Eat at home 2!

Going to work my way backwards as I'm having a hard time remembering what we all ate-- DS and DH (He coaches him) don't get home from football practice till late in the evening so we've all been eating different foods, lol.

Last night- I had to work late so I bought a salad. My DD ate baked chicken and potatoes and my son had that as well when he got home from practice. DH opted for an Arabic dish, a falafel sandwich. My dad goes to the ethnic grocery stores and buys the frozen falafels- they are very tasty! So with the exception of me buying that salad, the rest of the fam ate in.

Sunday we had Chili leftovers & Spinach Pies.
Saturday was Chili.
Friday I really can't remember. Will ask DH later as it's bothering me. ;)

Tonight we are having spaghetti and a veggie.

I really need to join you! I have a pantry, refrigerator, cabinets and freezer full of food! We have got to eat some and get it gone or it will go to waste.

Tonight we are having a concoction my husband thinks will work - pasta with alfredo sauce, ham and peas. We will also have some garlic bread.

Lori

Can someone come and cook me dinner? Benadryl makes it hard to want to get up and do it. I have not had anything to each since lunch. Not really hungry but know I SHOULD eat something. But... so far away!

Tonight we are having a spin off of BLT's. We were blessed with a huge bag of restaurant quality ham slices like the type for breakfast items. We are frying the ham and doing HLT's. I think we will also have marinated cucumbers.

Lori

Well it's 2:30 and I have no idea what we'll have for dinner:rolleyes:. I think maybe breakfast for dinner. I'm really tired from taking our puppy out all night long so I want something quick and easy.
However..
I need to make a menu for vacation. We leave for the cottage on Saturday and we'll be there for 8 nights. The only way in to the cottage is boat access since it's on an island, and from the launch it's about another 20 minute drive to the nearest grocery store. So I need to have my menus planned so it doesn't turn into a 45 minute trip because I forgot one thing:rolleyes1

I will work on a menu and come back to post it.

) I started to have a reaction. Just moderate (nausea, issues breathing, tingling of the lips and tongues, but no swelling of the tongue or throat thankfully).
.

Allergic reactions are no fun! I hope everything is better? I am allergic to lobster. I never want that reaction again. I was out of commission for a whole week and swollen bigger than a Macy's balloon!

I start school again next Thursday. Classes will be Tuesday, Thursday, and Sat. Crock pot meals are in my future!
Tonight we are having empanadas again. I am stuffing them with ground beef again but am using shortening instead of butter this time and also green olives.

It stinks. Still really worn out. Just tired and not feeling 100%. I have to keep an eye on my heart rate based off of the meds I am on. Many of them can cause an increase in the rate so I have to be sure it doesn't get too high. Now I am getting seasonal allergies on top of it. I have heard that this feeling can hold on for a few days so hopefully I might get "normal" soon.

Oh, and the Benedryl really kicks my butt. I only take 1 during the day and then take 2 at night. Even with only 1 I have trouble getting up to do anything. But it is better then sitting here miserable. Also, some of the meds make me not hungry. All I have had today was a piece of toast at 8:30am, a sprite I have been sipping on all day, and I am JUST now getting hungry again (4:15pm).

Tonight will be hot dogs and mac and cheese. I am tired and it sounds good so I think I might actually eat it.

We'll be going to our vacation home for a long weekend again next week too. Last weekend we had:

Breakfast & Lunch/Snack: frozen ham & cheese biscuits
cheese tray from cheeses used in the macaroni w/grapes, blueberries, prosciutto, chocolate covered almonds & crackers
Peanut Butter fudge brought from home

Friday: French bread from Publix
salad with breaded, sauted goat cheese rounds
rotisserie chicken from Publix
pasta salad I made at home & took with us
roasted green beans
chocolate cake w/red velvet ice cream

Saturday: left over French bread
goat cheese & basil tortilla sandwiches
baby back ribs in the crockpot
homemade mac & cheese bake
fried okra
red velvet cupcakes

We ate out the rest of the time. I still have some appetizer recipes from recommendations I received here to try next time, but that's as far as my planning has gotten. I'm looking forward to seeing your menu.

I saw a poster was making homemade pierogies - I am impressed! They are so difficult to make, they were a staple with I was growing up and went to my grandmother's house who was from the Ukraine. Thanks for bringing back the memories:)

Aww, yay! We love them - so I do a big batch and freeze --- they aren't too hard, but they are time consuming. Worth the effort though!

Hope everyone is having a good week.

We just got back from the cape last night and it was fun but man eating out three meals a day was so expensive! It was disney pricing but not a lot of different choices. I missed not being at disney.
We did come back with four new hermit crabs!

Anyways getting back in the swing of things school starts Tuesday and sports start back up next week too.

Tonight will be chicken and potatoes

Tomorrow hot dogs

Saturday not sure......

Sunday .............

I just had the best dinner ever and had to share!

Tonight...not sure yet...but it will definitely include the ham we were given. I will either do leftover BBQ ham sandwiches and marinate cucumbers or Scalloped Potatoes with Ham, frozen veggie and French bread.

Lori

Can you tell me how you make your burrito bowls? My dd loves Chipotle, but I don't. If I could make it for her then maybe she will stay off my back about going all the time.

Day 3: slow cooker beef paprikash over buttered barley, carrots, baked pears
Day 4: baked beans, chicken and apple sausage, broccoli slaw, grape salad
Day 5: slow cooker mustard and maple chicken thighs, green beans, boiled new potatoes, strawberries
Day 6: tilapia, rice, broccoli, oranges
Day 7: bbq salmon, roasted curried cauliflower, strawberries

I'm happy to have an abbreviated meal plan to share, since I'll actually be cooking a few days in a row for the long weekend. Most days I have cereal for breakfast & lots of veggies & fruit the rest of the day. Hummus is my go to for dipping veggies in. Okay, here goes my menus:

Sunday - Thurs: Quinoa w/black beans, brown rice w/shrimp, eggs, & tomatoes, quinoa w/steamed vegetables (My guys feed themselves most days)

All breakfasts Friday thru Monday will be breakfast casserole or make ahead bacon, egg, & cheese biscuits. Bread for dinners will be from a local bakery.

Fri: Burgers, Potato Salad, LTT's Ooey Gooey Toffee Cake w/Vanilla Ice Cream

Sat: Homemade Cheese Puffs to tide us over until we get back for dinner, take-out pizza, Lemon Chess Bars

Sun: White Cheddar & Apple appetizer w/Crackers, Grilled BBQ Chicken, Crock Pot Mashed Potatoes, Grilled Corn, Dessert Of Choice

Mon: Mussels appetizer, Grilled Rack of Lamb, Crock Pot Polenta, Sautéed Spinach, Dessert of Choice

Tonight: nachos
Sunday/Wednesday: chicken and rice casserole, black eyed peas, fruit
Monday: she has late class/fend for myself
Tuesday: her birthday so something I pick up for us and ice cream
Thursday: pigs in a blanket and mac and cheese

Friday is pay day and groceries.
