Tonight we are having a vegetable pasta bake. I was going to make lasagna but forgot to get noodles so I am improvising rather than going out to the store.

docs keep running tests and sending me to specialists....going to infectious disease doc in 2 weeks...........i think its just hormones and peri and a bunch of difficenies(Fe,Pot Vit d) and a resurgence of anxiety and panic.........but now the new theory is an old case of lyme chronic lyme..............but cooking actully has been very therapeutic..
yesterday I made Cuban pot roast and day before rosemary apricot pork loin.....today I am making homemade mac and cheese to finish up some of the meat leftovers

Hope everyone under the weather is better soon..

I had the day off yesterday ( had a dentist appt for a cleaning and had to go for my yearly Mammo ) so I did a little baking, cheese and garlic biscuits and Mocha Brownies - both from mixes ..

Sunday - we went out to celebrate Hubs Uncle's Bday
Monday - Ham steak cooked with pineapple and brown sugar, herb and butter rice and corn oh and the biscuits
Tuesday - Honey Mustard grilled chicken breast (leftovers), Penne w/ garlic sauce (mix), Broccoli
Wednesday - Parmeasan Pork Loin in the crockpot with carrots and potatoes
Thursday - Lasagna and Garlic Bread
Friday - leftover Chinese
Sat - cheap date night before Hockey
Sunday - Homemade Baked Beans and rolls - YUMMY

Last night I made chicken taquitos from the Annie's Eats website, they were good but took quite a while to make as I did'nt have any cooked chicken on hand. Now I do:thumbsup2, so tonight I'll be trying the cheesy chicken spaghetti from the Plain Chicken blog.
 
I did my grocery shopping yesterday. This is our menu with a few new recipes I'm going to try.
Mon.-we had tuna on crackers & salads
Tues-baked ziti & garlic bread
Wed.-chili & cornmeal cheddar biscuits. (I've never made these but they sound yummy).
Thurs.-tacos
Fri.-pulled chicken sandwiches, using a Cafe Rio recipe I found & fries
Sat.-ribs & rice
Sun.-cinnamon roll cake/casserole (also a new recipe I found..I'll give it a try since it will be just me & the boys this night).

Salsa Chicken
Rice
Cheese Quesadillas


I have just felt so uninspired in the kitchen lately. :sad2: The reason is that I am trying to make meals DIRT CHEAP so I can sock away the rest of the grocery $ for our trip coming up. Just can't wait to get to Disney and eat yummy food again...
 
Tonight is a Fajita Salad. Pretty much using left over Chicken Fajitas (chicken, peppers, and onions), heating it up, and making a salad using it. Lettuce, tomatoes, corn, black beans, tortilla strips, and a dressing made of Salsa mixed with Bolthouse Farms Yogurt based Ranch.
 
I really like this thread because you guys seem to eat "normal" food. I have three kids and do the best I can but I'm no gourmet cook :rolleyes:.

Tonight - pick your own leftover from the fridge
Wednesday - Amazing Chicken, Rice and Green Beans
Thursday - Hamburger Soup
Friday - Sausage Balls for dinner (can't decide what to put with those)
Saturday - Smothered pork chops
 
So, last night we had pasta with tomato sauce and lots of added veggies (onions, red peppers, mushrooms) with falafel on the side. My son has decided that falafel is a good substitute for meatballs!

Tonight I am doing oven-roasted vegetables (parsnips, onions, sweet potatoes, broccoli, and mushrooms) with some seitan in barbecue sauce, and I am planning to make a chocolate-blueberry-almond "crisp" for dessert.

Tomorrow I am planning a spinach salad with orange sections, pomegranate seeds and almonds, with baked beans and onions.

Thursday will be chickpea-spinach-tomato curry.

Not sure yet about Friday... I have a lot of carrots at the moment so maybe something to use them up. I also have a large head of cabbage. Hmm- coleslaw?

I put some chicken and dumplings in the crock pot this morning when I got home from work...the smell was heavenly when I got up! Just pulled some rolls out of the oven. I may be a useless blob by the time I get back to work tonight!! Carbalicious!
 
We had tacos made with ground turkey and all the toppings. It was really good. We haven't had tacos in a long time.
 
I have no idea what happened to my homemade pizza dough last night. Last time I made it, it was fabulous.
Last night it was thin, hard and crunchy. My seven year old said "It's ok mom, it's just like eating pizza on a cracker!" trying to make me feel better.:rotfl::rotfl:

Oh well.
 
I absolutely love this thread. I have gone at least 8 days without ordering out for dinner or going out. We have some gift certs we got for Xmas so we will be dining out this week though. I love the ideas I have gotten from this thread. I even pulled my bread maker out of the cabinet and made bread over the weekend and have used it for lunch sandwhiches this week. Here's dinner plans:

Mon: Sloppy Joe sliders
Tues: Spaghetti and Meatballs
Wed: Chicken Minetrone Soup
Thurs: Dining out
Fri: leftovers
Sat: Sausage and onions on rolls
Sun: ???????
 
We are having leftovers tonight. I might make burritos from the taco mix. Haven't decided.
 
Everybody is doing so good!!!

However, I am completely unmotivated this week. Haven't planned my menu and have no idea what to make.

We haven't eaten out yet, which is the good news!

So far we had:
Mon-BBQ chicken, noodles, corn
Tues-Lasagna,salad (thanks Mom for that one)

and here I sit at work trying to come up with a plan for tonight...ugh, suggestions??
 
We've done pretty well - only eating out when it's on the plan.

Mon Pizza
Tues Spaghetti Bolognese (new recipe & very good), salad, garlic bread
Wed Grilled Chicken w/various BBQ sauces, rice, salad
Thurs Pasta crab casserole (new), ham slice for DD, green beans, biscuits
Fri Cheesesteaks, chips, fruit
Sat Leftovers
Sun Cheap dinner out - visiting my grandma who's an hour away
 
Tonight is fend for yourself night. We have a bunch of leftovers that need to be eaten before they go to waste.
