First week back to school for my little one and she's home sick this weekend. She is coming down with a cold. We had a huge weather change yesterday. She had her gall bladder out this summer (age 6) and we went to see the surgeon yesterday. No cancer, thank God! But she still has acid reflux problems so we have to go back to see an Gastro doc. We are switching docs though.

I had both school and work this week so I am getting feeling for what I will have to do for dinners. The two days I have full day school, I have to make a crock pot meal so my hubby can get things ready. The rest of the week it has to be meals I can get done in 30 minutes or less. I work til 6PM. The weekends I will leave for bigger meals like Arroz con Pollo or roasted chicken.

This is what we had this week:

turkey burgers and sweet potato fries
homemade tomato soup and grilled cheeses on Texas Toast
crock pot lasagna
crock pot chicken tortilla soup
beef and bean burritos in the oven

Next week:
hamburgers and mushroom gravy over mashed potatoes
crock pot beef stew
roasted mojo chicken thighs and Spanish rice
peanut butter egg rolls and veggie fried rice
spaghetti and oven meat balls

I am making sweet pickles and pickled eggs this weekend.

Been VERY bad about eating at home here! My car broke down last week and it's thrown us both off. Won't have it back until Monday and will make a proper market run then.

Tonight is not delivery, but DiGiorno. :rotfl2:

Tomorrow will be parmesan-crusted chicken with tri-color rotini.

Next week...TBD, lol.

Thursday: halibut, saffron rice, broccoli

I actually made it out of Fred Meyer for only $75 for this week! I'm so thrilled because that's what I want to spend, but it's been more like $150. I adjusted my recipes to be less expensive. For example, I'm making my lasagna with cottage cheese instead of ricotta(an idea I got from a thread here on the Dis: 1970's retro style lasagna)---$2 vs. $5. I bought bacon scraps instead of bacon for the quiche--$2.50 per pound instead of $6 per pound. Also, I'm using a bit of bacon in my pea soup instead of buying ham hocks (which added $5 to the cost of a pot of soup). I also bought the stuff on markdown due to being near the pull date. I think it'll okay since it will all be eaten quickly. I spent almost a $1000 bucks last month on groceries because we had company, but even my regular $600 is wayyy to much for 2 people. Hopefully we can sustain this.

Monday: BBQ Salmon and Stir Fried Vegetables
Tuesday: Shrimp Stir Fry with Rice and Spinach
Wednesday: Slow Cooked Chili and Bread
Thursday: Left over Chili and Bread
Friday: Parmesan and Sage Crusted Pork Chops, Mashed Potatoes, and Green Beans
Saturday: Chicken Meatball, Bell Pepper, Onion, and Pineapple Skewers and Corn on the Cob
Sunday: Roast Chicken with Roasted Potatoes and Stuffing

We will see how well it goes!

I've been wanting to join in for a very long time. Now is the time!:cool1: I'm only going to record our dinners for the week. Most of these items are already made. Just need to take them out of the freezer.

Sunday: Baked boneless pork chops, stuffing,and corn/green bean mix.
Monday: Stuffed Peppers w/salad.
Tuesday: Bean burritos, rice
Wednesday: Pasta, salad, garlic bread
Thursday: Meatloaf, Hidden Valley Roasted Potatoes, broccoli and corn casserole.
Friday: Pizza, salad
Saturday Grilled chicken, baked beans, and corn on the cob
 
Last night we had sandwiches with leftover soup.

Tonight we had some pulled pork (from the freezer) over french fries, with cheese. It is a take on one of my favorite meals from a local BBQ restaurant
 
Sun - Rotissiere chicken (from the deli) and baked potatoes

Mon - BFF is taking me to dinner for my bday. DD and DH will have dinner out while doing some bday shopping for me.

Tues - Chicken quesadillas and refried beans

Wed - Meatballs and mashed potatoes

Thurs - Out to dinner, it's my birthday

Fri - Sloppy joes, chips, fruit

Sat - Weenie roast at the campground with my parents for my stepdads and my birthday

Sun - Spaghetti and garlic toast

Mon - Cheesy chicken and rice

Tues - Eggs, sausage and toast
 
Hi Everyone! I love this thread but it just got away from me over the summer.. I have started the BL Fall Challenge and planning dinners helps me lose weight vs. eating out! so our menu is as follow.. this week Myself, C and Ky..
Yesterday - our moblie home park had a FREE BBq so we ate there!
Tonight - Ham Steak, boxed Mac and Cheese, Green Beans and 7-up Biscuits
Tuesday - C will cook, the boys will have MeatBall Subs, I'll just have some pasta with sauce and another biscuit after Zumba
Wednesday - Shepard's Pie and Crescent rolls
Thursday - C will cook, Chicken Tenders, Chicken Rice, Green Beans - I'll eat after Zumba
Friday - DiGiorno 3 Meat Pizza, Chips
Saturday - ???
Sunday - Beef Stew after Ice Hockey and (making more) 7-up Biscuits

Last night we had Cincinnati Chili over baked tater tots with salad.

Tonight we went out for a late lunch, so we will snack tonight.
 
Today we didn't have much food in the house (I just went grocery shopping now) so for supper I took some leftover pasta with vegetable-tomato sauce, added one lonely leftover vegan sausage cut into pieces and reheated it in the microwave. I steamed some cauliflower, added a big green salad, toasted and buttered some slices of flax bread and sprinkled with a little garlic powder.

Tomorrow I think will be garlic-broccoli-chickpea bake with a spinach/mandarin orange slices salad.
