Wed I made creamy chicken and noodles but it was an epic fail :-( I think the recipe itself was fine but I tried to make it more on the healthy side by using whole wheat noodles and they were not good! DH said he thinks it would be really good with plain old egg noodles. So we ordered a pizza and tossed the chicken and noodles.

Thursday I made breakfast burritos. I did a healthy version of these and they went over well! Whole wheat tortillas, low fat cheese, turkey sausage.

Tonight we had sandwiches chips and grapes. DH and DSS went to DSS football game while DD and I are having a girls night watching girlie movies and eating candy!
 
Last night: meatloaf made w/ ground moose and pork sausage, mashed potatoes, broccoli

Tonight:Sour dough bread and "Sister's Stew" This is a re-creation we found on the Internet of a dish described in George RR Martin's Song of Ice and Fire series (from the book Dance with Dragons) My teens are enormous fans of the series, so this was their idea. We're using halibut instead of cod, just because we have almost 50 pounds of it in the freezer.

Tomorrow night: spaghetti, salad, and garlic bread
 
I have got to plan out my meals better this week, and this thread is inspiring me! I hopefully will be back later with my meals for the week! :)
 
OK, took a bit longer than I thought because of interruptions, but I finally got the plan done through next Sunday. It feels good to have a plan again after not having one last week!

Today:
Breakfast - Yogurt & Apples
Lunch - Burritos (ones that I made and put in the freezer)
Dinner - Shrimp Alfredo Pasta, Broccoli

Sunday:
Breakfast - Waffles (DH made a big batch one day and the extras went into the freezer, so we just have to take them out and defrost) with Fruit
Lunch - Out
Dinner - Mom's Night Out for me, the family will have leftovers or they can make something simple we have like grilled cheese, hot dogs, etc. Dad is in charge!

Monday:
Breakfast - Blueberry Pancakes (DH makes them)
Lunch - Mac N Cheese w/ Hot Dogs, Peas
Dinner - Balsamic Pork Tenderloin, Creamy Polenta, Lima Beans

Tuesday:
Breakfast - Oatmeal w/ Blueberries
Lunch - Packed Lunch (Co-Op), Egg Salad, Baby Carrots, Chips, Applesauce
Dinner - French Bread Pizza (kids making it) & Side Salad

Wednesday:
Breakfast - Eggs, Toast, Sausage, Grits
Lunch - Carrots & Hummus, Side Salad, Grapes
Dinner - Sloppy Joes (I made the mix up earlier, it is in the freezer, so I just have to heat up and serve), Corn & Broccoli

Thursday:
Breakfast - Yogurt & Fruit
Lunch - Leftover Sloppy Joes, Corn, & Broccoli
Dinner - Tacos & Side Salad

Friday:
Breakfast - Oatmeal w/ Blueberries
Lunch - Taco Leftovers & Side Salad
Dinner - Hawaiian Chicken w/ Pineapple, Rice, Green Beans

Saturday:
Breakfast - French Toast, Grapes
Lunch - Sausage Crescent Rolls & Broccoli
Dinner - Hummus & Carrots, Side Salad, Grapes

Sunday:
Breakfast - Blueberry Pancakes
Lunch - Out
Dinner - Spaghetti & Meatballs, Side Salad

Snack choices for the week that the kids can pick from - Grapes, Bananas, Goldfish, Apples, Applesauce, Yogurt, Chips & Salsa, Hummus & Carrots, or Crackers & Cheese

Monday: Shrimp Stir Fry with Rice (Sauteed Spinach for me)
Tuesday: Salmon with Broccoli Rice
Wednesday: Slow Cooked Chili and Bread
Thursday: Left Over Chili and Bread
Friday: Parmesan and Sage Crusted Pork Chops, Mashed Potatoes, and Snap Peas
Saturday: Chicken Meatball-Pepper-Onion-Pineapple Skewers and Corn on the Cob
Sunday: Roasted Chicken and Vegetables and Stuffing

Monday: Peanut Chicken with Noodles
Tuesday: Summer Vegetables with Chicken Sausage and Potatoes

Saturday: Hamburgers, Corn on the Cob, and Slice Tomatoes
Sunday: Easy Salmon Cakes, Green Beans, and Salad
 
Today Baked catfish filets and french fries and watermelon

Tomorrow Ribs, potato salad, cole slaw and bake beans and watermelon.

Okay Aidi's had watermelon on sale for 2.99 and bought 3. I hope that at least the weekend. If not I will go buy more.
 
Last night I ended up going out with my co-workers again. It had been a long week (we found out one the managers had been stealing and was let go).

Tonight we had planned to eat pork chops, baked sweet potatoes, and zucchini but I was called into work. One of the girls had a house fire and needed to leave right away. Since I live 5 minutes away they called me to be there for the last hour since two people are needed to close out the store. We ended up having snack items for dinner instead.
 
School and activities start this week, so here's to keeping to a schedule with menus along with everything else!

Today we'll be having our end of summer vacation bash and heading to Texas Roadhouse and then to Wegman's to shop for the extra stuff we'll need for school lunches.

I pick the veg or fruit on the day of based on what I could get reasonably price at the store.

Mon BBQ Bacon Cheeseburgers, curly fries and applesauce
Tues No Peeking Peking Chicken (crockpot) and rice, veg
Wed Bacon, eggs, bagels, fruit
Thurs Beef roast, mashed potatoes, corn, green veg
Fri Toy Story movie night - pizza, salad, juice, dessert? (haven't decided yet)
Sat Leftovers
Sun Shrimp scampi, rice, veg (will also make Kraft Mac & cheese in case scampi has
too much garlic for DD)
 
I started school last Tuesday:scared1: Tuesday is going to be my most challenging day. I will be in school from 1PM to 7PM. That means my hubby will have to make dinner. My plan for this week is to prepare crock pot lasagna and stick it in the fridge. He can throw the crock pot on and have dinner in 2-3 hours. Mondays I will be home by 7 so again my family will have to fend for themselves. Looks like I may have to use Sundays to prepare meals so hubby can throw them in the oven or crock pot.

The good news is I will graduate in May. My hubby just took a $6.00/hr pay cut. It looks like I might be the breadwinner for a bit. This is where my budgeting skills are really going to help us out!

I had my first pickling experience yesterday and hope to be making jam soon:)

My BFF's MIL passed away Sunday evening. We will be going to the viewing tonight so dinner will be something we pick up on the way home.
 
We had a good weekend around here (despite my migraine on Monday). This week is busy but should be fun!

Monday - we had crockpot pulled BBQ chicken, rice a roni and cantaloupe

Tuesday - turkey smoked sausage, macaroni & cheese, sauerkraut and cantaloupe

Wednesday - Dance! Crockpot turkey meatballs with mashed potatoes (DH and DD will eat before dance, I will eat when we get home)

Thursday - spaghetti and garlic toast

Friday - Football! Probably grab subway on the way to the game and eat there. DSS told us the visiting team has sold 8000+ tickets for the game!! So we will probably eat in the stands to hold our seats for the game.

Saturday - DD 6th Birthday! We'll have dinner wherever she wants!

Sunday - DD birthday party at Chuck E Cheese

Monday: Baked ziti with tomato meat sauce, ricotta, mozzarrela cheese and a bechamel sauce over the top, then baked.
Tuesday: Uncle's bday, went to Carraba's.
Wednesday: boneless/skinless chicken breast with rice pilaf and broccoli
Thursday: Pounded thin and then breaded pork chops with black beans, white rice, and an avocado salad.
Friday: Leftover ziti from Monday. With a salad.
Saturday: Grilled asian flank steak and homemade fried rice (using the leftover white rice from Thursday). With broccoli, carrots, green onions, spanish onions, egg, and peas in the rice.
Sunday: Leftovers from the week.

Italian Beef is a sandwich most famous in Chicago.

An Italian beef is a sandwich of thin slices of seasoned roast beef, dripping with meat juices, on a dense, long Italian-style roll, which originated in Chicago where its history dates back at least to the 1930s.[1] The bread itself is often dipped (or double-dipped) into the juices the meat is cooked in, and the sandwich is typically topped off with Chicago-style giardiniera (called "hot") or sauteed, green Italian sweet peppers (called "sweet").

They are amazing and a taste of home (I am originally from just North of the city). We sometimes order kits from Taste of Chicago and make them here.

Pinterest is a great resource for recipes. Here is my own Italian Beef recipe:

Beef Roast (I find that a chuck tender roast works the best)
1 pkg dry italian dressing
1 pkg au jus (found with gravy mix packets)
1 jar pepperoncini peppers WITH JUICE

Simmer all of this in the crockpot on low for 8-10 hours. You may want to add some water if it dries out, you want juice to dip your sandwich in. Shred the meat and serve on hoagie or sour dough rolls. DELICIOUS!

The crockpot lasagna I make all the time. I sometimes substitute grilled eggplant inbetween the layers. http://tinkmomfoodie-foodobsession.blogspot.com/search?q=crock+pot+lasagna

I have a ton of other crock pot recipes on my blog too;) One of my other favorites is crock pot mac and cheese. I plan on making crockpot beef stew this next week too.
