pot pie
W-leftovers-meeting Ree Drummond "The Pioneer Woman"
Thurs-Beef roast over noodles
Friday- Salmon rice broccoli
Sat- Pork roast, apples, cheesy potatoes
 
Yesterday--sloppy joes. Made double batch to freeze, woke up to find DS15 ate them ALL overnight. ;)

Today--spaghetti w/ bolagnese sauce
Mon--kung pao shrimp
Tues-- chicken w/ 40 cloves of garlic
Wed--beef fajitas
Thurs--out (sushi because I'll be driving into a larger town that has a good sushi restaurant)
Fri--leftovers or takeout

(I'm at the point now when I'm just trying to plan meals out as well. Fridays are usually super busy, so we've started getting Thai or Chinese takeout since I'll be home around 7 or 8. If i get home before that--we'll have something fast but homemade.)
 

Trying to get back on track this week--last week just seemed to not come together and then the weekend was spent going to a choir competition (both choirs dd is in got all Superior ratings!! :thumbsup2 )

So this week--

Monday-chicken tacos
Tuesday-stew with carrots (crock pot), mashed potatoes, lima beans and salad
Wednesday--left overs or sandwiches (church night)
Thursday--chicken and dumplings, butter beans, salad
Friday--chili with cornbread

Going to be cold this week so looking forward to some southern comfort food!

Hi Gang just the Hubs and I this week..

Monday - Stuffed Peppers for Hubs and Stuffed Zucchini for myself
Tuesday - Chicken Parm with Dreamfields pasta
Wednesday - BBQ baked ribs, rice, carrots and zucchini
Thursday - Hubs will have L/O pot roast and I'll have Lean Cusinie after Hula Hoop/Jump Rope class
Friday - we'll go out for cheap date night - maybe we'll try out 5 Guys finally
Saturday - Hubs is on his own as I'll be at an all day scrapping event and they provide lunch and dinner
Sunday - I'm making dreamfields Mac and Cheese..

Tuesday: Beef and Broccoli, Fried rice and egg rolls

Wednesday: Crawfish stew served over rice and a side of carrots

Thursday:Meatball Poboys, salad, and fresh fruit

Friday: Chicken tacos with Spanish rice and refried beans

Saturday: Spaghetti and homemade meatballs, garlic bread, and celery and carrot sticks

I always get such great ideas in here. I decided I want to play too. I just have a plan on what I'm going to make - don't know what night I'm making it yet.

Kung Pao chicken stir fry with peppers and summer squash
Grilled Tilapia with sauteed summer squash
Tossed green salads topped with crab cakes
Stuffed peppers with salad

I got two bags of salad mix and a bag of yellow and green summer squash from my mom over the weekend. I'm trying desperately to use it up this week before we leave for Orlando on Saturday.

Had to make a slight adjustment on the schedule this week. When I made it, I had no plans today. Well, now I have a meeting with the lawyer who is helping me with mom's estate and probate at 3PM. The soup is just too time intensive (especially for the first time making it) to do around that, so just shifting some stuff. Plus, tomorrow is supposed to be really cold so staying home sounds awesome!

BTW, if I can get happy thoughts and crossed fingers for me today. I am going to find out all my legal avenues with this. I am stuck selling a house that has already been on the market for 60+ days with no nibbles. I NEED to get on with my life, move, and get a job which I can't if I am stuck with this dang house.

I am going to have to try a roast in the slow cooker. Last time I did it in the oven I overcooked it and the thing was dry and blah. So, gonna try a slow cooker method sometime soon.

Also, thanks for the recipe site. Will check it out. I always LOVE new recipes especially these days when I am looking for recipes that are "safe" for me to eat with my medical problems!

I have been doing good at eating at home lately. We have had chicken and dumplings, tacos, french toast, etc.

Tonight is pepper steak stir fry with rice.
 
Crock pot roast, mashed potatoes, honey glazed carrots, and fresh baked artisan bread. I'm already hungry. It smells so good in here.
 
Mon: pineapple glazed pork chops, roasted Brussel sprouts and rice
Tues: baked chicken, brocolli and egg noodles
Thurs: probably pasta with turkey meatballs
Wednesday: tortellini soup
 
Hi all! My first time posting on this board. I never have time to cook during the week (I get home from work at 5 and DS goes to bed at about 6:30, so I'd be cooking the whole time with no chance to play with him!), but I've been trying to plan crockpot meals every Saturday and Sunday, and frequently those leftovers will get me halfway through the week anyway, and the rest I supplement with Lean Cuisines. I have scoured pinterest and have found excellent, tried-and-true chicken recipes that even my extremely picky DH approves of. This weekend I am going to make some Cafe Rio Chicken (http://www.chef-in-training.com/2011/09/cafe-rio-chicken/), but I want to try something new for the other night. Anyone have some good chicken or pork recipe recommendations? Preferably something from the crockpot? DH won't eat vegetables, so I usually just make the meat and roast myself some veggies separately with some olive oil. He also hates Mexican food, so any kind of chili, tacos, etc. is out as well.

here is my Mac & Cheese recipe if anyone wants it :

it is NOT low fat.. but its GOOOOOOD

1 can (10 3/4 ounces) Campbell's® Condensed Cheddar Cheese Soup
1/2 soup can milk (I use 1%)
2 cups shredded cheddar
1/2 teaspoon dry mustard - or a few good shakes
1/8 teaspoon ground black pepper
2 cups cooked and drained Elbows (I use dreamfields)
1 sleeve of crushed Ritz crackers (I have been using the everything ones lately YUM)
2 teaspoons butter, melted

Heat the oven to 400°F.

Stir the soup, shredded cheese, dry mustard, milk, black pepper in a sauce pan on low to melt the shredded cheese
Add the pasta tossing to coat then pour into a 1.5 quart casserole or 9x13.
Mix the cracker crumbs and butter in a small bowl. Sprinkle the crumb mixture over the pasta mixture. We like an even crust on the whole M & C so sometimes more crackers are required
Bake for 20 minutes or until the pasta mixture is hot and bubbling
 
bigsis1970 - your mac and cheese recipe sounds sooo good!! I do not have dry mustard - do you notice if that is missing from the dish? Thank you for sharing!!
