Hey guys hope you don't mind me swiping some ideas from you. I cook everyday but 2 times a month we order pizza :goodvibes Now that school is back in full swing and so are the sports I'm pulling my hair out. :rotfl2: I go from Cross Country to Cheerleading to hockey pretty much 6 days a week. I use my crock pot almost daily. You guys have some amazing ideas and I Thank You for them.

One tip I have is if you are using the crockpot every day anyway, make double batches of soups and stews or meatballs and sauce etc. That way you can freeze it for later in the week.
 
I am new to this thread and would love to join in on the fun. I'm more motivated to plan our meals in advance after reading a few pages. :) You guys have some really great dinner suggestions!

Here is our plan for the week:

Monday: Breakfast for dinner (scrambled eggs, turkey bacon, fresh fruit)

Tuesday: Crockpot Beef Enchilada Soup

Wednesday: Tilapia, sauteed squash & zucchini

Thursday: Fast food - DS has a football game that night so we will probably pick up something quick on the way home.

Friday: Date night with DH, not sure where we will eat yet

Saturday: Smoked brisket, broccoli & red pepper toss, sauteed peppered mushrooms

Sunday: Spicy basil chicken, rice, avocado

What's crock pot beef enchilada soup??

I got it from a fitness website. My DH will be out of town Tuesday night, and it's one of those recipes that I am going to test out on my son first. LOL

Beef Enchilada Soup

12 oz. chopped roast beef
2 cups frozen corn
1 cup petite diced tomatoes
1 cup enchilada sauce
2 cups Great Northern beans, rinsed and drained
1/4 cup fat-free refried beans
2 tablespoons tomato paste
4 cups reduced-sodium beef broth
4 green onions, chopped
1 cup cooked brown rice
1 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon minced garlic
Sea salt and pepper to taste

Place roast beef in a slow cooker. Add all remaining ingredients; stir well. Season with salt and pepper. Cover and cook on HIGH for 3-4 hours or LOW for 6 hours. Stir thoroughly before serving. Makes 4 servings (2 cups per serving).
 
Had my son and his wife and their five kids (well, the baby just breastfeeds) for dinner, and this is what we had:

veggies and hummus to dip them in (we always put these out while making dinner, so the kids can snack on them)
Falafel sliders on mini-buns
Pan pakoras (a new recipe I found - like pakoras but baked in a pan - good and much lower in fat than the deep-fried kind!)
Vegan Caesar salad
Black bean and veggie salad
vegan ice cream for dessert

My weekend was a disaster... :sad2: We had "football food" Saturday for dinner. It consisted of a lot of butter and deep frying. It all tasted delicious...until I spent all day Sunday sick from the greasy overload. :crazy2:

Tortellini Vegetable Soup
Garlic Toast
 
Wednesday dinner in Chicago. We are going to see Madonna:) I want to go to XOCO for lunch. Dinner will probably be at the United Center.


My DD and I will be at that same show! I can't wait!

I am cooking more at home now because I will be paying off one of my cars next Friday, then going strong on getting the last one paid off after that.

Monday-pork loin with fig sauce and potatoes
Tuesday-vinegar braised pork chops (there was a sale on pork, can you tell?)
Wednesday-out at Madonna concert
Thursday-turkey burgers
Fri-some sort of chicken with left over herbs
 
Here I go again. This time I will post 2-3 days at a time.

Sunday: Meatloaf, scalloped potatoes, and veggies
Monday:Grilled chicken, baked potatoes, grilled veggie kabobs
 
Saturday: Buffalo Chicken, baked apples, devlied eggs (kids requestes all of these items, it was an odd combination)
Sunday: Italian Beef sandwhices, baked apples, macaroni salad
Monday: buffet of leftovers (Chili made for lunch on Sunday, Itlian Beef Sandwhiches, baked apples, macroni salad, refried beans, and cheese quedillas)
Tuesday: Spagetti, salad, garlic bread
Wednesday: pizza
thursday: Chicken and noodles, salad, garlic bread
Friday: hot dogs, french fries, fruit
 
Today is a cool, rainy Monday and I feel BLAH! :( I am changing tonight's menu to comfort food:

Meatloaf
Mashed Potatoes
Oven Roasted Zucchini and Sweet Onions
 
Cross out tonight. I just ordered pizza and breadsticks to be delivered. I did something to my back this morning and can not stand the thought of having to stand and cook. I was putting groceries away and knelt down to put stuff in the vegetable drawer and I felt something go "pop". No idea what! Ugh!
 
I'm joining in!
Last night was beer can chicken on the grill with grilled zucchini and baked potatoes.
Tonight was crock pot chicken enchilada soup with homemade corn bread muffins.
Tues: sloppy joes with chips
Wed: some kind of pasta with homemade sauce w/arugula salad
Thurs: Leftover chicken enchilada soup/muffins
Fri: ??
Sat: eat out
 
I have a question for my fellow dumpling lovers.

When I make chicken and dumplings I find my dumps (store bought or homemade) turn out mushy. They either disintegrate and ruin the whole dish or they're still slimy inside. :confused3

Here are a bunch of questions to consider: :scratchin

1) What recipe do you use?
2) Do you push them under the surface?
3) How big are your dumplings when you drop them in?
4) How long do you cook them?
5) Lid on or off?
6) Does using the crock pot change things?

Thank for any tips or input! :worship:
 
AuntieKels, I cheat and use Pillsbury country style biscuits. I roll them into tiny balls, put them into gentle boiling liquid and put the lid on. 5 minutes later....dumpling perfection! It's a family favorite!
 
Some changes from our original plan:

Mon: out to dinner with my BFF and DH and DD went to dinner. This was a re-do from last Monday because I was sick.

Tues: Crockpot cheesy chicken and rice, green beans

Wed: undecided at this point. Likely a free for all after dance class, maybe eggs and toast. We were going to have dinner out but we went a little crazy on DD and my birthdays...YOLO :-)
