DD is staring to feel better but her head still hurts :worried:

My oldest dd is in the semi finals for softball tonight so we are eating out of the crock pot tonight

Tonight Is crock pot honey mustard chicken with rice and I'm making a awesome chocolate cake with strawberries

Tomorrow is pork loin with smash potatoes and fresh green beans

Friday will be hamburgers maybe ill make a pasta salad

Saturday is food shopping day
 
Gosh, I haven't been on here in forever. These last few weeks have been HECTIC. I delivered early, on April 17 at exactly 37 weeks. Ended up having an emergency c-section when my birth plan all along was for a natural birth. Guess the baby had other ideas, lol. He was perfect and healthy so that's all that mattered.

I've been lucky and my mom lives with us so she;s been helping with the cooking so we haven't had to eat out every meal. I also prepped before I was put on bed rest so we had a freezer full of beans, sauces, casseroles, pasta bakes. Thank good ness!

So this weeks menu...

Today - flank steak with a brandy peppercorn cream sauce, baked potato, and broccoli.
Thursday - sandwiches (salami or ham), chips, pasta salad
Friday - dinner with friends
Saturday- roasted whole chicken, white rice and puerto rican style red beans.
Sunday - pancakes, sausage, and ham and onions scrambled eggs.
Monday - something with the leftover roasted chicken. Any ideas what?
 
I want to thank everyone for their amazing words. They have helped so much during this time. Sometimes it is just nice to know people understand and are out there. The biggest stress I have right now is when it comes to selling this house and moving to be closer to family. I am learning that the saying "home is where to heart is" is SO true. This place no longer feels like home. Home is with my family and my "nephews". So I want out of here but am stuck until I can sell this place which has to wait until I get named administrator of the estate.

I am going out of town again at the end of the month so I made a meal list for the rest of the month. I wanted to post it to try and help me stick to it.

Today: Tomato Basil Chicken with Pasta, Steamed Broccoli
Thursday: BBQ Chicken Chopped Salad
Friday: Steak, Baked Potato, Roasted Squash
Saturday: Chicken Nachos
Sunday: Steak Hash and Eggs
Monday: Shrimp and Vegetables in Indian Butter Sauce, Rice
Tuesday: Twice Baked Potatoes, Salad with Goat Cheese, Pickled Beets, and Nuts
Wednesday: Slow Cooker Honey Sesame Chicken, Rice, Sugar Snap Peas
Thursday: Baked Macaroni and Cheese, Steamed Broccoli
Friday: Cheeseburgers, Mac and Cheese, Corn on the Cob
Saturday: Lemon Garlic Tilapia, Roasted Squash, Rice Pilaf
Sunday: Egg Sandwiches, Fruit
Monday: Shrimp Green Curry, Rice
Tuesday: Pulled Pork Sandwiches, Slaw, Corn on the Cob
Wednesday: Pancakes, Bacon
Thursday: Chicken Tostadas, Mexican Rice
Friday: Skinny Chicken Salad, Crackers
Saturday: Swedish Meatballs on Egg Noodles, Roasted Brussels Sprounts

Last night was fun at the Movies.. and nice to get a break from cooking mid week..

Tonight is grilled chicken, stuffing and noodles and green beans..
 
I hurt my back at work today. Nothing major but it hurts to move too much. So mom had a stouffers meal and I had kraft macaroni and cheese.

Chicken and Saffron Rice
French Style Green Beans

Friday:
Hot Beef and Cheddar on Onion Rolls
Chips and Dip
Baby Carrots

Menu Plan for the week

Saturday - Burgers/ baked fries / coleslaw

Sunday - Grilled Chicken/ pasta salad / cucumber salad

Monday - Carnitas, spanish rice, avocado slices

Tuesday- Leftovers

Wednesday - BBQ sandwiches and squash

Thursday - Grilled brats/ corn on the cob / baked beans

Friday - Chicken tenders / mashed potatoes / green beans

Saturday - Leave for DISNEY WORLD!!! :cool1: pixiedust:party:

I have to sit down and make menus today. I'm trying to stick to a strict budget and if I wander in to the store with no plan I either end up with a massive bill or I come home without the right things for 2 weeks of dinners and end up back at the store 5 or 6 times. So the goal is to make a 2 week dinner menu from the sale flyers and stick to it. I only want to go back in for breads, milk and produce until the next shop.
And I don't know about the rest of you but I will we be sooooo glad when school is finally over and I can stop buying things for school lunches. I actually find it cheaper to have them home for lunches and snacks every day.

So.. tonight.. chicken burgers, veggie burgers, asparagus and salad.

I'll finish the rest of this post once I make my menus.

Ok.. here's the menu for this week. I abandoned the two week plan. I don't have it in me to do a massive shop when the store is Saturday packed.

Saturday...Sausages on buns (from butcher), Broccoli, Veggie Burg for dd.

Sunday ..dinner at parents

Monday...Fried Rice, Sweet and Sour Chicken, dumplings, Veggie Eggrolls for dd.

Tuesday..BBQ Chicken Thighs, Asparagus, Pan Fried Potatoes (Chickenless Burger dd)

Wednesday..Breakfast for dinner (pancakes, eggs, smoothies).

Thursday..Tacos and wraps

Friday...Frozen Pizzas, Salad and Garlic Bread

Saturday.. Whole Chicken, Roast Carrots and Potatoes (dd fish, baked potato and carrots)

Sunday..Dinner at parents for Fathers Day.

Monday..Tofu Parm
 
Trying hard to stick to the plan:

Saturday/Monday...Crockpot Low Country Boil, slaw, fruit
Sunday (Tony Day!!)...Grilled Reuben, macaroni salad, cheesecake

Wednesday/Thursday...baked tacos, Spanish rice, chips and salsa
Next Friday is grocery day again.
 
Thanks for the kind words. My back feels so much better today. I think I just twisted funny.

We ended up having Chinese takeout for dinner.
 
We are doing great trying to eat from the fridge/freezer/pantry. I actually have room in my freezer now! I only spent $25 this week on groceries!

Sunday- Chef salads
Monday- Chicken pasta salad, fresh fruit
Tuesday-Whatever is left in the fridge night!
Wednesday-Sunday- We will be enjoying some sun in Myrtle Beach! :beach:
We are still keeping it budget friendly by having breakfast and lunch in the condo, dinner out each night!

Tonight we had an early dinner of steak with potato pancakes, carrots, and grapes because I am going to see New Kids on the Block, 98 Degrees, and Boyz II Men tonight.
 
Fell off the plan a few days ago. Been going through mom's clothes and it is exhausting (physically and emotionally) so I have not been in the mood to cook. Nearly done. I have about half of the walk in closet left. Keeping some stuff that fits or will fit soonish, donating most of it, and trashing what can't be donated.

So, gonna make a big effort this week to stick to the plan. May switch around what meal what day, but gonna cook it all this week.

We did really bad this week and are out 3 nights in a row! It is back on track tonight though!

Monday: Double Stuffed Lemon Garlic Chicken. - It was a hit a couple of weeks ago and DD has requested it again.

this week it's just the Hubs and I .. we will eat at home most nights.. the weekend is still up in the air because I want to take off Friday and head to my Parents till late Sat afternoon but Hubs forgot to ask last Friday so he is asking today so we'll see..

Monday - cooks ham steak, corn and Hubs will have steakhouse potatoes and i'll have mashed cauliflower
Tuesday - baked 5 spice chicken, sauteed zucchini and we'll have leftover steakhouse potatoes and mashed cauliflower
Wednesday - crockpost smothered porkloin, sauteed zucchini and we'll have leftover steakhouse potatoes and mashed cauliflower
Thursday - if we are home - will be grilled chicken parm with dreamfields pasta
Friday - if we are home - will be home made pizza
Saturday - steak on the grill, corn and grilled potatoes for Hubs
Sunday - Father's day, most likely a cook out with the in laws.
 
Last night was so much fun. Even in the nose bleed seats, lol.

Tonight we are having sloppy joes with chips and fruit.
 
It was such a busy weekend; I did not have my menu plan together when I ran into the store after church yesterday, and spent about $22 over my budget and still don't have everything; I fix lunches every single day for hubby and now older son who is home for a Summer internship and I still don't have enough lunchmeat, etc. So, back to store I will go some time this week; I did have to stop at Costco this afternoon for dinner, I love their roasted chickens. So, for the week, tentatively, here goes. I think I am the world's worst at making a menu and then moving things around

Tonight - Roasted chicken from Costco, leftover pasta salad
Tues - Turkey Loaf, mashed potatoes, some type of veggie, my turkey loaf has carrots and spinach in it so probably green bean casserole
Wed - Mushroom Wine Chicken in crock pot, wild rice, veggie
Thurs - Corn cakes, sausage, potato casserole, baked apples in crock pot
Fri - Something easy and cheap, probably burgers, since I have plenty to choose from in the freezer, and plenty of fries
Sat - Manicotti, salad
Sun - Father's Day - either treat hubby out or splurge and have steak

So, I am tired of spending so much money on groceries, but between hubby, DS 22 and DS 17, they eat a lot! I am going to have to try and find shortcuts. I wish our stores here in San Antonio did double coupon days or something that would help. I will just keep trying to dig into the deep freezer. Good look with the week everyone!
