Eat at home 2!

I got a sandwich from the deli today, but the last time we went out to eat before that was 2 weeks ago--husband and I went out to breakfast to celebrate our anniversary...it's been even longer for the kids.

Plans for next week or so in no particular order:
Risotto Primavera
Chicken Scallopine, instead of pasta, I'm going to put this over spaghetti squash
Spaghetti with artichoke hearts and tomatoes
Chicken Spaghetti (make it in 2 pans and freeze 1)
grilled veggie sandwich
cheeseburger salad
taco soup
lunches will be various salads with different combos of nuts/cranberries/grilled chicken/homemade dressings
 
Tonight is:

Breakfast for Dinner!
Eggs
Toast
Chicken Sausage
Fruit
 
is cream cheese chicken in the crockpot

so easy: i put 4 frozen chicken breasts in the pot
-mix cream of mushroom soup, 1 c of milk, sm can of green chilles, 1 8oz cream cheese, a packet of dry italian mix, pour on top of chicken, cook on low for 6hrs and then serve over noodles or rice.

love the crockpot meals, i'm making a creamy chicken and wild rice soup too later in the week and i will let you know about that one later.

anything with cream cheese in it is bound to be good, i love getting ideas all this thread as well.

Hi it sounds good but I've never had green chilles - are they spicy or hot? I don't like peppers or hot things.. Could I leave them out?? Thanks Michelle
 
A ? Have any of you made chicken soup with a whole chicken? I always have stock on hand and just use that. But yesterday bought a fryer chicken that was on sale- I was going to just use it as I would normally make stock- then turn that chicken into the meat in the soup? Is that ok?

That wasn't clear. In other words, can I simmer the chicken in water and spices to turn into the base of the soup- then remove chicken after it's cooked through(and how long does that take?) And shred the meat for the soup??
 
I've been missing in action here for a few days - my son's home from school all week with a concussion (thank goodness I can work from home and my boss is awesome) so that's thrown my schedule into a tizzy. We didn't actually do so great eating at home late last week into this week, in part due to my son's situation and in part due to poor planning. On Tuesday I left the ingredients for dinner for my husband to make while I was with our daughter at her riding lesson and came home to find he'd forgotten! He was actually sitting in the kitchen with everything out and ready to go, but got distracted and started alphabetizing my cookbooks instead. Do we have a "facepalm" smiley, by any chance?!

Anyway, we're back on the wagon. Last night was pumpkin pancakes, sausage, and cantaloupe. Tonight is spicy kale and beans over pasta - I'm trying a new corn pasta for the first time. Keep your fingers crossed it works out! It's a little cheaper than the brown rice pasta I usually buy. The rest of the week looks like this:

Friday: garlic lime chicken, broccoli, moroccan carrots, rice pilaf
Saturday: friends to dinner after daughter's basketball game; pork roast with roasted potatoes and carrots, popovers, salad and flourless chocolate cake for dessert
Sunday: leftovers from prior two nights

I'll go shopping on Sunday evening so will do next week as I plan for that. I really need to get back in the groove!
 
We ended up having chicken pot pie last night. I made it from some leftovers, topped it with phyllo dough to save some calories for me. It turned out pretty good!

Tonight we'll have the burritos I had planned for last night, using up the rest of the leftovers.

Very easy to make but my DH said it was more like a chicken pot pie so next time I will make it with a crust. It was very tasty.

Thurs - pasta pasile and shrimp with pasta for DD14 who doesn't like peas
Fri - pepperoni rolls from this thread
Sat - plan is date night with DH since we have a free entree coupon
Sun - going to inlaws

We do that all the time. I usually put the whole chicken in the crock pot with water and spices/vegetables and cook all day. I then take out the chicken and drain the stock. I then put the stock on the stove with new veggies and bring it to a boil while I get the chicken meat off the bone. I add the chicken and noodles in to the stock. It always turns out so good.


Today is my Grandma's 92nd birthday, so we are having her and my Aunt over for dinner. I am making pork tenderloin french dip sandwiches with chips and fruit salad.
 
Grilled cheese and tomato soup! It's what my Mom use to feed me when I was a boy and I still love it today!!! Yummy

michelle, no they are not spicey at all, it just adds good flavor. it turned out really good btw! my dh loved it!

Making stuffed banana peppers with sauce (sauce is cooking right now as is bread) And we'll have some salad.
 
Tonight is a recipe loosely based off of a Skinny Taste recipe. I'm changing some stuff around to fit with what I have on hand since I didn't want to buy special stuff for it.

It's supposed to be Pasta with Italian Chicken Sausage, Peppers, and Escarole.

I'm making the following changes:

1) Instead of crumbled Italian Chicken Sausage, I am using the links I have in the freezer. Not sure if I will slice them up into the pasta or just serve the links on the side.

2) Spinach instead of Escarole.

3) Adding tomato to the pasta mixture.

Then we are also having garlic bread.
