I had a crazy week, but only ate out once.

Tonight we are having bratwursts with homemade German potato salad.
 
Tonight: Canned ham and bean soup, pumpkin english muffin, baked pear
Sunday: Feeling ambitious - white beans and kale (w/ cranberries, onions and cashews), beef roast with tomatoes and italian seasonings in the slow cooker, oranges, vanilla and almonds for dessert
Monday: Sunday's leftovers
Tuesday: Skillet dinner of kielbasa, sauerkraut, onions and apples. brussels sprouts tossed in walnut oil on the side. I think I might deserve a chocalate dessert.
Wednesday: Tuesday's leftovers
Thursday: Chicken tenders in BBQ sauce, baked (well, microwaved) sweet potatoes, corn, peach. That's a mighty yellow/orange/red supper, ain't it?
Friday: Bay scallops and green beans in lemon sauce over a starch (haven't decided between rice, fettucine or red potatoes). Maybe a little microwaved lemon cake dessert.
 
What a great thread! You ladies have indeed inspired me to get better organized and plan out my meals. I've recently fallen in love with my crockpot again. As a working woman on the go with 2 kids in sports, no other invention has ever been any more genius than the crockpot in my opinion! It is a bit more challenging for me though since my son and hubby are type 1 diabetics I have to keep the meals on a low carb basis. Either way i'm currently working on a weekly menu and shopping list to prepare for the upcoming week. We are also penny pinching for our Disney Christmas Vacation! Hoorayyy!!

Tomorrow will be Lasagna and a Salad.

Next week's meal list is:
Monday: Eggs, Sausage, and Toast
Tuesday: Angel Hair with Shrimp and Tomato Sauce and Salad
Wednesday: Crock Pot Beef and Broccoli and Rice
Thursday: Leftover Beef and Broccoli and Rice
Friday: Creamy Chicken Paprikash and Salad
Saturday: Hamburgers, Corn on the Cob, and Sliced Tomatoes
Sunday: Easy Salmon Cakes and Salad
 

I'm back! I've checked in here sporadically in the past, but I'm definitely on an eat at home kick for the new few months before our December WDW trip. We haven't eaten out in two weeks now. I even invited a friend over for lunch instead of meeting her at a restaurant last week. DH still buys lunch at work nearly every day, but I'm hoping he'll take his lunch at least once a week. Small steps!

Our freezer is well stocked with ready to cook meals, so that makes menu planning even easier. Here's our plan for the week.

Sunday - Veggie lasagne and spinach salad
Monday - Citrus Salmon and mixed green salad
Tuesday - leftover beans and rice (which I froze a couple of weeks ago)
Wednesday - Homemade pizza
Thursday - Crockpot beef stew
Friday - Tortellini
Saturday - TBD - possibly eating out if we decide to take the kids to an MLB game
 
cant remember if I ever came back to post that the crock pot lasagna was a hit and now people at work are doing it and everyone has reported loving it .

I did use the noodles you dont have to preboil but one of the girls just used the regular noodles and said it was good .

need you guys to keep them coming this week we did not eat out at all and I didnt buy lunch out at all . My Dh was at the station a lot this week and cheated buying lunch and dinner out for 3 shifts LOL

I am glad it worked out for you. I also like the Trisha Yearwood crockpot mac and cheese but I cut back on some of the cheese. It's really rich.

We went to see Madonna in Chicago on Wednesday and ate out at XOCO by Rick Bayless. I will blog about the Chicago trip later today.

I might make tempura shrimp and veggies today and thai style shrimp later in the week. Monday and Tuesday are my ify days since I am in class all day.

I have ZERO interest in planning a menu today but it needs to be done so here goes.

Sunday Crockpot Chicken and Dumplings and salad

Monday Spaghetti and Meatballs,Garlic Bread, Salad

Tuesday.. Breakfast for dinner

Wednesday..Hamburgers and Broccoli

Thursday.. French Dip sandwiches

Friday .. Spaghetti Pie

Not sure about the weekend as I'll need to do another big grocery shop Saturday morning

Today: pork chops, Mac and cheese, veggies

Monday: chili, cornbread and all the fixings

Tuesday: spaghetti and meatballs, garlic toast

Weds: happy hour with the girls!

Thursday: steak fajitas

Friday: either out to dinner, or pizza night

Mom is sick so things are already getting moved around a little bit. I am not going to cook tonight as making a whole lasagna just for myself seems silly. As of right now I don't have a plan. I might go out with a friend depending on his plans later or I might just make something here at home. I have leftover steak and some potatoes so if I am home I might make a steak hash with eggs.

Then the other changes we have are:
Monday: Angel Hair with Shrimp and Tomato Sauce and Salad
Tuesday: Lasagna with Salad

The rest of the week will stay the same.
 
Like always, I am keeping it simple.

Sunday: pork chops
Monday: omelette
Tuesday: ham
Wednesday: chicken (parm?)
Thursday: hamburger
Friday: BBQ chicken
 
I am also slowly working on my plan for October. With school and so much else going on I need to have a plan in place. Right now I am counting down the days to Fall Break!

Tomorrow is a pork roast in the crock pot with apples and sweet potates

Wednsday chicken parmigiana bake

Friday. Chicken and rice
Saturday leftovers
I always try and make enough for 2 days. Keeps the kitchen cleaner. Lol
 
I am back on board after recovering from gallbladder surgery and finally being well enough to eat. I am still having to be careful to eat light/low fat.

Sunday (today): Italian crock pot chicken (new recipe - this turned out great!)
Monday: quesadillas - with chicken and spinach. Chips and salsa (for DH), fruit (me)
Tuesday (choir night): leftovers or chicken salad sandwich (DH)
Wednesday: crock pot low fat taco soup (more like chili)
Thursday: Breakfast for dinner (omelette for DH, egg beaters for me, fruit, grits) or leftovers
Friday: low fat lasagna + salad

After that... hmmm. Don't know.
 
Well we didn't do so well last week. We ended up eating out 3 times due to various reasons. Hoping to do a little better this week. Tonight we made tacos out of leftover tri-tip that DH grilled yesterday (wasn't my original plan, but we had too much meat left over to waste it).

Our plan for the rest of the week:

Monday: Linguine with Spicy Red Clam Sauce

Tuesday: Mushroom Chicken Bake, rice, crockpot green beans

Wednesday: Chicken hot dogs, Coney Island Hot Dog Sauce, Garlic oven fries

Thursday: It's my birthday, but DS has a football game an hour away. So I will probably spend my 33rd birthday at Chick-Fil-A. Lol

Friday: Out to eat with friends & family for my real b-day dinner

Saturday: DH will grill something. Roasted asparagus, sauteed zucchini & squash for sides

My 6 year old had her gall bladder out over the summer. She is doing so much better! She is back to eating like normal now.

Tonight I made tempura sweet potatoes, tempura brocolli, and tempura shrimp.
 
Been a little off routine...ate out with my family on Friday, cooked last night, went to Wendy's tonight...but hoping to stick with a meal plan this week. *What* that plan is, I'm not fulyl sure yet. :rotfl:

Going to the market tomorrow to round out the week, but it will at least include these 3 dishes, in no particular order:

-Baked bbq chicken wings & thighs w/ baked potatoes
-Rotini w/ breadsticks
-Cheesy chicken & rice casserole

That is great to hear about your daughter. I am 2 weeks post op and although I'm eating a lot more than I was for the month before my surgery (I was so sick), I still don't have a normal appetite! I am encouraged to hear stories of people who are back to normal after a few months.
 
We have been doing fairly well with eating out only once a week...although I have picked up Subway Sandwiches for my boys on Friday nights, to take with them on the bus for Marching Band. So, that is twice a week for some of us!

Ate every meal in this weekend! I actually enjoyed cooking, after a big grocery store trip!

Tonight will be Salsbury Steak from Skinny Taste.com / mashed tators/ grapes
Tomorrow night we will eat out. Band Fundraiser at Wendy's Saturday is a Band Competition in Tulsa, so we will eat out one or both meals Saturday.
