Haven't been on here in a while...been working lots lately, and unfortunately eating out a lot, too! Getting back on track, though! The chicken recipe was very good. I recommend cutting the cream cheese up into small cubes. Some of mine didn't melt down properly. I also wondered if the new cooking creme stuff would work better maybe. I might give that a try next time!

Onto my week of dinners!

Tonight: DH grilling steaks
Baked Potatoes and rolls
Sunday: Sour cream chicken enchiladas
Monday: Fried shrimp and french fries
Homemade tatar sauce
Tuesday: Hot dogs with chili and cheese
Wednesday: Eat at church
Thursday: Dirty rice w/ some veggie
Friday: Red beans and Rice w/ smoked sausage

Monday: Ancho Chile BBQ Brisket, Pinto Beans and Cole Slaw
Tuesday: Pork Chops smothered in onion gravy, green beans and roasted potatoes
Wednesday: Veal Marsala, Boiled Potato, Broccoli
Thursday: Chicken Stroaganoff
Friday: Steak with mustard port wine sauce
 
We are having homemade pizza tonight
Monday - homemade chicken pot pie
Tuesday - probably left overs or soup and grilled cheese
 
Yesterday I served leftover bean chili on oven-baked polenta fries (really good!) with a side of steamed broccoli.

Tonight I am doing mushrooms, spinach and garlic sauteed in vegetable broth, with baked sweet potatoes topped with hummus and salsa.

I sooo need to stick to a plan and cut down on the "out to eat". :) Our menu for the week:
Sunday - Italian herb chicken with mashed potatoes and carrots.
Monday - Salmon with red lentils and broccoli
Tuesday - Flounder with rice and green beans
Wednesday - Brats with peppers and roasted potatoes
Thursday - left overs
Friday - Pizza (take out)
Saturday - Fish cakes, mac and cheese, veggie
 

ok so i"ve been missing but am back - we didn't eat out too much while i was gone i've just been soo busy..

anyhoo.. this week is just me and the Hubs so we are cleaning out the freezer and cupboards..
Monday - Hubs = leftover honey BBQ chicken nuggets, Me = Hake, alfredo noodles, zuchinni
Tuesday - leftover ham and pototoes fried in butter.
Wednesday - thin cut porkchops on the grill, rice pilaf, corn/carrots
Thursday - leftover rotisssere chicken, mashed, GB
Friday - leftover pork roast, FF, Veggies
Sat - No cooking = Wedding
Sunday - No cooking = Hockey Banquet
 
We'll just forget about the past few days, why don't we? :) This is what I am thinking for this week:

Monday: burger on an english muffin
Tuesday: pizza muffin cups or mini calzone
Wednesday: baked ziti
Thursday: orange chicken
Friday: baked ziti

the extra ziti & pizza things will be frozen for next week or used for lunch.
 
Finally my overtime week of crazy busy is over! And no classes, meetings, tests, or overtime this week. Life can get back to normal. YAY!
So... a quick run to the store for some meats for the freezer and some fresh fruit and we are set for the week's meals.

Sun- Hubby smoked pork loin ribs, corn on the cob, and garden salad.
Mon - lasagne, garden salad, garlic toast
Tues - jalapeno and cheddar burgers on the grill, carrot and celery sticks/dip
Weds - salisbury steak, mashed potatoes, seasoned corn
Thurs - hamburger stroganoff, egg noodles, sweet peas
Fri - baked potato soup, french bread, fruit cup
Sat - angel chicken pasta, french bread, garden salad
Sun - grilled barbecued chicken, kidney bean salad, deviled eggs

I soooo need to do this. Money is going to be tight for the next several months (plus I think I'd lose some weight if I stay out of restaurants!) I'm going to sit down and do some meal planning and then post my list.

:wizard: Welcome! I started losing a ton of weight when I stopped eating out so much and eating at home. Besides I find things taste better cooked at home.

Tonight we are having chicken and dumplings
 
Monday- Salmon with rice and zuchini
Tuesday- "Breakfast" burritos
Wednesday- Fajitas
Thursday- Baked chicken with mac and cheese and green beans
Friday- Homemade Pizza
Saturday- Pulled Pork sandwiches
 
Sunday Grilled Pork Chops and potato salad
Monday - Leftovers
Tuesday -Beef Stew and mash potatoes
Wed. -Leftovers
Thursday -Steak and green beans
Friday - Leftovers
Saturday -don't know
Sunday - don't know
 
Saturday - Cheeseburgers, potato salad, tossed salad
Sunday - Steaks on the grill, pasta salad, pickled beets, tossed salad
Monday - Honey lemon glazed salmon, asparagus, noodles
Tuesday - Pork chops on the grill, steamed brocolli, stuffing, tossed salad
Wenesday - Sweet italian sausage subs with peppers & onions, coleslaw
Thursday- Oven fried chicken with gravy, mashed potatoes, corn, tossed salad
Friday - Baked stuffed haddock, rice, fresh roasted brussel sprouts with cheese and tossed salad
 
Its been a looooong time since I've visited! Its just been such a crazy time around our place. DH has been working a ton of OT again (yay for extra money!) and I spent 16 days in Florida for work, so we've been off the eat at home bandwagon for several weeks. We've hopped back on and we're limiting our eating out again to help save every penny in preparation for a super short 2 day Disney trip next month while we visit my in-laws in Tampa. So here's what we have this week:

Sunday: Hawaiian chicken, pineapple chunks and jasmine rice
Monday: Shredded chicken sandwiches, baked beans, cheese cubes, pickles
Tuesday: Chicken lettuce wraps, jasmine rice, cantelope
Wednesday: Grilled brats, pasta salad
Thursday: Pork chops, white chedder pasta, green beans
Friday: French toast, sausage links
Saturday: Dinner out

I'm trying to keep simple menu items for our busy days so that its less tempting to grab something after activities, busy work days, etc. Tonight dinner was cooked, served and eaten in 30 minutes flat!

Monday-au gratin potatoes with pork chops, sliced tomatoes and kiwi

Tuesday-salmon patties and broccoli and rice casserole

Wednesday-biscuits and gravy and sliced oranges

Thursday-hamburger stoganoff, egg noodles, green beans

Friday-tuna salad sammies, chips, and veggies and dip

Saturday-spaghetti and meatballs, garden salad, and brownies
 
Sunday- KC strips steaks, potatoes, corn casserole
Monday- shrimp, rice, leftover corn casserole and potatoes
Tuesday- ranch pork chops, crash hot potatoes, raw veggies
Wednesday- breakfast- biscuits/gravy, sausage, fruit
Thursday- mesquite pork loin, mac & cheese, rolls
Friday- out
Saturday- pizza
 
i'm doing dreamy chicken which consists of chicken, cream of chicken, sour cream, ritz crackers. took a trip to the fruit stand today and got fresh collards, cabbage, green beans, creamer potatoes, squash, fruits, i've got to start eating healthier!!!
 
Wow, I have GOT to get back into the swing of it. We have been home from WDW for a week and I have only cooked 2 meals at home! :scared1: Not to justify it at all, but the kids are at grandparents for a week, soooooo....


Anywho- here is the list of meals I have stuff for...

-Grilled Honey Ham and Muenster Cheese Sammies and Chips
-Crock Pot Chicken and Gravy with Noodles and Green Beans
-Soft Tacos, Refried Beans, Mexi-Rice
-Tuna Noodle and Apple Slices

Tonight DH and I have been given free tix to a Nashville Predators hockey game. We will have the grilled ham and cheese with chips before we go.
 
Bah....today was a very off day for me. I woke up totally grumpy and had not an ounce of energy all day. I worked a half day at work, had a doctors appointment, came back across town to pick up DD from pre-K, came home and made lunch then hauled her back across town for an eye doctor appointment, went for blood work and then back across town to home. DH worked 12+ hours today. I was in no mood to deal with dinner and dishes so I ordered pizza :sad2: Oh well...tomorrow's a new day, right?
