I made sausage balls with eggs and fruit. The kids loved it but I will never do that again. Way too heavy for me.:eek:
 
A ? Have any of you made chicken soup with a whole chicken? I always have stock on hand and just use that. But yesterday bought a fryer chicken that was on sale- I was going to just use it as I would normally make stock- then turn that chicken into the meat in the soup? Is that ok?

That wasn't clear. In other words, can I simmer the chicken in water and spices to turn into the base of the soup- then remove chicken after it's cooked through(and how long does that take?) And shred the meat for the soup??

I guess tonight will be leftovers. It was supposed to be moose chili, but it smelled so good in the crockpot, that I'm on my second bowl. It's only 2:30 . . .

Tuesday:
Creme Brulee Breakfast Casserole (doesn't that sound delicious?)
Hot Cinnamon Apples
Biscuits with Butter and Honey

Wednesday:
Chicken Fajitas (with leftover grilled chicken)
Refried Beans

Thursday:
Beefy Mac Casserole
Sautee'd Whole Green Beans
Garlic Toast

Friday:
Ham and Cheese Cressant Roll-Ups
Tomato Soup
 
It's been a rough week here medically, so we treated ourselves to lunch out today at Carrabba's. The good news is we have enough leftovers to cover dinner tonight, and lunch tomorrow! Back on track now! I cleaned out the freezer this morning, and we did a stock up shopping trip.

Tonight- Leftovers!
Sunday-Rib eyes on the grill, baked potatoes, corn on the cob
Monday- Taco's
Tuesday-Tuna salad sandwiches, fresh fruit, veggies, chips
Wednesday-Terryaki chicken, rice, zuchini, salad
Thursday-Barbecued chicken pizza, salad
Friday- Broccoli cheese baked potatoes, salad
 
Starting the menu a day early. Did my shopping today. I have to stop shopping on Saturdays. It's just mobbed and takes twice as long and I'm frustrated and tired by the end of it. It would be so much easier to go on a week night when the store is empty instead of the shelves.:rolleyes1

Sunday: Shepards pie and salad

Monday: Homemade lasagna. Having company so I'll make them on Sunday and reheat them for Monday night dinner.

Tuesday: Something easy. It's my birthday but we aren't going out until the weekend. So probably breakfast for dinner

Wednesday: Roast Chicken, Rice, Broccoli, Salad, Crescent rolls (having company again)

Thursday: Hamburgers/veggie Burgers, Fries and salad.

Friday: Tofu parmesean

Saturday: Birthday Dinner out at my favourite Italian place

Sunday: Home Made Pizza

It sounds like you've used this service before. I've looked into it but have
never taken the plunge. Can you tell me how you like it and are the meals/recipes tasty? How does it work for your family and is it cost effective?

That can be really hard to manage medical needs while everyday life and demands still march on. I hope things are better now.

I have looked at the website and wondered the same thing. They certainly have menus for every need!
 
It's been a few days since I've popped in on here, the Kids' activities have been running us ragged. We've eaten at home every day except yesterday, we were 2 hours away for a b-ball tournament & ate at Valentino's pizza. We've had cheesy chicken spaghetti, dh's b-day dinner was ham balls & hash brown casserole, one night of leftovers & chicken tacos one night. More b-ball today, but it's in our town so I'm putting a cheesy tilapia recipe in the crockpot.
 
Tonight we are going over to my Grandma's for a family dinner. I would say that it is getting me out of cooking for the night but I will probably do most of the work (she is 92 and I do not mind)
 
Tonight is a Fajita Salad. Pretty much using left over Chicken Fajitas (chicken, peppers, and onions), heating it up, and making a salad using it. Lettuce, tomatoes, corn, black beans, tortilla strips, and a dressing made of Salsa mixed with Bolthouse Farms Yogurt based Ranch.

Tonight is takeout pizza. Seems I am coming down with something and barely have the energy to sit here much less cook tonight. Luckily, I have a promo code in my email so it should be too bad.

We did that on Friday night. We had a promo code too. We all need a break sometime. Hope you feel better soon!
 
So the Tom Yum Soup was an utter failure!! It had a really bitter taste and just didn't taste authentic. Luckily we were able to salvage the 2 lbs of shrimp from the broth and they tasted good. We ended up repurposing them into Buffalo Shrimp salad. :thumbsup2

The Big Mac casserole was a big hit, thanks to whoever posted it earlier!!!

This week:
Today - Beef Wellington, potatoes, veggies (we're trying to make a healthier version using lean sirloin steaks and a minimal amount of puff pastry)
Monday - black bean soup (WW recipe) and turkey kielbasa
Tuesday - Spicy Meatloaf (WW recipe), potatoes, veggies
Wednesday - salmon croquettes and salad
Thursday - chicken with feta sauce (WW recipe)
Friday - Buffalo Chicken meatball pizzas (using frozen buffalo chicken meatballs from Aldi and whole wheat flatbreads)
 
Well we have decided to give eating at home more a shot after realizing what we were spending eating out. :scared1: Figure this will help with our budget quite a bit and possibly put us in position to do Disney this year. :cool1:

Thursday - Chicken / Rice
Friday - Polish Sausage / Pasta

A bit behind here! This is my use it up week. So that meant no grocery shopping, we're using up what's in the fridge/freezer/cabinets.

Saturday- pigs in a blanket, Mac & cheese
Sunday- cheeseburgers,fries, fresh pineapple
Monday- leftover enchiladas (we have a whole 9x13 pan left!)
Tuesday- chicken nuggets, veggies, Mac & cheese
Wednesday- Chicken pot pie soup, biscuits
Thursday- fish, rice, veggie
