Welcome back - hope you had a GREAT time!

We did have such a great time, but it was VERY crowded! :eek: We have decided to wait until fall to return next year. Our kids are on a year round school schedule, so they get 2 weeks for fall break. We are hoping since the majority of school systems do not follow this schedule, that the crowds will be lighter than during Spring Break. The downside is that now we will have to wait a year and a half to return rather than just a year. :sad1:

Dinner tonight:
Crockpot Chicken and Gravy
Buttered Noodles
Southern Style Green Beans
 
Monday - cheeseburgers and mac n cheese
Tuesday - chicken enchilada bake for hubby and I; leftover mac n cheese and grilled chicken ham rollups for the kids (Kids won't eat grilled chicken but since I cut it up into finger shapes and wrapped deli ham around it they ate it - go figure!)
Wednesday - BBQ chicken breasts and drumsticks on the grill, green beans, and buttered egg noodles
Thursday - Spaghetti and salad
Friday - grilled hot dogs or bratwurst and french fries
 
i'm doing dreamy chicken which consists of chicken, cream of chicken, sour cream, ritz crackers. took a trip to the fruit stand today and got fresh collards, cabbage, green beans, creamer potatoes, squash, fruits, i've got to start eating healthier!!!

I've had this kind of chicken casserole! I love it - I'd fix it more but my hubby isn't as fond of it.
 
Tonight I am going over to a friend's house for a girls night. We are cooking and baking.

Mom is going to have tilapia with a baked sweet potato and whatever veggie she is in the mood for.
 

It's not been a good last few months here! First my hubby was sick, is loosing his job, and now my DD (6) is having gall bladder issues. We used a Groupon for Mexican food last night. Tonight I made this pork rib ragut in the crock pot that went over egg noodles. I will post pictures and the recipe on my blog soon.

Tomorrow I have to use another Groupon that expires. I did go grocery shopping though today and have a bunch of meals planned.

I am breaking out my donut hole maker to make my DD's snack for school tomorrow. I am making corn bread donut holes.

I hate to hear that about your DH losing his job! We will all have "how I survived" stories to tell when we finally make it through this horrible economy crisis. Poor DD...:sad1: I am sending lots of prayers and pixie dust your way for some unexpected blessings to come to you and yours!!! :hug:

Thanks for your thoughts. He's worked for Walgreen's for almost 30 years and we never thought this would happen. But you are right, in this economy we all have our stories to tell. I think that's why I have become such a good budgeter.

The DD had gall bladder problems and we have an upper GI for her next week.

I am really sorry so much negativeness is going on at the moment. I'll keep you and your family in my thoughts.

I am currently having to pretty much redo my menu for next week. Just got my blood results in and my cholesterol is borderline so I have to make a few more changes to my diet. Mostly I need to try to have fish every week and reduce the amount of red meat. Otherwise, I have already made a lot of the changes when I started to eat healthier. Hopefully, with these changes and with more weight loss it will figure itself out, though I do have a lot of family history with high cholesterol.

Sometimes adjusting your diet doesn't work with cholesterol. It has a lot to do with family history. My hubby is a diabetic and does take cholesterol medicine too. He was able to get his triglycerides down a bit but also has been really sick. He is average weight and eats a pretty balanced diet normally. Good luck to you in that regard.

Well thanks again everyone for you kind thoughts. I know the saying is "The Lord doesn't give you what you can't handle." I am really questioning that right now. I feel like such a punchin bag!

We had parent teacher conferences that didn't go to well and I caught my tween in a huge lie. That just adds to the load on my mind right now.

On the bright side Spring Break is right around the corner and that means no school! :banana: The day I start Spring Break we have "Shrek the Musical" which I am looking forward to. My friend made my youngest a new tu tu for the event. I just hope my youngest is healthy enough to go. Her endoscopy is schduled for this coming Wednesday.
 
Tinkmom2 I am sorry to hear about your DH's job situation. Mine was laid off for the second time in 2 years in January. It stinks. But some good things have come out of it. Like me discovering that Knoebel's offers 2 for one ride bracelets on opening day. My kids are counting down to that one. Fun and not expensive for our family of 6!

He's currently working in a completely different industry. Not the best job but it's paying the bills. He had to reinvent himself after the second layoff it became clear the direction his industry was moving. *I thought it was clear a couple of years ago but that's another story.....

And our car broke earlier this week. I was in a funk about it. We really don't have money for a new one. But I keep thinking there is a reason for all this. So I have had to be very creative with dinners since I can't drive to the supermarket!

Last night we had a winner. I had some individual steaks in the freezer- 2 of them. (not enough for the 6 of us as is) but I turned it into beef and broccoli stir fry over rice. The kids all loved it. The trick I found is to use the little packet of Stir Fry mix by McCormick. I always just used oyster sauce and soy- but adding in that mix takes it over the top.

I am going shopping tomorrow so I'll have a better list for the week
Tonight is Chicken thighs, sausage and potatoes One pan dinner my favorite kind!
 
so we cooked every night this week and our fridge is overflowing with left overs so I think we will eat those for awhile! :goodvibes
 
This weekend I am making a roaster chicken I have downstairs in the freezer. Monday may be crock pot lasagna. I am meeting with my academic mentor. I have not gotten my acceptance letter into my Phlebotomy program but am expecting that this week.
 
Sunday - Sauteed shrimp with zucchini and tomatoes over rice
Monday - Sandwiches/leftovers
Tuesday - Fish tacos and rice
Wednesday - Spaghetti with salad
Thursday - Balsamic chicken with mushrooms, broccoli rice and brussel sprouts
Friday - Pizza
Saturday -Herb crusted salmon, roasted sweet potatoes and green beans
 
I am making one of those Purdue oven roasters tonight for dinner. I had my hubby help me take out the neck and giblets. Needless to say I needed to sanitize the kitchen afterward.:rotfl:
 
Grilling up hamburgers tonight with baked beans and salad. Still fits within my calories and (most of) my macros so I will enjoy it! Just going to have one burger, 1/2 C of beans, and a salad instead of my old normal of two burgers, a bowl full of beans, and fries. It's about portions and choices!
