LSU25, I am so sorry for your loss.

This week has been interesting. Our stove died (new one is being delivered Friday), so dinners have been simple and easy. Thankfully I have an electric griddle, george forman grill, and toaster oven to help.

Tonight was sub sandwiches with cucumber salad and fruit.

Last night was bbq grilled pork chops, fresh green beans and warm bread.
Tonight - Stuffed Peppers, fresh green beans and maybe French bread.

My uncle and cousin are joining us and bringing tomatoes, lettuce, olives, and peppers. I also have sour cream and taco sauce. Pretty cheap meal for four people.

Hey all. Sorry I have been gone for so long. As I mentioned before, I have been dealing with a lot of medical issues. I have had an appointment with an allergist this past week for two separate instances of having an anaphylactic reaction to something. We still do not know what it was yet. I also have an appointment with another specialist for another medical issue (don't want to go into details as it is a TMI issue) on October 9.

Both of these problems have resulted in a restricted diet. So I have been spending the last few weeks getting used to what I can and can not eat. As such, I have been staying away from food threads because they make me depressed. I see all these great meals that I can not have at this time. On top of that, I have been afraid to eat because I worry if I missed something and will end up in pain. I have lost 14+ pounds in less then 2 months. Luckily, I had that (and more) to lose, but I need to start eating again and getting over my fear.

I won't be posting a meal list this week because I am still learning. Shopping is no fun because I have to skip all my favorites. I can't dine out because I can't be 100% sure on ingredients (especially since I can't have most preservatives atm). So I need to have a plan. Just hard to plan when you can't have many of your "normal" stand by items.

I am starting a new job soon and my husband will be telecommuting a couple days when I am in the office. I think our current plan is we each will cook on our telecommuting days, which will be interesting because I usually cook (or at least open packages on some nights, lol) six nights a week, and plan all the meals. He doesn't cook often but even he admits the kids like my cooking more. But this week I am home and have this menu set.

Monday: pasta with sweet sausages, salad
Tuesday: open house at one school, soccer for the other, nothing planned
Wednesday: grilled chicken and salad or maybe corn
Thursday: turkey burgers and oven roasted potatoes
Friday: ham and cheese calzones with soup
Saturday: teriyaki steak, rice and veggies

I am still meal planning but I've been slacking on posting. Here's what we've had/are having, starting from Saturday.

Saturday: chef salads
Sunday: crock pot chicken pot pie with biscuits
Monday: omelets
Tuesday: chef salads round 2
Wednesday: sloppy joes and baked sweet potato fries
Thurs and Fri: out of town for a work meeting, DH leftovers or on his own
Saturday: at a wedding

Here is this weeks line up -
Monday - Butternut squash ravioli, beets, Italian Bread
Tuesday - Zuchini and Rice Skillet dinner, leftover green beans or beets,
Wednesday - Italian Sausage, pasta sauce, pasta and Italian Bread
Thursday - Hot Dogs, French Fries, Roasted Carrots
Friday or Sunday - Roast, Cabbage Casserole and Carrots
