Just checking in. We welcomed our beautiful daughter McKenna faith on Friday.

Eating at home is my only option for a very long time. Our church's going to bless us with meals for a few days which will help greatly.

Keep eating at home everyone ! And welcome to anyone new!

Congratulations! That is such a beautiful name!princess:

I've been MIA for several days, haven't been on the boards due to some crazy sports schedules. We've been eating in, mostly quick things like frozen ravioli, quesadillas, scrambled eggs & the like. We did a Valentine breakfast with Rhodes cinnamon rolls, sausage & fruit & I surprised the kids by decorating the table with Valentine balloons, table cloth etc, that was fun! Last night was
chicken parm w/ spaghetti, tonight is a sloppy Joe casserole, ds is at wrestling so we'll be eating at 8:00 again, sigh.

Yesterday I went out and got the last few things we needed to round out our meals for the next week. I only spent $17. Everything else we have in the freezer/pantry to use up.

Tonight we are either going out with my grandma or having lasagna. Which ever we do not do tonight, we will do tomorrow.

I start my other class next week so I will be in school 3 days a week next week. Yesterday I made crockpot cashew chicken. I wlll try to post the recipe for that one later:cool1:

So far for the menu for this week is:
cashew chicken (last night)
Mahi Mahi with couscous
Shrimp and chicken etouffee over rice
salad in taco bowls with blackbeans and chicken

I also have a ton of Groupons to use! I plan on using some when my hubby has off next week.

Haven't posted our menus this week, been super crazy around here! Last night we had a tenderloin and homemade mac & cheese (John Legends recipe on Martha Stewarts site). I wasn't impressed with the mac, I have yet to find a homemade recipe that I like. My dh loved it, go figure.
I think tonight we'll do popcorn shrimp, rice, and salad.

Tonight is going to be Eggs, Chicken Sausage, Toast, and Fruit. I was going to make pancakes, but I am high on carbs and low on protein today. So trading out the pancakes for eggs.

Tonight:

Chinese Pork Roast (in the crockpot(
Long Grain and Wild Rice
Stir Fried Veggies

Tonight is:

Honey Garlic Pork Chops
Honey Glazed Carrots
Green Beans

the last 15 mins, add the french fried onions on top

yum, yum, yum!!!!!!
tonight will be chesse raviolli with spaghetti sauce, garlic bread.

We had a chat here, and decided to change up our EAH ways. This thread was so good for changing our eating out several days a week habit!! Now that we have changed our ways and are learning to budget it all better, we realized that we can do a reasonable mix. We've decided that once a week our daughter can choose a meal to eat out...she prefers quick, easy meals brought back home to enjoy so I will budget $20 a week for that. She likes Subway, local pizza joint, Chinese etc.

My husband I were missing being able to go out to eat, more from an entertainment, relaxing standpoint than budget concern. We've decided to add a date night every other week into the monthly budget. We'll alternate choosing the place to go. Dd is welcome to join us any time, but she said she'd enjoy having the house to herself a couple times a month! :rotfl:

Tonight- Dd's choice. She saw the Pizza Hut $10 pizza box deal and wants to try that. I'll be back with the rest of the week!

I have hit a cooking wall lately. And last night it came to a head with dinner of Subway instead. :sad2:

But I went shopping today and tonight will be

Steak and potatoes.

Sat. chicken sausage and potatoes.

Sunday Pernil with arroz y gandules

Monday shrimp and rice

also our downfall can be the weekends- so I made sure I have plenty of lunch options for the long weekend.

Friday: Red curry with shrimp, snow peas, peanuts, and fresh pineapple
Saturday: Stir fried tangerine beef with onions and snow peas
Sunday: Split pea soup and bread
Monday: Stir fried ginger chicken with bok choy and red peppers
Tuesday: Chili
Wednesday: Something premade (most likely Bertolli pasta in the freezer--Wed. is my late night)
Thursday: Cheeseburgers

Last night we had lasagna. Tonight mom is going out to dinner with Grandma. My allergies are killing me, so I am staying at home. Not sure what I am going to have yet but we have a house full of food.

Well we just returned from 12 days in the Caribbean and real life has hit hard, I sat down to make out a menu and go grocery shopping.... Ughh, so we are eating lots of grilled proteins and salads this week to make up for all the food and drinks this past two weeks.

Anyway, looking forward to jumping back in.
