I bought too much bread. So we are having french toast tonight with turkey sausage to go along with it. I might make a fruit topping if I have time.
 
It was a good week at the grocery store - came in quite a bit under budget.

Mon Soup & sandwich night (swimming)
Tues Rosemary apricot pork tenderloin, mashed potatoes, green veg from freezer
Wed Cinnamon French toast, bacon, strawberries
Thurs Italian style Salisbury steak, buttered noodles, fresh made applesauce
Fri Joe Corbi pizzas (from fundraiser at DD's school)
Sat Stacked chicken cordon bleu (new), baked potatoes, veg
Sun Superbowl at my DSis - we're taking pulled turkey, potato salad and peanut blossoms (nobody wants a bigger dessert after all the other junk); she'll supply the appetizer items, drinks, etc.

HI can you share what the Stacked Chicken Grodon bleu is? or where to find the recipe? Thanks Michelle
 
I have been inspired by you guys so much. I dont post often but read often. I am not going to Disney this year as we are trying to see family up north this year and that is our vacation. It was my idea and I am thankful to be able to do so. But hotels are costly and I am recently a stay at home mom for a while so money on eating out is not in the budget like it used to be. (We used to eat out 3 days a week) Now we eat out but it is more pizza and cheaper stuff.

So since I am not going to have any Disney Magic in 2012 I am trying to create my own. I am making Meatloaf from the recipe at 50's Prime Time. Never made meatloaf never ate meatloaf but I had all the ingredients in the house except the ground pork so I think it is a win. Keep up the great work guys!!

I didn't have time to get on and post yesterday, but here is what I have planned for the week:
Mon-cheeseburgers & chips
Tues.-ranch house crock pot pork chops & parmesan mashed potatoes
Wed.-beef pasta
Thurs.-garlic roasted chicken & potatoes, salad
Fri.-loaded potato soup & french bread
Sat.-chili dogs & chili cheese fries
Sun.-slow cooker winter pork roast & yorkshire pudding. (unless we head to a friends to watch the game, then it will be potluck pickings)
 

I finally got a menu pulled together, so in no particular order:

Grilled steak (this is for tonight, it's 60 degrees today!), ranch bread & salad

Parmesan tilapia, Mac & cheese, broccoli- if you haven't tried Schwans steam in the bag broccoli- it is fabulous! Made a broccoli eater out of the dh!

Scrambled egg muffins, English muffins, clementine's & grapes

Chicken sausage with peppers, cheese smashed potatoes

Crockpot chicken legs, mini corn on the cob, baked potatoes, salad

Tortellini with leftovers sausage spaghetti sauce, green beans
 
Tonight is:

Grilled Chicken Fajitas (leftover chicken from Monday's meal)
Refried Beans
 
This is the meatloaf recipe that I used that I got on the Disboard. Many many recipes on here that you all should check out.

Mom's Meatloaf
50's Prime Time Cafe , Disney-MGM Studios
Yield 8 servings

2 lb ground beef
1 lb ground pork
4 large eggs, lightly beaten
1 cup seasoned bread crumbs
½ cup finely chopped onions
1/4 cup finely chopped green peppers
1/4 cup finely chopped red peppers
2 Tbsp Worcestershire sauce
½ tsp. Cracked black pepper, or to taste
½ tsp. Kosher salt, or to taste
½ cup Meatloaf Glaze (recipe below)

Preheat the oven to 350 F. Lightly oil 2 two 8 ½ inch loaf pans.
In a large bowl combine the beef, pork, eggs, bread crumbs, green and red bell peppers, 2 Tbsp Worcestershire sauce, onions and seasoning until just blended. Do not overmix.
Divide the meat mixture in half, shape into 2 loaves, and place in the prepared loaf pan. Bake at 350º F oven for 50 – 60” (internal temp 155º).
Brush meatloaf with meatloaf glaze. Bake another 10 minutes. Let meatloaf set 10 minutes, cut loaf and serve.

Meatloaf Glaze
½ cup ketchup
1 Tbsp brown sugar
1 Tsp Dijon mustard
½ Tsp Worcestershire sauce

Tonight we are having Ranch-Parmesan chicken and a yam dish I threw together. The Ranch-Parmesan chicken recipe I tweaked a little. I didn't add the salt and used a dry mix instead of the ready made Ranch dressing.

I was tired of some of the same veggies/fruits in the same way. So I put together a yam, Fuji apple, and raisin medley dish with cinnamon, a little brown sugar, and a smidge of honey. It looks and smells good. I started with a recipe for roasted yams and just threw the rest together and added a few things.

Trying to keep it healthy and taste good.
 
We had waffles and scrambled eggs for dinner last night. Tonight was Penne Alfredo (with chicken for the boys), Salad and Garlic Toast. I splurged on Ice Creams at Sonic for Dessert. Today was grocery day so the rest of my plans are:

Hotdogs/Avocado and Tomato sandwiches, Green Beans and Fried Potato's with Onions

Grilled Cheese and Tomato Soup

Salad Bar Night

Biscuits and Gravy w/Eggs

Frito/Chili Pie

Ham Steak, Corn and Cream of Mushroom Rice
 
Tonight we're having baked catfish (seasoned with lemon and pepper). I'm going to make parsnip pancakes to go with it (first time) and we'll either have a veggie medley or steamed carrots.

I was going to roast the parsnips and chop them finely and add it to rice. If I'm in a pinch for time I still might. But the plan is to try the parsnip pancakes. They look and sound good. :)

Parsnip Pancakes


Ingredients

2 pounds parsnips, peeled
1 teaspoon salt
1/2 cup chopped onion
1/4 cup all-purpose flour
1 egg, lightly beaten
1 tablespoon minced chives
2 to 4 tablespoons canola oil

Directions

Place parsnips in a large saucepan and cover with water; add salt. Bring to a boil over medium-high heat. Reduce heat; cover and cook for 15-20 minutes or until tender.
Drain and place parsnips in a large bowl; mash. Stir in the onion, flour, egg and chives.
Heat 2 tablespoons oil in a large nonstick skillet over medium heat. Drop batter by 1/4 cupfuls into oil. Fry in batches until golden brown on both sides, using remaining oil as needed. Drain on paper towels. Yield: 6 servings.
 
Monday was tacos
Tues was shepherds pie
Wednes was ital beef sandwiches with fries
Tonight is frenchs fried onion chicken with broc and rice
Fri is always pizza
Sat is what ever dh cooks b/c I work 12 hrs
Sunday is undecided- prob various snacky foods
 
We love that Meatloaf recipe!!! :thumbsup2 I make it at home (using all ground beef instead of some beef, some pork) and my hubby and kids like it too. It is definitely a way to keep the Disney magic alive! :wizard:



I did sign up for the year, but I knew we liked it so the choice was easy. Maybe you could sign up for 3 months as a trial run, then sign for a year if you like it? :confused3 I would encourage you to give it a try, we have loved it. :goodvibes The only reason I let the subscription expire in the first place was that we decided to eat on a BARE BONES BUDGET to pocket some extra $ for our trip coming up. Now trip is all paid for with spending cash ready to go, so it's back to E-mealz and we couldn't be more excited! :cool1:

Ended up picking up tacos/burritos/nachos at Taco Bell tonight. I had a pack of ground beef that I thawed but it looked/smelled funny so we didn't chance it.
Tomorrow I decided to try something new I found, waffle crusted chicken tenders http://www.plainchicken.com/2011/08/waffle-crusted-chicken-tenders-chicken.html hopefully it turns out good!

I wasn't supposed to be home, but things are not going well on the relationship front so I had to come up with something.

I love her blog! We've tried a few of her recipes and so far they've all been great!
