Last night we had London broil with oven fries, corn, and watermelon.

Tonight we are having lemon chicken cutlets with rice, carrots, and fruit.
 
Last night was tacos with all the fixings and then strawberries after.
Tonight we are making a big meal, which we will eat on for the next day or two. Grilled chicken & steaks, mac & cheese, baked beans, potato salad, green salad, and watermelon.
 
Monday (Memorial Day): Cookout with my mom, grilled chicken and ribs, corn on the cobb, baked beans, deviled eggs, cupcakes and lemon squares

Tuesday: Leftovers

Wednesday: Tacos/Fajitas

Thursday: Philly Cheesesteak stuffed peppers

Friday: Probably leftovers
 
I have been lurking for quite a while on this thread - but never got really serious until a couple of weeks ago; Our family of 3 grew to 4 when my Mom came on board in March, who is gluten intolerant, and now its 5 when DS 22 came home for an internship this summer; so, I decided it is time to make a weekly menu, go big shopping once a week, and ya'll's posts are keeping me to my game plan. I have always been a big slow cooker. I am on Page 26 of reading this thread and still getting ideas! Last week I did good and only switched a few things around. Thank you everyone!

Today - Sandra Lee's Italian Beef with spaghetti squash and broccoli
Tues - Enchiladas, Pinto Beans which I will have slow cooked, rice, avocado
Wed - Fish, Risotto, and a veggie; I did Giada's fish packets last week which were delicious; not sure what to do with the fish but have some ideas
Thurs - Stir Fry with chicken or pork; hopefully I will have time to go to Whole Foods, love their egg rolls
Fri - Frittata from recipe using Land O Lakes butter sautés
Sat - Hopefully leftovers and maybe turkey burgers if not enough
Sun - Pot Roast

I try to find something to add to the meal that Mom can eat which is gluten-free; its hard too because she doesn't like turkey, chicken, beef, etc., whew

Just to throw an idea out there, I made an African Peanut Stew in the crock pot yesterday which was so good, the "peanut" is peanut butter; I was a little skeptical but everyone licked their bowls

Thank you everyone for inspiring me! I will continue to post every week.
 

So glad I found this, my husband and I were just talking about we need to stop eating out 3-4 nights a week, with 3 kids its really hitting our weekly food budget. We want to limit ourselves to one night a week. Plus that's more money for the Disney fund

Tentative meals for the week:
Salsa Chicken
Leftover's from Memorial day BBQ
Sausage, peppers and onion dish
Breakfast for dinner
Hamburger helper
BBQ Chicken

- Let's see how we do with our first "real" week with this

I hope everyone had a wonderful memorial weekend! We went to my cousins cookout this year she hired a musician and it was very fun:cool1:

Back to our crazy softball life this week
Tonight hamburgers with corn on the cob
Wednesday breakfast for dinner pancakes and brown sugar and cayenne pepper bacon
Thursday pizza on the softball field I coach my daughter team and we get to throw a end of year party wit pizza and ice cream
Friday Mexican casserole ( might make it tonight we will see )
 
Hi everyone! I see we have gathered a few few more - so Welcome! this week is just myself and Hubs..

Monday - cooked out by ourselves, Hotdogs and Burgers with celery for me and chips for hubs (no buns for me)
Tuesday - Steak Stir Fry - stir fry veggies and steak with some jasmine rice for hubs and dreamfield pasta for me
Wednesday - My DS has his last LAX game of season - away - so we'll be eating late.. I'll bring an atkins bar and some peanuts for a snack then when we get home around 7ish I'll have an atkins frozen meal and Hubs will have some leftover General TSO chicken
Thursday - Campbell's chicken scampi with broccoli and onions over dreamfields angel hair pasta and a tossed salad
Friday - dreamfields homemade Mac & Cheese using campbells cheddar cheese soup.

HUM I am eating a lot of dreamfields pasta this week.. that will be interesting - I'll have monitor my weight and blood sugar to see how it's affecting those..

The weekend will be up in the air as normal but the Grad party we were to attend last Sun was cancelled to this Sun so I'll be having BBQ that day..

I hate to admit it, but we're in the same boat. We need to start cooking at home. We have a big trip to DLR coming in September. However, our bigger issue is that our baby is turning 1. She's eating more real food, and less baby foods. She's got an allergy to eggs, and I just can't trust the restaurants we go to. So we have to start cooking at home, and egg free is a must.

This weeks menu is:
Chili mac, and garlic bread
Ribeye steaks with roasted red skin potatoes, and salad
Marinated chicken grilled, rice, and broccli
Hot dogs, corn on the cob, and cucumbers
 
I rejingled and rejangled our menu so many times this week that I have NO idea what the original was! :rotfl2:

At present (because I can't seem to leave it alone!!) the week looks like this:

Tonight: Shepherd's Pie (leftovers for lunch Wed and Thurs)
Wed: Ham, broccoli and cheese pasta (leftovers for lunch Fri and Sat)
Thurs: Pizza and salad
Fri: Meatballs Subs and salad
Sat: Leftovers (assembled and baked fresh using leftover ingredients from Fri)
Sun: Mac and cheese with hot dogs, veggies and dip

It SHOULDN'T change anymore. :rolleyes:

This week's menu:

Sunday: Grilled chipolte lime chicken, rice and peas
Monday: Creamy mac n' cheese with ham and peas
Tuesday: Baked coconut cod, mashed potatoes and broccoli
Wednesday: BBQ ribs, oven fried potatoes and corn
Thursday: Roast beef, baked potatoes, green beans, tossed salad
Friday: BLT's and homemade clam chowder
Saturday: Oven fried pork chops, gravy, rice and mixed vegetables

We're having lots of potatoes this week as one of DH's co-workers gave us a big basket of them from his garden/root cellar and I need to use them up!
 
Saturday - Grilled steaks, baked potato fries, zucchini

Sunday - Burgers, pasta salad, sliced cucumbers and red peppers

Monday - Turkey and avocado panini sandwiches, sliced pineapple/strawberries

Tuesday - Leftovers (beef tips over egg noodles)/ green beans

Wednesday - Chicken broccoli rice casserole

Thursday - Pizza (last day of school!!):)

Friday - BBQ sandwiches, baked beans and coleslaw
 
Well this week was crazy in terms of cooking and eating healthy and CHEAPER; things were constantly being changed and then last night, I got home late and was going to start dinner and bam, electricity went out, from about 6:45 to 8:30; I called oldest son who worked late and he picked up Chinese for everyone, which was costly; UGH; Thurs night oldest son was out of town, which was good so it was eat leftover night, we never got around to eating fish; and tonight DH will be working so I am changing to homemade pizza; tomorrow I want to make a pot roast or pork loin roast; but that means a special trip to Costco or Super Target; I have yet to find a tender piece of meat at HEB where I do my big grocery shopping. So, tentatively for next week I have:
Sun - Pot Roast or Pork Loin Roast, both in crock pot, might try a new Pork Loin recipe, carrots, mashed potatoes
Mon - Salmon, Risotto, veggie
Tues - Beef Tacos, salad with avocado
Wed - Stir Fry, maybe with leftover pork loin
Thurs - favorite sausage from Costco, and potato casserole
Fri - Frittata (which I have never made but want to try)
Sat - I have no idea

As you can see, this week is not too inspired, but at least we are eating in!

Question for you posters out there; when I made my enchiladas this week, I finally made the decision to buy a big hunk of cheese from Sam's and grate it myself; so much cheaper; it's a sharp Cheddar; does anyone have success in freezing cheese?

I freeze cheese all the time.

I do shred and/or slice it first though as defrosted cheese has a slightly different texture and crumbles when I try to shred it afterwards. I usually shred 3/4 of it and slice the rest.

Works out great for me!
 
Made a few changes again. :rotfl2:

Tonight: Hot dogs, KD, salad
Sun: BBQ chicken, mashed potatoes, stuffing, gravy, broccoli and cheese sauce
Mon: Burgers, salad, leftover mashed potatoes and stuffing
Tues: breakfast (bacon, pancakes, eggs and fruit)
Wed: taco night
Thurs: BBQ pork chops, not sure of sides yet (possibly corn and fettucini alfredo)
Fri: chicken kebabs, rice, veggies and dip
Sat: Soup and grilled cheese sammies with leftover veggies and dip
 
Last night: Kids had pierogies, broccoli and some of the omelet that I made. I had broccoli omelet.
Tonight: Spaghetti w/ sausage.
Tomorrow: (Sunday) Burgers, smiley face fries and a veggie.
Monday: $6 Large cheese pizza from local pizzeria.
Not sure about rest of week.
 
We had a fend for yourself night last night because I worked late.

Tonight we are having pulled pork sandwiches with chips, fruit, and pickles.
 
What a busy week here. 3 softball games and my poor dd age 6 was walking by the dugout and a girl swong a bat and hit her in the head 4 staples. She is still n pain and very tired.:sad1:

I will post a menu later when I get a minute to do my list.
 
Just got home from my trip up north for my mom's funeral. The service was beautiful and what we all needed. Now, I am going to try and get on with my life no matter how hard the thought is. So here is my menu plan for the next week.

Monday: Thai Chili Salmon, Roasted Squash, and Quinoa
Tuesday: Ham Steak and Baked Sweet Potato
Wednesday: Tomato Basil Chicken and Pasta
Thursday: BBQ Chicken Chopped Salad
Friday: Steak, Baked Potato, and Roasted Squash
Saturday: Chicken Nachos
Sunday: Steak Hash and Eggs
