This week's menu:

Sunday - Wicked Chicken Casserole and cranberry sauce
Monday - Homemade Turkey soup & sandwiches (got home late due to snow storm)
Tuesday - Broiled salmon, rice and peas
Wednesday - Keilbasa, baked beans, tossed salad, picked beets
Thursday - Roast beef, baked potatoes, broccoli
Friday - Pork chops, alfredo noodles, green beans & applesauce
Saturday - Baked ham, scalloped cheesy potatoes, squash and corn

Monday we had picadillo and white rice with ripe sweet fried plantains
Tuesday we had lightened up alfredo sauce (I use 8oz of neufchatel cheese, 1/2 cup of parmesan, and 2 cups of 1% milk with 1/2 cup of cream instead of all cream) with sauteed chicken breast and broccoli.
Wednesday we are eating leftovers ;)
Thursday we're taking my little cousins to McDonalds (their request) to eat and play.
Friday Dinner at Chevy's courtesy of a groupon we have.
Saturday is hotdogs Colombian style (with bacon, mozzarella cheese, pink sauce [mayo & ketchup], pineapple sauce, garlic aioli, and topped with either crushed up potato chips or potato sticks.) They're street food here in Miami and I am craving them so bad. This baby has made me crave hotdogs so much!
Sunday is clean out the pantry/fridge/freezer day so whatever we have is what we're making, lol! We're moving on Feb. 16 so I need to downsize a bit, lol!

This recipe is close to how we eat our Colombian hotdogs. We just add bacon, cheese, and garlic ailoi because that's how our fave street vendor makes them.
 

Sunday - Out (switched last Sat and Sun - had leftovers last Saturday to save our evening out for Sunday:)
Monday - Black Bean and Egg Burritos with Salsa, Guac, and Cheese / Blueberries
Tuesday - Stuffed Scallops, Grapes, Biscuits
Wednesday - Throw-Together/Clean Out the Fridge Ricotta Pasta with Hot Italian Sausage, Blueberries
Thursday - Steak Fajitas, Chips with salsa and guacamole, Pineapple
Friday/Saturday - Mom's House:)...

WICKED CHICKEN CASSEROLE

1.5 - 2 lbs chicken, cooked & chunked - about 3 cups (I use the 3 pack of boneless, skinless breasts, but you can use anything you want)
1 bag frozen peas (cooked)
2 cans of mushrooms, drained (or 1 package of fresh, cooked)
1 package of stuffing mix
1 can cream of chicken soup
2/3 soup can of milk

Preheat oven to 350°

Grease a 2 qt casserole dish.
Layer dry stuffing mix in the bottom, just enough to cover it.
Layer in peas
Layer in mushrooms
Layer in chicken
Mix soup with milk and pour over the top.
Make the rest of the stuffing mix according to the package directions and layer on top.
Bake at 350° for 30 minutes

I've made this up ahead of time (the night before or in the morning) and its fine, I just cook it a bit longer to heat it through when its been in the refrigerator. I've also made it and frozen it and its been ok, but a bit drier.

You can substite any vegetable you like. I believe the original recipe called for green beans, but one time I was out and substituted peas and my family liked it better that way. I've also substituted cream of mushroom soup (again, I was out and had the mushroom soup on hand) and its come out fine.

I've also done it with turkey to use up the thanksgiving leftovers and its good that way too.

I serve it with cranberry sauce.

It's a family favorite and I usually make it once a week. My kids love it and never seem to get sick of it.
 
This morning I made up some Venison meatballs before work. Dinner tonight:

Meatballs with Brown Gravy
Steamed Rice (Instant Potatoes for the Rice haters in the family :rolleyes1)
Sautee'd Whole Green Beans
 
Tonight I had homemade pizza with salad while mom had shrimp with salad.

Tomorrow night will be French dip sandwiches with fries and fruit.

Saturday night will be takeout of some sort as we are taking my Grandma home from the rehab facility. I am so excited that she gets to go home after almost 4 months.

Sunday I am planning on making a big pot of chili with all the fixings to eat while watching the game.
 
Hello all!! I am new to this board. I love to menu plan as it keeps me on budget, which is a must for our family. I even have a post on my blog on Mondays that was Menu Plan Monday. Lately though, I have fallen behind due to 'life' but I know that's just an excuse. I find that when I make our menu, it helps dinner be on the table early & cuts costs in so many ways. It also help eliminate spoilage from our fridge because everything gets used. I am looking to start back up on Monday and stick with it.
 
I have been only back from Disney a week and I have already have my next two vacations booked! Am I addicted or what??? :rotfl2:

Friday - Pot roast

Saturday - Cream of chicken over rice with brussel sprouts

Sunday - Meatloaf, mashed potatoes, and green beans

Monday - Leftovers

Tuesday - Chili in the crockpot

Wednesday - Salmon, rice and broccoli

Thursday - Pizza

Friday - Buffalo chicken sandwiches, slaw and homemade fries
 
Home with DD who has strep so no boys this weekend. Sticking to our menu plan, sloppy joes, Mac & cheese and peaches tonight just making half of what I'd planned since we're sans teenage boys.

Tomorrow will be crockpot pulled chicken and Rice a Roni.
 
First time n this thread. I print out blank calendar pages and find I do much better when I plan most of the month at a time. Our next few days:
2/1: clean out the fridge/leftovers.
2/2: soup and sandwiches; I bought a value pack of lunch meats and crusty rolls from BJ's yesterday.
2/3: everyone fends for themselves every Sunday. I did buy buffalo bites, fries and soda for game night though.
2/4: pasta for 3 of us; ds who does not like pasta gets Gortons fish or a veggie burger
2/5: broiled pork chops, rice and black bean salad
2/6: Monte cristo sandwiches (French toast with ham and cheese) and fruit
2/7: leftovers. Most Thursdays are leftover nights
2/8: either meatloaf or burgers (I use ground turkey for each, so whichever I am in the mood for), probably baked potatoes.
 
Superbowl food: Cranberry Jalapeno glazed crock pot wings and Trisha Yearwoods sausage hors d' Oeuvres.

I don't care who wins, I am just watching for the commercials. :rotfl2:

Oooohh, sounds yummy. We had Cincinnati chili just last week.

Tonight: hot dogs, fruit, chips and homemade salsa, deviled eggs

Monday: Chicken and dumplings

Tuesday: Orange flavored roast duck, pilaf, broccoli

Wednesday: Leftovers

Thursday: Halibut, curried rice, veggies of some sort
