I keep it very simple. When I make my gravy from the pot roast drippings I put 1/2 of it back to use in my pie. I chop up leftover roast and veggies and also use any veggies I have hanging out my fridge that are left over. I mix them together with the gravy. I take mashed potatoes (normally I make extra earlier in the week and put them in fridge) and mix in a little garlic powder. I spray a baking dish and put in the roast/veggie/gravy mix and spread the potatoes over the top. I brush the top of the potatoes with olive oil and then dot with a few pea size pieces of butter. Into the oven at 350 for 40-50 minutes and that is it. I also sometimes make it in the morning and stick it in the fridge. When DH get's home he sticks it in the over and dinner is ready in a short time.

I am roasting a chicken for dinner. It's taking forever:rolleyes1 And I am roasting some potatoes along with it. This morning I made French Toast for breakfast and then we all went to the museum. Today is free day and we all had off:)
 
Sun - Take Out Thai
Mon - Rotini with Meatballs and Sauce, Fresh Blackberries and Blueberries
Tues - Crockpot chicken tacos with fresh guacamole and salsa, Mexican Rice, Fresh Pineapple
Wed - Homemade Chicken Pot Pie, Cucumber Salad
Thurs - Chicken Fajitas, Refried Black Beans, More Blackberries and Blueberries
Fri - Pizza or Homemade Cheddar Quiche, Roasted Zucchini, Sliced Apples
Sat - Out
 
Monday - turkey stuffed bell peppers, salad

Tuesday - salmon, rice, broccoli

Wednesday - turkey meatloaf (the second half pound from Monday night), butter noodles, peas

Not sure about the rest of the week yet :scratchin:

Wed- Chicken, spinach rollups with corn
thursday- grilled cheese and soup or soup and cornbread
friday-chicken burgers and rice
sat-alfredo pasta, chicken, and bacon bits
sunday-gluten free french toast, hashbrowns,fruit


monday-stuffed green peppers
tuesday-omelets
wed- chili dogs
thursday- chicken with black beans and rice
friday- chili and cornbread
 
Sunday: Hot Dog wraps, fries, and rice. Dh said he would cook, cuz I had a migraine.
Monday: Chicken-n-Dumplings
Tuesday: Eating with In-Laws
Wednesday: Meatloaf, baked sweet potatoes/reg for DD, Broc casserole
Thursday: Homemade Pizza and salad
Friday: Lasagna Rolls, salad
Saturday: Dinner Theater fundraiser
 
Last night was a bust. I am recovering from a double ear infection and ended up napping too late. So I had frozen pizza and mom had a scrambled egg sandwich with fruit.

So tonight will be spaghetti and meatballs.
 
Sunday night was taco night with all the fixings and refried beans.
Monday night was pot roast from the crock pot, white rice and fried sweet plantains.
Tonight is tequila lime and chipotle chicken breast, yellow rice with chorizo and sweet plantains again (we bought a bunch on sale last week when they were green an now have to eat all the ripe ones leftover lol!).
Tomorrow is leftovers from taco and pot roast night.
 
Last night ended up being the tuna noodle casserole. My stomach wasn't the happiest so I didn't want a tomato heavy dish like planned. Tonight was the tomato soup with grilled cheese. Tomorrow will be hot dogs and fries.

I need to start figuring out my menu for next week. This thread will definitely help with that!

Sunday.. dinner at my parents. Baked Haddock with peanuts and broccoli rabe. It was outstanding!!!

Monday.. grilled chicken burgers, salad.

Tuesday.. Baked Chicken thighs, tomato herb couscous with peppers, and zucchini with garlic tomato sauce.

Wednesday.. I don't know. I have my friends kids for dinner so I think we'll make all the kids spaghetti and meat sauce and dh and I can have leftover turkey chill

Thursday.. Chicken Wraps with veggies

Friday.. Just dd and I. Likely a tofu stir fry

Saturday.. DD and I again, maybe egg white omelettes, smoothies, 12 grain toast and turkey bacon.

I am loving trying out new healthier recipes!!!
Since January 1st I have lost 8.5 pounds and Dh has lost 10!!:cool1:
I still have about 30 I would like to lose but Dh only has 15 to go:)

i have been doing so much better on not eating out. yesterday we had taco chili soup (skinnytaste.com). tonight we had pork tenderlion (pernil), black beans and rice, steamed brocolli (skinnytaste.com). tomorrow night we are having breakfast for dinner.
 
Yesterday: sticky ribs, potatoes, green beans
Today: pizza hut
Wed: pea soup, rolls
Thurs: chicken gumbo
Fri: korean bbq pork lettuce wraps and rice
Sat: cincinnati chili
Sun: cream of broccoli soup

skinny taste is amazing! She makes delicious things that are weight watchers friendly and you don't feel like you're eating diet food. my family actually prefers the skinny taste arroz con pollo recipe to my original recipe. It's so good!
 
I started out great... but, too many things got in the way of sticking to our meal plans....

Sunday My older 2 ate at my mothers and the youngest had a sleep study and so we just grabbed dinner at the hospital cafeteria.
Monday, I took my daughter out for a birthday lunch. Just her and I at O'Charleys. Don't even remember what I made for dinner. Probably just sandwiches. All I know is that the two oldest were complaining of belly aches.
Tuesday, My daughter stayed home sick with a tummy bug. I ended up making Turkey soup in the crock pot, plus they has sandwiches and salad.
Tonight they decided on Tacos.
Tomorrow, Polish Sausages & Potatoes in the Crock pot, salad
Friday=Movie Night. We are watching Princess and the Frog and so DD wants me to make Gumbo. HA! I think it will be Baked Chicken (Cajun spices) w/rice, salad, and .... DESSERT SUGGESTIONS!!??
Saturday - Leftovers.
Sunday - Tuna Casserole & Salad.
