Eat at home 2!

I am trying to eat at home as much as possible. I went to cook a pizza yesterday, but our oven wouldn't heat. Stove top works though. Repairman is coming tomorrow AM.

Sunday - chili
Monday - bratwurst, mashed potatoes, sauerkraut, mixed veggies
Tuesday - leftover chili
Wednesday - ? - have to see if oven works
Maybe BLTS or digiorno pizza, if oven works
 
Okay~ Back to work, the partying is finally OVER!!! :faint: It felt so good to sit together at the table (just we 5) for a nice dinner last night. We have eaten out, and had folks over, and eaten at other people's houses so much in the last few weeks...I was just ready to get back to our own little family dinner table!!! :goodvibes

Dinner tonight is simple and "boring", but sounds so delicious after three weeks of eating just "holiday" fare:

Spaghetti with Meat Sauce
Garlic Toast
Steamed Broccoli
 
Made a turkey noodle bean soup today with some of the leftovers. Having it now as my lunch and it's quite delicious considering I followed no recipe and just tossed in whatever leftover things I had handy in the fridge. I have to make a shepherd's pie for tonight but the necessary dishes are in the dishwasher so I'm waiting on that a little bit.

We still have half a turkey pot pie in the fridge and I'm beginning to think it's going to have to go to the garbage. Though DH usually LOVES my pot pies, this time he complained about the gravy so he's not interested in finished up the leftovers. However, he doesn't really like shepherd's pie so maybe if he has to choose between one or the other, he'll choose the pot pie.
 
My menu starting 1/02 and ending 1/13. We returned home right before Christmas and have been busy with catching up at home and celebrating the holidays. I hope everyone has a safe and budget friendly Happy New Year!

Wednesday (first day back at work since 12/12/12, ugh)– making it easy on me, salad and left over bean soup (for DH) with open faced grilled cheese.
Thursday – Part Deux night - Crockpot green beans with ham (cut up and bagged with the ham bone from Christmas dinner)
Friday –– Baked Fish with Couscous and Italian Style Veggies
Saturday –Grilled Beef Burgers ( it supposed to be warmer here (40’s) so I can grill them outside) with baked mac and cheese and salad
Sunday – Chicken and Dumplings (made healthier using chicken breast and GF dumplings) with carrots
Monday – Tuna croquettes with veggie couscous and mixed veggies (just like the salmon ones only we use tuna)
Tuesday –- Pat Deux – left over chicken and dumplings from Sunday with salad
Wednesday –Oven Baked Ham (had in the freezer) with roasted sweet potatoes and kidney beans
Thursday – Part Deux night – pork and veggie fried rice using left over ham with veggie pot stickers
Friday – Chicken Barley Soup with grilled cheese sandwiches
Saturday – Dinner Out – using up gift cards we received for Christmas
Sunday – baked fish, veggie couscous, peas/carrots


We spent $70 at Kroger which is a little more than normal based on the above menu but I was able to get a ham and a Turkey Breast which I put in the freezer for a great price (less than $25 combined) and I haven’t used them in the above plan We will get 3 or 4 meals from each of them over the next couple of months. Due to our being gone for so long we also needed milk, bread, and eggs replenishment.
 

Ended up with pizza and a salad tonight. At least it was home made pizza! I started back with my workouts and was simply too tired for the work needed for Shepherds Pie. I was still within my calories though!
 
It has been a busy few days and we have not been good about eating at home.

Monday night we went out for Mexican
Tuesday night we went over to my aunt's for dinner
Wednesday we had Chinese before grocery shopping
Last night we had sandwiches with soup
Tonight we had chicken alfredo with salad
 
In the interest of using up stuff:
Whole wheat tortillas (a mistake I won't make again!)
Salsa (another mistake-bought an off brand instead of my regular)
Shredded cheese

Layer, spray top and bottom with cooking spray, then cook slowly in a skillet until the cheese is melted and the tortillas are crispy. Fold and cut for a poor woman's quesadilla. I'm too lazy tonight to even bother with opening a can of beans. Oh well, I'll fix a better meal tomorrow.
 
New Years resolution to eat in MOST of the time. Off to a good start so far...haven't eaten out all week! The weekend will be a true test though.::yes::
Hoping to cut down to one meal out per week. We shall see. Winter is easier for me b/c I hate going out in the cold. Summer is helpful because DH can grill out which means I don't have to cook.
I made a month long menu on the 30th and that really helps me stay on track.
This week we had:
Monday & Tuesday I worked so DH and the kids fended for themselves. I didn't order out at work even!!
Wednesday Shepherds pie
Thursday potato soup and grilled chicken Caesar salad
Friday homemade pizza and salad
Saturday- planning for BBQ chicken sandwiches and fries
Sunday- family fun day...prob a cheap meal out somewhere and take the kids bowling

Next week trying some new recipes. Will let you know how it goes.
 
Updating for this week. My oven is still not fixed. The repairman didn't have the part. I have a freezer full of stuff that goes in the oven. It will hopefully be fixed Monday.

Wednesday - Baked ziti, peas, and garlic bread

Thursday - Pizza

Friday - Roast chicken with carrots and potatoes

Today was quesadillas with homemade salsa and guacamole. I brought home a cooler full of lower 48 produce from my vacation, so it was really, really good. :goodvibes

Sunday: Beef fajitas (to finish off our salsa and use up our actually unwrinkled red peppers)

Monday: Thai red curry with shrimp, red peppers, snow peas, and pineapple

Tuesday: Scotch broth and rolls

Wednesday: Korean bbq pork, rice, korean spinach, kimchi

Thursday: Soup (already made and frozen) and cornbread muffins
 
Our last week changed a bit. I always make a plan and then we decide we'd rather have something on a different day....

So, he's what I have on paper for this week...

We're giving this a shot this week! We used to eat at home a lot, but as my sister and I got older and our schedules got more busy, we started to eat out more. Now, we eat at home maybe three times a week.

So here's this weeks plan-

Sunday:
-Breaded chicken tenders
-Cucumber salad
-Beans (The veggies don't really fit in, we are trying to use up old things)
-Home made macaroni

Monday:
-Minestrone soup (From a bag, just add water and heat!)
-Salad
-French bread

Tuesday:
-Chili
-Corn bread
-Carrots and celery with dressing

Wednesday:
-Macaroni and Cheese with tuna
-Salad

Thursday:
-Tostadas
-Carrots and celery with dressing

Friday:
-Chicken sausages
-Spaghetti
-Salad

Saturday: Eat out night
 
Sunday.. Butternut squash soup, turkey sandwiches.

Monday.. Baked pork, asparagus, carrots, baked potaoe

Tuesday.. Turkey Burgers, Salad

Wednesday.. Spaghetti

Thursday.. something quick for practice night, breakfast for dinner maybe

Friday... Wraps (chicken, cheese, veggies etc)

Saturday.. Grilled Chicken, brown rice, broccoli
